A nice fish dish with a pleasant presentation. Good with rice. Found this one a few years ago on a free dairy farmer calendar and enjoyed it.

- If fillets are large, cut lengthwise in half.
- Roll up fish and secure with toothpicks.
- Place in shallow rectangular baking dish.
- Sprinkle with lemon juice.
- Cover with foil and bake in a preheated 400 F degree oven for 15 minutes or until fish flakes easily with a fork.
- Meanwhile, melt butter in a saucepan.
- Blend in flour, bouillon mix and dry mustard.
- Gradually stir in the milk.
- Cook and stir over medium heat until it boils and thickens.
- Add both cheeses and stir until melted.
- Add salt and pepper and serve over the cooked and drained fish rolls.

- Preheat oven to moderate 180°C.
- Place fish side by side in a lightly greased baking dish.
- Season with salt and pepper. Pour the wine over the fish.
- Bake about 20 minutes- check the fish has cooked. Remove fish to a warmed plate and cover with aluminium foil to keep the fish warm.
- Place the baking dish over a high heat, or alternatively pour the juices into a saucepan. Boil the liquid rapidly until slightly reduced.
- Serve the fish with the sauce poured over the top. Garnish with the parsley and serve with lemon wedges.
- Great accompanied by a light sald or steamed green vegetables.

BAKED WHITE FISH WITH MANGO SALSA
This is an easy and delicious way of cooking fish like Swai or Tilapia. Comes from a recipe on the back of a bag of frozen Swai, with a few modifications. I use store bought salsa - my favorite is Mango Lime Salsa but any type of Mango salsa would work well.

- Preheat oven to 400 degrees.
- While oven is preheating, put butter into a baking dish large enough for the filets to fit comfortably, without overlapping. Put dish into oven until butter melts. Remove from oven and stir in lemon juice, salt and paprika. Dip both sides of fish into butter mixture and arrange in baking dish. Bake 10-15 minutes or until fish flakes easily when tested with the tip of a sharp knife. Remove to plates and put 1 tblsp of salsa on top of each filet.
BAKED WHITE FISH
This is based on a recipe I got from a friend 30 years ago. It was called Greek Fish but it didn't seem particularly Greek to me. The original recipe called for Haddock or white fish - I usually use snapper or cod fillets. Hope you like it - this is the first recipe I have posted!

Steps:
- Grease an 8 1/2" X 11" pan. (Or use baking spray.)
- Cover the bottom of the baking dish with the sliced tomatoes.
- Sprinkle with sugar and parsley.
- Arrange fish on top.
- Mix melted butter, paprika, Old Bay seasoning, salt, pepper and flour.
- Spread over fish.
- Bake at 400F for 20 min or until fish flakes easily with fork.
- Squeeze lemon juice over casserole before serving and serve with additional lemon wedges.
- Note 1: Put tomatoes in a bowl and blanch with boiling water. After a minute or so the skins will slip right off.
- Note 2: For fillets, I like to overlap them slightly so that the thin parts are not over cooked. For steaks, use a pan that will be nicely filled by one layer of fish.
- Note 3: If using frozen fish, I prefer to use it unthawed and just lengthen the cooking time a few minutes. Makes a quick family supper dish when time is short and nothing is thawed.
- I like this with a green vegetable and white rice.

- Sauté onion in butter in heavy sauce pan over medium heat until transparent; not browned.
- Spread onion oven bottom of a shallow baking dish.
- Arrange fish over onion in pan, overlapping thin edges.

- Add whipping cream to pan.

- Marinate the fish in enough Margarita Mix to just cover the fish for 30 minutes, turning once. Do not leave longer than 1 hour.
- Preheat oven to 400*. Melt the butter in the baking dish in the oven. Add lemon juice. Stir and add the fish. Cover with diced onions, salt and pepper and basil. Bake for about 30 minutes and turn. Season other side with salt, pepper, and basil. Cook until fish flakes easily with fork. Sprinkle fish with paprika and set under the broiler for 2 minutes. Transfer to serving plate and spoon the sauce over the fish. Garnish with fresh parsely and lemon wedges. Enjoy!

BREADED AND BAKED WHITE FISH AND BRUSSELS SPROUTS
This moderately easy fish recipie I created from mixing a few other recipies found here with personal experience. 1 hour to make. Serves 4.

- - Melt butter and mix with vinager, lemon juice, and worshteshire.
- - Clean fish and dry out excess water by laying in a kitchen towel.
- - In large baking dish (big enough to lay fish in on one layer) cover botton with onion and green pepper. Layer fish on top. Baste with half of the butter mixture. Sprinkle half of old bay and pepper on top. Let sit for 1/2 hour at room temperature.
- - Clean brussel sprouts. Cut off 1/8" of stem, and cut a 1/4" deep "x" in each base. Place in cold water in pot. Bring to boil and cook for 8 minutes after boil is reached. Rinse with cold water and strain.
- - Place brussel sprouts in 8"x8" baking dish. Add remaining half of butter mixture, old bay, and pepper and stir together. (use two pans here so that both fish and brussel sprouts have surface exposed to oven element.).
- - Mix together bread crumbs and parmesean cheese.
- - JUST BEFORE BAKING, add 1/4 of bread crumb mix to brusssel sprouts and mix together. Then Sprinkle another 1/4 of bread crumbs on top.
- - Layer the other half of bread crumb mix top of fish fillets.
- - Bake both pans in preaheated oven @ 375 degrees for 12-15 minute.
- - Turn oven to broil and bake another 3-4 min until bread crumbs are toasted.
- - Serve with your favorite "rice to have with fish" recipie.

LEMON GINGER BAKED WHITE FISH
I don't really like fish but my doctor told me I need to eat it more often. So, I'm trying to be good and eat the right stuff. I created this in my kitchen in hopes of finding a fish dish I could eat. This was perhaps the best fish I've ever eaten. tangy flavor of the lemon really come thru and make this dish light and delicious.

- In a small bowl mix together garlic, ginger, olive oil, lemon juice and soy sauce. Allow to stand about 15 minutes. Place the fish on foil lined baking pan. Spoon olive oil mixture over fish and allow to stand for about 30 minutes.

This was my favorite dish growing up! my grandmother would prepare this for me every friday for lunch. it's nice and creamy, and very easy to prepare. Use any type of flat white fish you can find on sale for this dish.

- to poach to fish, fill a large sauce pan with plenty of water with plenty of salt.
- Drop all the chopped carrots, parsley, 1/3 celery root, 1 green pepper into the water.
- Cook the vegetables ingredients for about 15 minutes, and then add fish to the water.
- continue poaching the fish until veggies are done, and the carrot is very soft.
- Keep about 1 cup of the cooking water, and allow the vegetables to cool.
- Remove the fish with a slotted spoon and place in a large pan (9X13).
- Baste with lemon juice.
- Remove the cooked veggies, chop, and sprinkle over the fish.
- Prepare mushroom sauce: in a large skillet over medium heat, melt butter, and cook the mushrooms until slightly cooked, add mushroom soup powder (or flour) while stirring.
- Gradually add the liquids while whisking constantly, and cook until slightly thickened.
- While stirring add the grated cheese, and the sour cream.
- Remove from heat and add the dill.
- Pour the sauce evenly over the fish.
- Bake in oven at 350 until cheese is melted, and slightly browned, about 20 minutes.
