These are by far the best baked doughnuts with cinnamon sugar topping I have found! You will need a doughnut baking pan for this recipe.

nonstick cooking spray
½ cup white sugar
⅓ cup butter, softened
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 egg
1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ cup milk
½ cup butter, melted
⅔ cup white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray 9 cavities of a 12-cavity doughnut pan with cooking spray.
  • Combine sugar, butter, nutmeg, and salt in a medium bowl; beat with an electric mixer until well combined. Add egg and mix until incorporated.
  • Combine flour and baking powder in a small bowl. Add flour mixture to butter mixture in batches, alternating with milk, beating batter briefly after each addition. Pour batter into a large resealable plastic bag. Snip off one corner of the bag and pipe batter into the 9 prepared cavities of the doughnut pan, filling each halfway.
  • Bake doughnuts in the preheated oven until a knife inserted into the center comes out clean, 7 to 9 minutes.
  • While the doughnuts are baking, place melted butter for topping in a shallow bowl. Mix together 2/3 cup sugar and cinnamon in another shallow bowl. Roll warm doughnuts in melted butter and then in cinnamon sugar to coat.

These are soooo good. They take a little time to make, but are worth the effort to get great-tasting lower-fat doughnuts. The recipe is from Taste of Home magazine and is credited to Jill Shramek.

3 medium potatoes, peeled and quartered
1 cup milk (70 to 80 degrees)
2 eggs, well beaten
3/4 cup shortening
1/2 cup sugar
1 teaspoon salt
4 1/2 cups bread flour
2 1/4 teaspoons active dry yeast
3/4 cup sugar
1 1/4 teaspoons ground cinnamon
1/4 cup butter or 1/4 cup margarine, melted

Steps:

  • Place potatoes in a saucepan and cover with water.
  • Bring to a boil; cook until tender.
  • Drain, reserving 1/4 cup cooking liquid; set liquid aside to cool to 70-80 degrees.
  • Mash potatoes; set aside 1 cup to cool to room temperature.
  • (Refrigerate any remaining mashed potatoes for another use).
  • In bread machine pan, place dough ingredients in order suggested by manufacturer, adding reserved cooking liquid and potatoes.
  • Select dough setting (check dough after 5 minutes of mixing; some flour may remain on top; add 1 to 2 tablespoons of water or flour if needed).
  • When cycle is completed, turn dough onto a lightly floured surface.
  • Knead in an additional 1/4 to 1/2 cup flour if necessary.
  • Roll out to 1/2 inch thickness.
  • Cut with a 2 1/2 inch doughnut cutter.
  • Place on greased baking sheets; cover and let rise until almost doubled, about 25 minutes.
  • Bake at 350 for 15-20 minutes or until lightly browned.
  • Combine sugar and cinnamon.
  • Brush warm doughnuts with butter; dip in cinnamon-sugar.
  • Note: Use of the timer feature is not recommended.

Light and fluffy doughnuts, made with a yeast dough. I finally found a good doughnut recipe!

½ cup warm milk
½ beaten egg
¼ cup butter
2 cups all-purpose flour
¼ cup white sugar
1 teaspoon salt
1 teaspoon active dry yeast
8 cups vegetable oil for frying

Steps:

  • Place the milk and egg into the pan of your automatic bread machine, and add the butter, flour, sugar, salt, and yeast in that order, with the yeast on top. Select the dough setting, and start the machine.
  • When the dough cycle is finished, remove the dough to a floured work surface, and knead a few times to collapse all the bubbles. Cut the dough into 16 pieces, cover them with a damp cloth, and allow to rest for 20 minutes.
  • Stretch each ball out into a disk about 1/4 inch thick, and use a small cutter to cut a hole in the center (I used the top of a salt shaker; a bottle top works good too). Let the doughnuts rise on the floured surface until doubled, 30 to 40 minutes.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently place a few doughnuts at a time into the hot oil, and fry until they float to the top and turn golden brown, about 3 minutes. Flip the doughnuts over, and fry on the other side. Remove from the oil, and drain on paper towels.

An easy recipe for homemade doughnuts. The original recipe says you will get 2 dozen doughnuts cut from the dough but I have never been able to get more than 1 dozen. I usually just sprinkle hot doughnuts with a mixture of cinnamon and sugar -- we can't wait for a glaze! These are light and airy and delicious.

1 1/4 cups milk
1 beaten egg
1/4 cup shortening
1/4 cup sugar
1 teaspoon salt
3 1/2 cups white flour
1 1/2 teaspoons dry yeast

Steps:

  • Measure ingredients into your ABM baking pan.
  • Select dough setting and start machine.
  • Roll finished dough to 1/2 inch thick. Cut with a 2-1/2 inch donut cutter.
  • Let rise, covered, 30 minutes or until doubled.
  • Deep fry in fat at 375 degrees.
  • Turn doughnuts as they rise to the surface. Fry until brown on both sides.
  • Drain on absorbent paper towels. Either glaze or dust with powdered sugar.
