3-4 large leeks
2 tablespoons olive oil
1 teaspoon sweet paprika (See note)
½ teaspoon hot paprika (more or less to taste)
fine sea salt and ground black pepper
1-2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 220 degrees Celsius/ 430 degrees Fahrenheit.
  • Wash leeks: Wash the leeks. Trim and discard the roots and the last 2 cm/ 1 inch or so of the dark green ends as well. Slice the leeks lengthwise. Carefully fan open the layers without taking the leek apart and rinse under running water until all the dirt is removed.
  • Cut leeks: Cut the halved leeks into smaller pieces, about 10 cm/ 4 inches long. Place the leek pieces in a roasting tin.
  • Season: Whisk together the oil and the spices. Pour over the leeks and massage well with your hands to make sure that all the leeks are coated in oil.
  • Roast the leeks for about 40 minutes. Start checking after 25-30 minutes, about every 5 minutes or so; the roasting time depends on the thickness of the leek halves and your oven. When done, the roasted leeks should be tender easy to pierce with a fork.
  • Remove the outer leaf before serving. Sprinkle with chopped parsley and serve as suggested above.

1 tablespoon butter
1 cup sliced leeks (white portion only)
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
12 thin slices prosciutto or thinly sliced deli ham
3 cups frozen shredded hash brown potatoes, thawed
8 large eggs
2 cups 2% milk
1/2 cup shredded provolone cheese
1/4 cup loosely packed basil leaves, chopped
1 teaspoon ground mustard
1 package (6-1/2 ounces) spreadable garlic and herb cream cheese

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add leeks; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in salt and pepper. Remove from pan., In same skillet, cook prosciutto over medium heat until crisp. Remove to paper towels to drain., In a greased 11x7-in. baking dish, layer hash browns, leeks and prosciutto. In a large bowl, whisk eggs, milk, cheese, basil and mustard; pour over top. Drop cream cheese by tablespoonfuls over egg mixture., Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving., To Make Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, as directed, increasing time as necessary until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.

2 tablespoons dry sherry
6 sprigs thyme
10 peppercorns
4 leeks, washed,trimmed and halved lengthways
8 slices prosciutto
20 g butter

Steps:

  • Preheat oven to 180c.
  • Place stock, sherry, thyme and peppercorns in a baking dish.
  • Wrap leek with prosciutto.
  • Place in dish with other ingredients and dot with butter.
  • Cover and bake for 40minutes.
  • Uncover dish and bake for 5 more minutes to crisp prosciutto.
  • Serve hot.

3/4 cup chopped well-rinsed white and pale green part of leek (about 1/2 pound untrimmed)
2 tablespoons chopped sliced prosciutto or ham (about 2 thin slices)
1 tablespoon olive oil
3 tablespoons water
2 tablespoons grated Manchego cheese or mild white Cheddar cheese
1 sheet (about 1/2 pound) frozen puff pastry, thawed
an egg wash made by beating together 1 large egg and 1 teaspoon water

Steps:

  • Preheat oven to 425°F.
  • In a small heavy skillet cook leek and prosciutto in oil over moderate heat, stirring, until leek is softened. Add water and cook, covered, over low heat until leek is soft, about 10 minutes. Pour off any excess water. Remove skillet from heat and add salt and pepper to taste. Let filling cool completely and stir in cheese.
  • Roll out puff pastry on lightly floured surface into a 12-inch square and with a 4-inch round cutter cut out 4 rounds.
  • Divide filling among rounds, mounding it in the center, and brush edges of rounds with water. Fold rounds in half, pressing edges together firmly, and crimp edges with tines of fork to seal well.Empanadas may be prepared up to this point 1 day in advance and dept covered and chilled.
  • Arrange empanadas on a dampened baking sheet and brush with egg wash. Prick top of each empanada several times with fork (for steam vents). Bake empanadas in upper third of oven until puffed and golden, 12 to 15 minutes.

1/2 teaspoon extra-virgin olive oil
1 cup water
4 leeks (about 1 pound), white and pale-green parts only, rinsed well and sliced into 1/4-inch-thick rounds
2 garlic cloves, thinly sliced
1 pound Yukon gold potatoes, peeled and cut into 1/2-inch cubes
Coarse salt
8 large eggs plus 2 large egg whites
1/4 teaspoon cayenne pepper
3/4 cup part-skim ricotta cheese, drained
1/3 cup finely grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees. Brush a 9-inch square baking dish with oil. Bring water to a simmer in a medium skillet over high heat. Add leeks, garlic, and potatoes; season with 1/2 teaspoon salt. Reduce heat to medium-low, and cook, covered, until potatoes are just tender, 8 to 10 minutes. Let cool.
  • Whisk together eggs, whites, 1/2 teaspoon salt, and the cayenne. Fold in potato mixture and ricotta. Mix in 1/4 cup Parmesan cheese. Pour mixture into dish, and sprinkle with remaining Parmesan. Bake until edges are set, about 12 minutes. Reduce oven temperature to 325 degrees, and bake until set and a knife inserted into the center comes out clean, 20 to 25 minutes. Let cool for 10 minutes. Cut into 8 squares.
