BAKED SALMON WITH PINEAPPLE SALSA



Baked Salmon with Pineapple Salsa image

Yield 4 servings: 4 oz. fillet with 1/2 cup salsa each

Number Of Ingredients 6

1 lb. skinless salmon fillets, 1 inch thick, lightly sprayed with non stick cooking spray
3 Tbsp. Mrs. Dash? Original Blend
1/2 cup diced green peppers
1/2 cup diced red peppers
1 cup canned crushed pineapple in juice, drained with juice reserved
1 tsp. finely grated fresh ginger

Steps:

  • 1. Line a small sheet pan with non stick aluminum foil. Arrange salmon on baking sheet. Sprinkle fillets evenly with 2 Tbsp. of Mrs. Dash® Original Blend. Place in preheated 450 degree oven for about 10 minutes or until fish flakes easily.
  • 2. Meanwhile, saute peppers in 1/4 cup reserved pineapple juice until crisp-tender. Add remaining Mrs. Dash® Original Blend, pineapple and ginger. Remove from heat.
  • 3. Arrange salmon on serving plates topped with pineapple salsa.

Cooking spray, for pan
17 pineapple rings, fresh or canned
1 large salmon fillet (about 3 lbs.)
Kosher salt
Freshly ground black pepper
3 TBS melted butter
3 TBS sweet chili sauce
2 TBS freshly chopped cilantro
3 cloves garlic, minced
2 tsp. freshly grated ginger
2 tsp. toased sesame oil
1/2 tsp. crushed red pepper flakes
Toasted sesame seeds, for garnish
Thinly sliced green onions, for garnish
Lime wedges, for serving

Steps:

  • 1.Preheat oven to 350 degrees. Line a large rimmed baking sheet with foil and grease with cooking spray. In the center of the foil, lay pineapple slices in an even layer. 2. Season both sides of the salmon with salt and pepper and place on top of pineapple slices. 3. In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes. Brush all over salmon fillet 4. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until fish is slightly golden. Garnish with sesame seeds and green onions and serve with lime wedges.

1/2 mango, peeled and finely diced
1/4 pineapple, peeled and finely diced
1/2 red onion finely diced
1/4 green pepper, finely diced
1/4 red pepper, finely diced
1 jalapeo finely diced
2 tbsp fresh mint chopped
2 tbsp pernod or 1 tbsp chopped fresh tarragon
6 salmon fillets 4 - 6 oz
1 lemon
1/2 cup dry white wine
pepper

Steps:

  • Make salsa ahead. combine fruit with vegetables, and herbs or liquor. Let flavours blend a few hours at room temperature or overnight in the refrigerator. Arrange salmon in a single layer in a baking dish. Squeeze over the juice of one lemon. Pour over the wine and season well with pepper. Bake at 425 F. for 10 minutes or till just cooked. You can also broil Serve with salsa.
