2 cups freshly grated Cheddar cheese
2 cups freshly grated Monterrey Jack cheese
4 ounces (about 1/2 a package) cream cheese, softened
2/3 cup sour cream
2 (16 ounce) cans refried beans
1 (1 ounce) package of taco seasoning
1 tablespoon hot sauce
2 green onions, thinly sliced (optional)

Steps:

  • Preheat the oven to 350° and have ready an 8"x8" square baking dish. Mix together the Cheddar and Monterrey Jack Cheese and set aside.
  • Add the cream cheese and sour cream to a large bowl and stir to combine with a wooden spoon or handheld mixer on medium speed. Add the refried beans, half of the cheese mixture, taco seasoning, and hot sauce to the bowl, and stir (or mix on low) until well combined.
  • Transfer the bean dip to the baking dish and top with the remaining cheese. Bake for 20 minutes, uncovered. Top with green onion garnish (if using), serve, and enjoy!

8 slices thick-cut bacon, chopped
1 small yellow onion, diced
1 bell pepper, diced
1 clove garlic, minced
1 1/2 cups packed brown sugar
1 cup brewed coffee
1 tablespoon ketchup
2 teaspoons mustard
1 teaspoon chile paste, such as sriracha
Kosher salt and freshly ground black pepper
Two 16-ounce cans pinto beans, drained
1/2 cup sour cream
1/2 cup grated Cheddar
1/4 cup sliced green onions
Butter crackers, such as Ritz, or tortilla chips, for serving

Steps:

  • Heat a Dutch oven over medium heat; line a plate with a paper towel. Add the bacon to the pot and cook, stirring occasionally, until crisp, 5 to 7 minutes. With a slotted spoon, transfer the bacon to the lined plate to drain.
  • Discard most of the bacon fat, leaving about 2 tablespoons in the pot. Return to medium heat, add the onion, bell pepper and garlic and saute until beginning to brown, about 3 minutes. Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
1 cup sour cream
1 package (8 ounces) cream cheese, softened
2 tablespoons taco seasoning
Tortilla chips

Steps:

  • In a bowl, combine cheeses; set aside 2 cups for topping. Add beans, sour cream, cream cheese and taco seasoning to the remaining cheese. Transfer to a greased 2-qt. baking dish; sprinkle with reserved cheese. Bake, uncovered, at 350° for 20-30 minutes or until bubbly around the edges. Serve warm with tortilla chips.

Warm layered bean dip, great for parties when served right out of the oven with tortilla chips. You can alter it to include the veggies that you prefer. It is also easy to make mild, medium or hot. My mom started making this when I was a kid and I requested it whenever there was a reason for a potluck! NOTE: I like to bake all of my vegetables so that they get melted into the cheese but others prefer to bake after the cheese layer and add the veggies after baking.

1 lb ground sirloin
1 yellow onion
1 cup salsa
8 ounces shredded colby-monterey jack cheese
1 tomatoes
1 green pepper
4 1/4 ounces black olives, sliced
3 jalapenos

Steps:

  • Preheat oven to 350.
  • Prepare by chopping small: onion, tomato, green pepper.
  • Slice jalapenos removing seeds if you don't require the heat.

This bean dip is sooooo good. It is easy to make and is always a hit. I make it for my Super Bowl party each year and it is always gone before half time!! Two cheeses and refried beans are baked with mild spices to create a creamy dip. Serve with tortilla chips.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
2 (16 ounce) cans refried beans
½ (1 ounce) package taco seasoning mix
5 drops hot pepper sauce
2 tablespoons dried parsley
¼ cup chopped green onions
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend the cream cheese and sour cream.
