1/4 cup seasoned croutons
2 tablespoons chopped fully cooked ham
1 tablespoon butter, melted
2 eggs
1 tablespoon shredded cheddar cheese
Fresh fruit, optional

Steps:

  • In a greased shallow 2-cup baking dish, toss the croutons, ham and butter. Break the eggs carefully on top. Sprinkle with cheese. , Bake, uncovered, at 350° for 15-18 minutes or until eggs reach desired doneness. Serve with fresh fruit if desired.

3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
½ teaspoon salt
⅛ teaspoon ground black pepper
1 cup shredded sharp Cheddar cheese
3 tablespoons butter
¼ cup diced onion
12 eggs, beaten
1 cup diced ham
6 small mushrooms, chopped

Steps:

  • Make the cheese sauce: Melt 3 tablespoons butter in a saucepan on top of the stove. Quickly stir the flour into the saucepan until the mixture is smooth. Stir in the milk, salt and pepper; continue stirring until the mixture is smooth and thick. Finally, stir in the cheese until it is melted.
  • Grease a 9x13 inch baking pan.
  • In a skillet, saute butter and onions. Pour the beaten eggs and ham into the skillet; scramble until set. Fold the mushrooms and cheese sauce into the eggs. Pour the mixture into the prepared baking pan. Cover and chill for 30 minutes or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the egg and mushroom casserole for 30 minutes in the 350 degrees F (175 degrees C) oven.

3 tablespoons olive oil
1 large onion, chopped
12 ounces mushrooms, chopped
6 ounces jamón serrano or prosciutto, chopped
1/4 teaspoon dried crushed red pepper
2 1/2 cups crushed tomatoes in puree (about 3/4 of 28-ounce can)
12 ounces asparagus, trimmed
8 eggs
2/3 cup grated manchego or Romano cheese (about 2 1/2 ounces)
Fresh Italian parsley sprigs

Steps:

  • Heat oil in heavy large skillet over medium heat. Add onion and sauté until translucent, about 8 minutes. Add mushrooms and sauté until tender, about 4 minutes. Add jamón and dried crushed red pepper and stir 1 minute. Add tomatoes. Simmer until mixture mounds on spoon, stirring frequently, about 10 minutes. Season sauce with salt and pepper.
  • Cook asparagus in large pot of boiling salted water until just crisp-tender. Drain. Rinse under cold water and drain well. (Can be prepared 1 day ahead. Cover tomato sauce and asparagus separately and refrigerate. Bring to room temperature before using.)
  • Preheat oven to 400°F. Grease four, 5 to 6-inch-diameter shallow earthenware casseroles or baking dishes with olive oil. Divide sauce among dishes. Make large well in center of sauce in each dish. Break 2 eggs into each well. Sprinkle eggs with pepper and then cheese. Arrange asparagus around edge of dishes. Cover with foil. Bake until eggs are almost set, about 12 minutes. Garnish with parsley and serve immediately.

1/2 cup quick-cooking grits
1 1/4 cups shredded sharp cheddar cheese
3/4 cup coarsely chopped country-style ham (3 oz., thickly sliced)
salt
black pepper
1/8 teaspoon garlic powder
4 large eggs
1 -2 tablespoon sliced scallion

Steps:

  • Preheat the oven to 350°.
  • Lightly grease an 8-inch square baking pan with butter, oil, or cooking spray.
  • In a medium saucepan, cook the grits according to package directions.
  • Once the grits are cooked, stir in 3/4 cup of Cheddar cheese, the ham, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the garlic powder and continue stirring until the cheese melts.
  • Scrape the grits mixture into the prepared pan.
  • Using a spoon, make four egg-size indents in the grits mixture.
  • Crack 1 egg into each nest.
  • Season the eggs lightly with salt and pepper.
  • Top with the remaining 1/2 cup Cheddar.
  • Bake until the whites are set but the yolks are still runny and the cheese is melted, 15-20 minutes.
  • Serve sprinkled with the scallions.

