Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

2 medium sweet potatoes (8 to 12 ounces each)
Kosher salt and freshly ground black pepper
Unsalted butter, for serving (optional)

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
  • Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. Remove from the oven and cut each potato in half lengthwise. Season with salt and pepper and top with butter if using.

5 lbs sweet potatoes
3/4 cup butter, divided
1/2 cup brown sugar, divided
1/4 cup Amaretto
2 tablespoons Amaretto
1/4 cup orange marmalade
1/2 teaspoon salt
20 gingersnap cookies

Steps:

  • preheat oven to 350.
  • scrub then pierce skin of sweet potatoes.
  • bake 40 mins or until soft enough to mash, cool until easy to handle.
  • cut potatoes in half and scoop pulp into large bowl and mash.
  • add in 1/2 cup butter, sugar, 1/4 cup amaretto, marmalade, and salt.
  • beat until just combined.
  • add in remaining 1/4 cup butter and amaretto.
  • mix until blended.
  • using food processor or blender finely grind cookie mixture and set aside.
  • in greased 13 x 9 in baking pan evenly spread potato mixture.
  • sprinkle with cookie mixture on top.
  • bake for 35-40 minutes.

All I can say is "YUM". The roasted sweet potatoes give this "casserole" a much richer taste than boiling. The spices and the ginger snaps make this a recipe worth sharing

10 small medium yams or sweet potatoes (about 5 pounds), peeled, halved crosswise and cut into chunks
2 Tbsp tablespoon olive oil
kosher salt and freshly ground pepper
1/4 c cup of honey
1/2 tsp teaspoon ground cinnamon
1/2 tsp teaspoon vanilla extract
1/4 tsp teaspoon freshly ground nutmeg
1/4 tsp teaspoon ground cloves
CRUNCH
20 course ground gingersnap cookies
3/4 c cup light brown sugar, packed
1 stick of butter, melted
1/2 c cup all-purpose flour
1/2 c cup of roasted chopped pecans

Steps:

  • 1. For the yams: Preheat the oven to 350 degrees F. Toss the yams with the oil in a medium bowl and sprinkle with salt, pepper, honey, cinnamon, nutmeg and cloves. Toss to coat.
  • 2. Spread the yams and all the sauce evenly into a 9-by-13-inch baking dish. bake until beginning to become tender, about 30 minutes
  • 3. For the crunch: Meanwhile, pulse the gingersnaps in a food processor until they are fine crumbs with a few larger pieces. Transfer to a medium bowl and stir in the sugar, butter pecans and flour to combine. Form crumbles in several sizes using your hands and chill in the refrigerator.
  • 4. Remove the yams and stir to coat with the sauce. Top with gingersnap crumbles and bake until the yams are very tender and the topping is nicely browned, about 10 minutes longer. Serve.

3 large sweet potatoes
2 pinches dried oregano
2 pinches salt
2 pinches ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.

  • Preheat oven to 375 degrees with rack in center position.

Pudding:
3 pounds red-skinned sweet potatoes (yams; about 3 large), scrubbed
3/4 cup half and half
1/2 cup orange juice
2 tablespoons (1/4 stick) unsalted butter, melted
2 tablespoons (packed) dark brown sugar
2 tablespoons orange marmalade
1 3/4 teaspoons pumpkin pie spice
4 large egg yolks
5 large egg whites
1/4 teaspoon salt
1/4 teaspoon cream of tartar

Steps:

  • For topping:
  • Toss first 4 ingredients in medium bowl. Add butter; using fingertips, rub in until well blended. Cover; chill. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • For pudding:
  • Preheat oven to 400°F. Roast potatoes on baking sheet until tender, 45 to 60 minutes. Cool. Cut in half lengthwise. Scoop flesh into bowl; mash. Transfer 4 cups potatoes to large bowl. DO AHEAD: Can be made 1 day ahead. Cover; chill. Bring to room temperature before continuing.
  • Preheat oven to 350°F. Butter 13x9x2- inch baking dish. Add half and half and next 5 ingredients to potatoes. Using mixer, beat on low speed until blended. Season with salt and pepper. Add yolks 1 at a time, blending after each addition. Using clean dry beaters, beat whites in another large bowl until foamy. Add salt and cream of tartar. Beat until peaks form. Fold whites into potatoes; spoon into dish. Sprinkle with topping.
  • Bake pudding until puffed and brown, about 45 minutes. Serve immediately.
