BAKLAVA SQUARES WITH ICE CREAM
This is a very simplified version of baklava served with ice cream. Yum! Recipe by Rachael Ray, only slightly adapted.

Steps:
- Preheat your oven to 400 degrees F.
- Lay down a sheet of parchment paper on a cookie sheet and then put your first layer of phyllo dough down on it. Brush the phyllo with a little butter and then sprinkle about one-third of the walnuts. Mix the sugar and cinnamon together and then sprinkle 1/3 C over the walnuts. Repeat the phyllo, butter, sugar-cinnamon and walnut steps two more times, finishing with the fourth sheet of phyllo.
- Cut the pastry into 3 inch squares with a sharp knife. Cover the pastry with another sheet of parchment and another cookie sheet.
- Bake for about 18-23 minutes, or until golden brown. Remove from oven and serve while warm with the ice cream and a drizzle of honey.

WARM APPLES AND ICE CREAM

- Preheat a medium skillet over medium to medium-high heat. Peel and quarter the apples. Core each quarter. Slice the apples up. Add butter to the skillet, then apples. Saute 7 or 8 minutes, add sugar, cinnamon and cloves and cook 2 minutes more. Spoon the sauteed apples into dessert dishes and top with ice cream, whipped cream, and garnish with grated nutmeg.
SIMPLE BAKLAVA

- Special equipment: 2 mini-muffin tins
- Preheat the oven to 350 degrees F.
- Place the almonds, walnuts, apricots, bread crumbs, sugar, cinnamon, ground cloves, and salt in a food processor. Run the machine until the mixture is very finely chopped. Transfer the mixture to a small bowl. Add 2 tablespoons of the melted butter and the honey and stir to combine.
- On a dry work surface place 1 sheet of phyllo. Using a pastry brush and the remaining melted butter, lightly cover the entire sheet of phyllo with melted butter. Cover the first sheet with a second sheet of phyllo and brush with melted butter. Continue until there is a stack of 6 sheets of phyllo. Cut the stacked phyllo rectangle into 12 equal pieces (Cut lengthwise into 4 pieces and widthwise into 3 pieces.)
- Gently press each cut piece of phyllo into the mini-muffin tin cups. Press 1 tablespoon of the nut mixture into each of the phyllo cups. Gather the ends of each of the phyllo squares and twist to make a sachet shape. Continue shaping the remaining sachets in the other mini-muffin tin. Bake until the edges of the phyllo are golden, about 20 to 25 minutes. When cool enough to handle, remove the baklava sachets and transfer to a serving plate.
MY SISTER MARIA'S EASY APPLE CAKE AND ICE CREAM

- Preheat oven to directions on box. Mix cake mix to directions on box, using 1/2 cup water and 1 egg. Grease a 9 by 9-inch square cake pan or disposable cake pan with butter. Pour in cake batter. Toss apples with cinnamon and sugar and sprinkle on top of cake batter. Bake 20 to 25 minutes. Serve warm cake squares with small scoops of butter pecan or rum raisin ice cream.
