Easy and delicious vegetarian baked spaghetti recipe with mushrooms, bell pepper, and onion.

1 large onion, diced
8 large garlic cloves, minced
16 oz mushrooms, diced
1 green bell pepper, diced
2 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
1/2 teaspoon pepper
2 teaspoons dried basil
1 teaspoon dried oregano
1 (25 oz) jar pasta sauce
1 cup parmesan cheese, freshly grated
1 1/2 cups shredded mozzarella cheese
1 teaspoon crushed red pepper flakes (optional - see notes)
16 oz whole wheat spaghetti

Steps:

  • Cook spaghetti according to package directions, set aside
  • Combine onion, garlic, mushrooms, green pepper, olive oil, sea salt, pepper, basil and oregano in a large skillet.
  • Sautee on medium high heat, stirring frequently for 10-15 minutes, or until mushrooms cook down and evaporate their liquid
  • Add pasta sauce to veggie mixture and stir to combine
  • Using a 9 X 13 baking dish, first lay down all of the cooked spaghetti on the bottom
  • Top spaghetti with 1/2 cup mozzarella and 1 cup of parmesan cheese
  • Pour sauce over top and mix up with tongs until well combined (add optional red pepper flakes here if desired)
  • Top with remaining 1 cup of mozzarella cheese sprinkled over the top
  • Bake at 450 degrees for 12-15 minutes, or until cheese is bubbly and starting to brown

A delightfully delicious chili piled onto spaghetti noodles, topped with cheese, and then baked in the oven to create a super easy and delicious dinner!

1 pound lean ground turkey (93% lean/ 7% fat) uncooked
1 medium sweet onion (chopped)
1 medium bell pepper (chopped)
4-5 cloves garlic (minced)
1 14.5 ounce can tomato sauce
1 14.5 ounce can diced tomatoes
1 14.5 ounce can pinto beans, drained but not rinsed ((about 1- ½ cups))
1- 1/2 cups sweet corn kernals (fresh, frozen, or canned will work )
1 tsp Kosher Salt (reduce by half if using table salt or fine salt)
1 tsp Oregano
1- 1/2 tbsp Cumin
2 tbsp Chili Powder
3 tbsp Worcestershire Sauce
dash or two of your favorite hot sauce (I use Frank's)
3/4 cup non-fat greek yogurt
6 ounces (dry) spaghetti noodles (broken up into pieces )
4 oz Colby Jack or Cheddar made with 2% milk
cooking spray
salt & pepper (to taste)

Steps:

  • Preheat oven to 350 degrees. In a large skillet over medium-high heat add ground turkey, sprinkle kosher salt on, and break up with spatula.
  • Add the chopped bell peppers, onions, and garlic to the ground turkey. Cook together until turkey is cooked through and vegetables are softened.
  • Add diced tomatoes, pinto beans, tomato sauce, corn, Worcestershire sauce, oregano, cumin, chili powder, hot sauce, and salt. Stir the non fat greek yogurt into the chili. Bring to boil then return to low and cover.
  • While the chili is simmering prepare spaghetti noodles according to package to directions.
  • When the noodles are done, strain, and add to a lightly sprayed 9x13 casserole dish. Layer the chili on top of the noodles and then sprinkle the cheese over the chili. Cover with tin foil and bake for about 30 minutes.
  • Let set for at least 5 minutes before cutting into. Serve and enjoy!

1/2 cup chopped onion
2 garlic cloves, minced
3 cups tomato juice
1 can (16 ounces) kidney beans, rinsed and drained
6 ounces spaghetti, broken into 3-inch pieces
1 tablespoon Worcestershire sauce
2 to 3 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Transfer to a greased 2-1/2-qt. baking dish; stir in the remaining ingredients. , Cover and bake for 65-70 minutes or until spaghetti is just tender. Let stand, covered, for 10 minutes.

