Crockpot Pea Soup image

Simple recipe for a hearty pea soup that I literally prefer nine days old. Very handy if you have a ham bone left over from the holidays. This recipe is suited for an 8 qt crockpot, but simply half all ingredients but the bones for 4 qt.

1 ham bone or 2 -3 pork neck bones
2 (32 ounce) containers chicken broth or 2 (32 ounce) containers stock
2 (16 ounce) bags dried split peas
4 carrots
2 onions
2 tablespoons olive oil
2 tablespoons garlic powder
2 cups water
salt and pepper

Steps:

  • dice onions and saute in the olive oil until soft then add to crock pot.
  • peel and slice the carrots and add to crock pot
  • add bone(s), stock, and garlic powder to crock pot.
  • add water. you may add water to achieve volume or final density you desire (I usually maximize the space in my crock pot, and this results in a less dense soup that doesn't turn into pudding in the fridge).
  • salt and pepper to taste.
  • you may opt to make a stock from the pork bone(s) in your crock pot overnight the night before. This makes it easier to remove the bones and cartilage, then just add everything else.
