1 egg
1 (15 ounce) can crushed pineapple
½ cup milk
½ cup white sugar
3 tablespoons tapioca
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk egg in a bowl; mix pineapple, milk, sugar, and tapioca into egg. Pour mixture into an 8-inch square baking dish.
  • Bake in the preheated oven until sauce has reduced, about 30 minutes. Sprinkle with cinnamon.

A mixture of pineapple, flour, butter eggs and cinnamon. Excellent side dish with ham or pork roast. My in-laws are from Pennsylvania; this recipe is from some of the aunts who live there. A Christmas dinner must-have!

¼ cup butter, melted
¼ cup all-purpose flour
4 eggs, beaten
1 cup white sugar
1 (20 ounce) can crushed pineapple, in juice
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the butter, flour, eggs and sugar until well blended. Stir in the crushed pineapple. Transfer to a small casserole dish, and sprinkle cinnamon over the top.
  • Bake for 1 hour in the preheated oven, uncovered. Serve warm.

1 pinch ground nutmeg
5 slices white bread, torn
1 (20 ounce) can crushed pineapple with juice

  • Preheat oven to 350 degrees F (175 degrees C). Grease a medium-sized casserole dish.
  • In a mixing bowl, cream together butter and sugar. Beat in eggs one at a time. Stir in cinnamon and nutmeg. Add bread and crushed pineapple into the mixture. Transfer mixture to the prepared baking dish.

1/2 small pineapple, peeled, cored, cut lengthwise into 1/2-inch-thick spears
3 tablespoons brown sugar
1 1/2 tablespoons butter
1/4 teaspoon cinnamon
3 tablespoons Kahlúa or other coffee liqueur
Vanilla ice cream

Steps:

  • Preheat oven to 400°F. Arrange pineapple in single layer in baking dish. Sprinkle with brown sugar. Dot with butter and sprinkle with cinnamon. Drizzle Kahlúa over. Bake until pineapple juices bubble, 25 minutes.
  • If necessary, transfer juices to small saucepan and boil until thickened to sauce consistency. Arrange pineapple on plates. Top with ice cream. Spoon sauce over and serve hot.

1 ripe pineapple
1 lime, cut into quarters
1 1/2 teaspoons cayenne pepper, or to taste
1 tablespoon finely chopped parsley

Steps:

  • Preheat the oven to 350 degrees. Cut off the very top of the pineapple and discard. Place pineapple in a roasting pan. Roast the whole pineapple for about 1 hour, then remove from the oven and, as soon as it is cool enough to handle, cut it first into 8 thick rounds, crosswise. Cut these slices in half and arrange on a platter. Squeeze the lime juice over the pineapple, dust with cayenne pepper, and sprinkle with a little chopped parsley. (Pineapple will dry out if it is not roasted whole. Diners should pick up the half rounds of pineapple with their hands and nibble the tender flesh from the inside of the rind.)
