1 pound mild Italian sausage links, cut into 1-inch slices
1 large onion, chopped
2 medium apples, peeled and quartered
1 can (27 ounces) sauerkraut, rinsed and well drained
1 cup water
1/2 cup packed brown sugar
2 teaspoons caraway seeds

Steps:

  • In a large skillet, cook sausage and onion over medium heat until sausage is no longer pink and onion is tender; drain. Stir in the apples, sauerkraut, water, brown sugar and caraway seeds. , Transfer to a 2-1/2-qt. baking dish. Cover and bake at 350° for 1 hour.

3 lbs spareribs
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 (32 ounce) jar sauerkraut (undrained)
2 teaspoons firmly packed brown sugar
2 tart apples, peeled and chopped
1/2 cup chopped onion
1/4 cup water

Steps:

  • Heat oven to 450°F degrees.
  • Cut ribs into serving pieces.
  • Place in 13x9-inch pan; sprinkle with salt and pepper.
  • Bake uncovered for 20 minutes.
  • Reduce oven to 350°F degrees.
  • Remove ribs; drain fat from pan.
  • In same pan, combine sauerkraut, sugar, apples, onion, and water.
  • Spread it all out evenly.
  • Put ribs on top; bake uncovered for 1 1/2 hrs, stirring occasionally.

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

6 tablespoons butter
4 slices bacon, cut into 1/2-inch pieces
1 small onion, thinly sliced
3 tart apples, such as Stayman, Pippin, Granny Smith or Jonagold, peeled, cored, and thinly sliced
2 pounds sauerkraut, drained and rinsed
1 bottle (12 ounces) beer (you may substitute apple cider)
Black pepper, to taste
1/2 teaspoon caraway seeds

Steps:

  • Melt butter in a large heavy pot over medium-high heat. Add bacon and cook, stirring often, until fat has started to render, about 5 minutes.
  • Toss onion and apples in the fat and cook, stirring occasionally, until onions begin to soften, about 3 minutes. Stir in sauerkraut.
  • Add beer and season with pepper and caraway seeds. Bring mixture to a boil, then cover the pot. Reduce heat so mixture is just simmering and cook for 45 minutes. Or transfer the covered pot to a 350-degree oven and bake for 1 hour. Stir and serve hot.

2 lbs sauerkraut
2 tablespoons margarine
1 cup chopped onion
1 teaspoon minced garlic
1 cup apple cider
1 cup chicken broth
3 large tart apples, peeled,cored,and chopped
6 juniper berries, crushed
salt and pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Rinse sauerkraut and wring dry.
  • Heat margarine in a large skillet; saute onion and garlic until onion is tender.
  • Add kraut, cider, stock, apples, and juniper; season to taste with salt and pepper; bring to a boil.
  • Transfer to casserole dish; cover with lid or foil and bake at 350 degrees F.

1 large onion, thinly sliced
2 tablespoons unsalted butter
4 pounds sauerkraut, rinsed and drained
2 Gala, Fuji, or Red Delicious apples, thinly sliced
1 cup dry white wine
1 to 2 tablespoons packed dark brown sugar

Steps:

  • Cook onion in butter in a 4-to 5-quart heavy pot over medium-high heat, stirring occasionally, until golden, about 6 minutes. Stir in sauerkraut, apples, and wine and bring to a simmer.
  • Cover pot and reduce heat, then simmer, stirring occasionally, until sauerkraut is very tender, about 2 hours.
  • Stir in 1 tablespoon brown sugar and 1/2 teaspoon each of salt and pepper. Add more brown sugar, salt, and pepper to taste.

2 tablespoons butter
2 tablespoons bacon drippings or 2 tablespoons butter
1 large walla walla onions or 1 large Spanish onion, coarsley chopped
2 whole tart cooking apples, sliced and chopped
1 (32 ounce) jar sauerkraut, drained and dried 'til crunchy
1 (28 ounce) can crushed tomatoes
1/2 cup brown sugar
1/2 cup dry white wine
hot sauce

Steps:

  • Melt butter and bacon drippings if using in a large frypan.
  • Swirl to mix.
  • Add onion and apples, saute until nearly tender.
  • Combine with sauekraut in a large mixing bowl.
  • Stir in crushed tomatoes, undrained, brown sugar, wine and hot sauce.
  • Stir well and turn into a 13 x 9 inch baking dish.
  • Cover tightly and bake at 325f degrees 1 hour.
  • Uncover and bake 30 to 45 minutes more.