2 tablespoons extra-virgin olive oil
1 large onion, chopped
2 large bell peppers (1 green, 1 red), chopped
3 medium carrots, finely chopped
Kosher salt
6 cloves garlic, finely chopped
3 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
2 teaspoons dried oregano
1/2 to 1 chipotle chile pepper in adobo sauce, chopped
1 tablespoon tomato paste
2 corn tortillas, torn into pieces
1/2 cup brewed coffee
1 28-ounce can whole plum tomatoes, crushed by hand
2 tablespoons unsweetened cocoa powder
2 15-ounce cans pinto beans, drained and rinsed
1/2 head cauliflower
1/2 cup finely chopped fresh cilantro, plus torn leaves for topping (optional)
Shredded reduced-fat cheddar cheese, sliced scallions and/ or plain low-fat Greek yogurt, for topping (optional)

Steps:

  • Heat the olive oil in a large saucepan or Dutch oven over medium-high heat. Add the onion, bell peppers, carrots and 1/2 teaspoon salt; cook, stirring frequently, until the carrots begin to soften, about 8 minutes. Add the garlic and cook 2 more minutes. Add the chili powder, cumin, coriander, oregano, chipotle, tomato paste and tortillas and cook, stirring, until the tomato paste is brick red, about 4 minutes (add a splash of water if the mixture begins to stick). Add the coffee and simmer until almost completely reduced, about 30 seconds. Stir in the tomatoes, cocoa powder, beans and 2 1/2 cups water and bring to a simmer over low heat. Cook, stirring occasionally, until the chili thickens slightly, about 1 hour, 30 minutes.
  • Meanwhile, trim the large stems off the cauliflower and coarsely grate the florets on a box grater. About 10 minutes before the chili is done cooking, stir in the grated cauliflower. Cook 10 minutes, then remove from the heat. Stir in the chopped cilantro and season with salt. Add some water if the chili is too thick. Ladle into bowls and add toppings.

3/4 lb Ziti or Penne pasta
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1 medium red onion, chopped
2 zucchini, small diced
1 bell pepper (orange or red), cored and diced
2 garlic cloves, minced
Kosher salt
1 tsp dry oregano
1/2 tsp sweet paprika
6 cups quality Marinara sauce (store-bought is fine)
10 basil leaves, torn or carefully sliced/chopped
1 cup ricotta (I used part-skim)
1/2 cup grated Parmesan, divided
6 oz shredded Mozzarella

Steps:

  • Heat oven to 375 degrees F.
  • Bring a large pot of salted water to a boil. When ready, add the pasta and cook to al dante according to package. When ready, drain pasta but save about 1/2 cup cooking water.
  • While the pasta is cooking , cook the vegetables. In a large skillet, heat 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add onions and cook for 3 minutes or so, tossing regularly, then add diced zucchini, bell pepper, and garlic. Raise heat to medium-high and cook for about 6 to 8 minutes, tossing regularly, until vegetables have softened and cooked through. Season with kosher salt, oregano and paprika. Sit aside till needed.
  • In a mixing bowl, combine the ricotta, 1/4 cup grated Paremsan and 3 tbsp Mozzarella. Mix well. (If needed, add a drizzle of extra virgin olive oil to help mix the cheese)
  • Once the pasta has been cooked and drained, bring it back to the cooking pot. Add 1/2 of the marinara sauce and starchy cooking water you reserved (1/2 cup). Mix well to coat the pasta with the sauce. Fold in the ricotta cheese filling. Mix again to combine, but leave some big "pockets" of the cheese mixture.
  • Grab a 9 1/2" x 13" casserole dish. Pour a little marinara sauce to the bottom of the dish, spread. Spread half the pasta. Now add the cooked vegetables and some of the torn basil on top and spread well across the pasta layer. Sprinkle a little bit of shredded mozzarella on top (leave more mozzarella for very top layer.) Add remaining pasta. Spread remaining marinara sauce on top and add remaining mozzarella cheese and Parmesan cheese.
  • Place the casserole dish on the middle rack of your heated oven. Bake uncovered for 30 minutes or so. Remove from heat and let rest about 10 to 15 minutes before cutting through. garnish with fresh basil.

1 lb ground beef
1 medium onion, chopped
2 tablespoons chili powder
1 (14 1/2 ounce) can canned tomatoes, diced cut
1 (8 ounce) can tomato sauce
1 cup salsa
1 (7 ounce) can diced green chilies, drained
2 cups shredded longhorn cheddar cheese

Steps:

  • Prepare the pasta according to package directions, drain.
  • Spray a 13 x 9 inch pan with cooking spray; set aside.
  • Preheat oven to 350 degrees.
  • Cook the meat and onion in a large sillet; drain.
  • Add the chili powder, undrained tomatoes, tomato sauce, salsa and chilies to the meat mixture.