This would make a wonderful and different Brunch recipe or a special treat for Christmas morning. I found the recipe in a very old magazine in the Doctor's office and I didn't note the magazine. I think it was Canadian Living. I think this is the only recipe I have posted untried but I don't want to lose it. I am making it public just in case you would like to try it as well. I have since made this recipe and we all enjoyed it. It will be made many more times. Just a note of caution, watch so that the eggs don't get overcooked. I think my oven is a bit hot. Enjoy!

4 large potatoes, about 2-1/2 pounds
1 tablespoon vegetable oil
1 tablespoon butter
8 ounces brie cheese
1 cup ham, finely chopped, 6 oz
1/4 cup fresh parsley, chopped
1/4 cup green onion, chopped
1/4 teaspoon pepper
8 eggs
1 pinch paprika

Steps:

  • Scrub potatoes; boil in salted water until tender but firm, approximtely 15 minutes. Drain the potatoes well and refrigerate until cold; cut into 1/4" cubes.
  • In large non-stick skillet heat oil and butter on medium-high heat. Fry potatoes about 10 minutes, stirring often, until crisp and golden; cool. Stir in Brie, ham, parsley, green onion, and pepper.
  • Transfer to greased, shallow 10 cup oval container and spread evenly. Make 8 wells in the potatoe mixture. Cover with foil (It can be refrigerated for up to 24 hours at this point).
  • Heat oven to 400 degrees Fahrenheit; heat mixture until warm, about 15 minutes. Remove from oven; drop 1 egg into each well, sprinkle with paprika. Bake uncovered until egg whites are set and yolks are soft, 15 to 20 minutes.

2 ounces uncured ham, thinly sliced
2 tablespoons unsalted butter, cut into small pieces
1 teaspoon fresh thyme
2 tablespoons heavy cream
2 large eggs
2 ounces gruyere, grated
black pepper

Steps:

  • Preheat the oven to 450 degrees. Place uncured ham in the bottom of 2 small oven-proof crocks or ceramic bakers.
  • Add 1 tablespoon unsalted butter, 1/2 teaspoon thyme, and 1 tablespoon heavy cream to each crock.
  • Carefully break 1 egg into each crock. Sprinkle each with 1 ounce Gruyere and black pepper to taste.
  • Place crocks on a sturdy baking sheet. Bake for 5 minutes or until eggs are mostly set.
  • Turn the broiler on high and move crocks to the top oven rack, just beneath the broiler. Broil for 1 to 2 minutes or until cheese is bubbly and golden brown.
  • Remove the crocks from the oven and let sit for 5 minutes before serving.

  • Preheat oven to 400°F.
  • Prepare mushrooms:
  • Cook mushrooms and shallot in butter with salt and pepper in a large heavy skillet over moderately high heat, stirring, until mushrooms are tender and liquid they give off is evaporated, about 10 minutes. Remove from heat and stir in crème fraîche and tarragon.

Broccoli, Ham, and Mozzarella Baked with Eggs Recipe - (4.2/5) image

4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well.
1-2 cups diced ham (1/2 - 1 lb.)
1 cup low-fat grated Mozzarella
1/3 cup thinly sliced green onion (optional, but good)
8-10 eggs, well beaten
Spike Seasoning (or other all-purpose seasoning blend) to taste (I use about 1 tsp.)
fresh-ground black pepper, to taste
low-fat sour cream, for serving (optional)

Steps:

  • Heat oven to 375F/190C. Spray a 9"x 12" casserole dish with non-stick spray. (The dish can be slightly smaller too, especially if you use the smaller amounts of ingredients.) Bring a medium-sized pot of water to a boil and cook the broccoli just 2 minutes; then pour into a colander placed in the sink and let it drain well. Dice the ham while the broccoli drains. Layer broccoli, ham, Mozzarella, and green onions (if using) in casserole dish. Season with Spike Seasoning and fresh-ground black pepper and pour beaten egg over. Use a fork to "stir" the mixture just until all the ingredients are coated with egg. (It might look like there is not enough egg, but carry on!) Bake 35-45 minutes, or until all the mixture is set and the top is starting to lightly brown. (If you use the higher amount of eggs, it will take the longer baking time, but start to check after about 30 minutes.) Serve hot, with low-fat sour cream if desired. This can be kept in the fridge for at least a week and reheated in the microwave.
