1 (2 lb) white fish, split in half lengthwise
2 tablespoons tomato puree
olive oil
2 teaspoons sugar
salt and pepper
2 tablespoons water
dried herbs
2 bananas

Steps:

  • Split the fish, put in a greased ovenproof dish and brush over with a little oil, then sprinkle with seasonings and herbs.
  • Mix the tomato puree with 2 Tblsp. oil, then add the sugar and water.
  • Pour this around the fish and trickle a little down the center of the fish itself.
  • Split the peeled bananas lengthwise and put around the fish.
  • Bake in a slow oven (3008) for about 1/2 hour, basting occasionally.
  • Serve with plain boiled rice.

1-1/4 pounds fish fillets
1 teaspoon seasoned salt
Pepper to taste
Paprika, optional
3 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Place fish in a greased 11x7-in. baking dish. Sprinkle with seasoned salt, pepper and paprika if desired. Drizzle with butter. , Cover and bake until fish just begins to flake easily with a fork, 15-20 minutes.

1 1/2 lbs firm white fish fillets
1 teaspoon salt
6 garlic cloves
4 fresh green chilies, roughly chopped
1 cup coriander leaves, roughly chopped
2 ounces coconut, dried
3 tablespoons lime juice or 3 tablespoons lemon juice
1 tablespoon tamarind paste
2 tablespoons soft brown sugar
2 tablespoons cumin seeds, dry-roasted
1 teaspoon salt
2 tablespoons ghee
banana leaves or aluminum foil

Steps:

  • Cut fish into large pieces, wash and pat dry. Salt and set aside.
  • Mix the garlic, chillies, coriander leaves, coconut, lime or lemon juice, tamarind, sugar, cumin and salt into a paste and smear over fish. Let marinate 1 hour.
  • Grease foil (if using) with ghee. Place a piece of fish on a banana leaf or foil piece and fold so fish is encased.
  • Coat an oven-safe dish with ghee and place wrapped fish pieces into the dish. Cook for 30 minutes at 350 degrees F.
  • Unwrap one piece of fish to check if it's cooked through and cook until finished.
