Simplicity is key to this recipe-especially when cooking with what you have-resulting in something surprisingly delicious. Crumbled amaretti and chocolate enrich ripe sweet peaches-a cheap dessert which makes everyone happy. It fits both Sunday lunches and special occasions with your family.

4 big ripe peaches
½ cup of dry amaretti or almond cookies ((50g))
1/3 cup of grated dark chocolate or dark chocolate chips ((50g))
3 shot glasses of liqueur, rum or amaretto
(extra) 1 teaspoon of dark cocoa powder r ((extra))
(extra) a bit of butter for the top of each peach (for a softer filling) ((extra))
1 tbsp of brown sugar

Steps:

  • Carefully wash the peaches and cut each peach in half, starting along the crease of the peach and running your small paring knife all the way around. Twist the two halves to release one side from the pit and then use the tip of a knife or fork to pry the pit out from the remaining side;
  • Scoop out some flesh and place it into a bowl;
  • Dilute the liqueur with some water and pour it over the peaches: let them marinate for 10 minutes;
  • Mix until well combined and then add the coarsely grated chocolate;
  • Drain the peach halves from the marinade; lay them cut side up in a baking tray lined with parchment paper. Spoon the filling into the peach cavities;
  • Sprinkle the peaches with brown sugar;
  • Pre-heat a static oven to 350°F (180°C). Cover the peaches with aluminum foil and bake for about 40 minutes. Remove the foil and bake for 5-10 minutes more until golden and crispy.

2 tablespoons butter, cut into 8 pieces
1 pinch ground cinnamon, or more to taste
4 ripe peaches, halved and pitted
4 scoops vanilla ice cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange brown sugar, 1 teaspoon per peach, in a 9x13-inch baking dish. Top each brown sugar mound with a piece of butter and a sprinkle of cinnamon. Place a peach half, cut-side down, on top of brown sugar-butter.
  • Bake in the preheated oven until peaches are soft, 15 to 20 minutes.
  • Plate 2 warm peaches per serving and top with 1 scoop vanilla ice cream.

2 tablespoons unsalted butter, softened
3 ounces amaretti cookies, coarsely crushed
1 ounce semisweet chocolate, finely grated
4 large peaches
1 tablespoon golden superfine sugar
8 tablespoons , crem fraiche or 8 tablespoons sour cream

Steps:

  • Preheat the oven to 375.
  • Grease a shallow baking dish with butter.
  • Place cookies, grated chocolate, and butter in bowl and mix together.
  • Place the peaches in a separate heatproof bowl and cover with boiling water.
  • Let stand for one minute, then transfer to a bowl of cold water and let stand for additional minute.
  • Remove the peaches from the skin.
  • Cut each peach in half and remove pit.
  • Using a teaspoon, scoop out a little flesh from each peach half.
  • Chop the flesh and add to the cookie mixture.
  • Fill each peach half with the amaretti cookie mixture, then sprinkle with sugar.
  • Bake in the oven for 30 minutes, or until the peaches are soft and the filling is crisp.
  • Transfer to a serving plate and serve hot with creme fraiche or sour cream.

2 tablespoons pure maple syrup or honey

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.

6large just ripe but firm peaches
15 loose (or 9 paper-wrapped) amaretti biscuits
scant blanched almond
85g dark chocolate (minimum 60% cocoa solids), roughly broken
1large egg , beaten
2 tbsp honey - clear or set
500g tub crème fraîche or mascarpone
a little cocoa powder

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C. Halve and stone the peaches, then dig out a little flesh from the centre of each half, using a sharp-edged soup spoon. Put flesh and peaches to one side.
  • Tip the amaretti, almonds and chocolate into a food processor and pulse until the mixture is like coarse gravel. Add the spooned-out peach flesh, egg and honey and whizz for just a second or two to combine - don't over-process.
  • Spoon the stuffing into the peach halves, mounding it up a little. Arrange the peaches in a single layer in a heavy baking tin, then bake for 25-30 minutes or until the flesh is tender and the stuffing nicely browned. Serve hot, with a dollop of mascarpone or crème fraîche and a dusting of sifted cocoa powder.
