BALLET PARTY RICE
My daughter's boyfriend's mom gave her a cookbook that was created by the Houston Ballet for their Nutcracker Christmas Market in 1984. The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Jeanne Doornbos, Soloist.

Steps:
- Cook the rice according to package directions. Cook and crumble the bacon. Mince the jalapenos. Slice the Monterey Jack cheese into thin slices.
- Layer 1/2 of the rice in the bottom of a greased 8x8 casserole dish. Dot with butter and add salt and pepper to taste.
- Cover with 1 cup of sour cream, 1/2 of the jalapenos, 1/2 of the bacon, and 1/2 of the Monterey Jack cheese.
- Repeat the layers.
- Top with grated cheddar cheese and a sprinkling of paprika.
- Bake at 350 degrees for 30 minutes.

Steps:
- Preheat oven to 350-degrees.
- Place 3 quarts uncooked rice in large roasting pan (lightly sprayed with cooking spray), spread evenly. Set aside.
- In a large stock-pot, combine water and salt. Bring to a rolling boil.
- CAREFULLY pour boiling water over rice and stir so rice is even along the bottom.
- Immediately cover tightly with aluminum foil. Make sure you have a tight seal around ALL the edges.
- Place roasting pan in oven and bake for 40-45 minutes or until rice is tender.
- Fluff with a large wooden spoon & serve.
- **Note: If you want to wait to serve, just keep in the oven at 150 degrees or so or keep warm in an electric warming pan. Add a little water if necessary to keep from drying out.

This recipe is a family favorite that I have been making for years. It is tried and true. We especially love it served along side baked chicken dishes.

Steps:
- Preheat oven to 350 degrees.
- In 10" skillet over medium heat, brown rice, stirring until golden in color.
- Put rice in a 1-1/2 quart casserole.
- In skillet over medium heat melt butter; add onion and mushrooms and cook until onion is tender, stirring occasionally.
- Stir in chicken broth, water and salt; heat to boiling.
- Stir hot broth mixture and uncooked noodles into rice in casserole.
- Cover and bake 30 minutes or until rice and noodles are tender and liquid is absorbed. Stir to combine and serve.
