CREAMY SMOKED SAUSAGE MAC AND CHEESE
Steps:
- Lightly brown the sausage in a large skillet over medium heat. Remove from the pan and drain on paper towels. Set aside.
- Grate the cheese on a box grater. Set aside.
- Cook the pasta according to the package instuctions and drain. Set aside.
- Pour the milk into a microwavable container and heat until warm - about 2 1/2 minutes.
- In a large stock pot or dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually add the warm milk, whisking constantly until it has all been added. Cook, stirring very frequently to prevent scorching, until thick - about 5 minutes. Reduce the heat to low and gradually add the shredded cheese, stirring constantly until melted. Add the salt and mix well. Add the pasta and sausage to the pot and mix well. Add additional salt and pepper to taste. Serve immediately.

MACARONI AND CHEESE WITH SAUSAGE

- Preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
- Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
- Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
- Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.
SMOKED SAUSAGE MACARONI AND CHEESE

- Cook the pasta according to the package directions and drain.
- In a large saucepan or heavy pot, over a medium low heat, add the cheese, dressing, and milk, and stir until the cheese has melted
- and is bubbly. Add the pasta and sausage and stir until well coated. Serve immediately.

- 1. In a large pot of salted water, cook macaroni. Rinse & drain toss with melted butter, place in a large casserole dish.
- 2. Place all cheeses in a sauce pot, add milk and all seasonings. Cook on low - med heat until cheese melted, stirring often.
- 3. Pour melted cheese sauce over macaroni and add sliced smoked sausage. Mix together
- 4. Top with panko bread crumbs & place a few pats of butter over top if you like. Bake @350 degrees for about 45 minutes until bubbly. ENJOY!!!!
