THANKSGIVING SAUSAGE-MUSHROOM STUFFING image

4 cups soft bread crumbs (spelt)
1/2 lb italian sausage
1 lb fresh mushrooms, thickly sliced
1/2 cup chopped onion
1/2 cup chopped celery
1/2 tsp thume
1/2 tsp marjoram
S & P to taste, fennel seeds
broth to moisten, butter if needed

Steps:

  • Cook sausage in microsave about halfway, then finish in skillet, breaking apart until crumbly and brown. Remove the sausage from the pan. Measure the fat and if the sausage has not produced 1/2 cup, add butter to make up the difference. Then mix the bread crumbs, seasonings, and the cooked sausage. Moisten with broth. Refrigerate, covered, until ready to use. Bake at 350 for 20 minutes.
