1 medium cabbage
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1 1/2 cups milk
1/4 cup breadcrumbs

Steps:

  • Shred cabbage and cook for 9 minutes in boiling water.
  • Remove cabbage and drain well.
  • Place in 1 1/2 quart buttered casserole.
  • Melt butter in a saucepan, stir in flour and salt and cook until smooth.
  • Add milk gradually, stirring until thick.
  • Pour sauce over cabbage and sprinkle bread crumbs over top.
  • Bake at 325° for 15 minutes or until crumbs are brown.

Shredded cabbage is baked with a sprinkling of sugar, salt and nutmeg, in heavy cream and topped with bread crumbs. Serve with bacon bits, if desired.

5 cups shredded cabbage
2 tablespoons white sugar
½ teaspoon salt
¼ teaspoon ground nutmeg
2 cups heavy cream
1 ½ cups dry bread crumbs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place cabbage in a 2 quart casserole dish. Sprinkle with sugar, salt and nutmeg. Pour cream over cabbage and top with bread crumbs.
  • Bake in preheated oven for 1 hour.

I found this recipe in a little cookbook entitled "Green Thumbs in the Kitchen." It is almost exactly like the one already posted which is why I added the Roman Numeral II to the title. The only variation is the addition of grated cheese to the topping. For those of you who are cabbage lovers as I am, this is terrific, low calorie and diabetic-friendly.

1 medium cabbage, finely shredded
1/2 cup water, salted
3 tablespoons margarine
1/2 teaspoon salt (I also add ground black pepper, but it's not part of the recipe)
3 tablespoons flour
1 1/2 cups milk (I use low fat)
1/4 cup breadcrumbs
1/2 cup cheese, grated (your favorite)

Steps:

  • Preheat oven to 350 degrees.
  • Simmer the cabbage in water in a large saucepan for 9 minutes.
  • Remove from heat, drain well.
  • Place cabbage in a 9x13" casserole dish.
  • In a small saucepan, melt margarine.
  • Add flour and salt and stir until the mixture is smooth.
  • Gradually add the milk and continue stirring until the sauce thickens.
  • Pour the sauce over the cabbage.
  • Sprinkle with bread crumbs and cheese.
  • Bake until bubbly and lightly browned.

This rich comforting cabbage dish has plenty of old-fashioned goodness. The recipe is shared by Virginia Dishman of Lansing, Michigan, who admits she finds it a challenge to cook small quantities since she once fed a family of nine!

1 bacon strip, diced
2 tablespoons chopped onion
1 tablespoon cider vinegar
1 tablespoon water
1-1/4 teaspoons sugar
1/4 teaspoon salt
Dash pepper
2 cups shredded cabbage
1 small tart apple, peeled and chopped
1/4 cup sour cream

Steps:

  • In a skillet, cook bacon over medium heat until crisp. Remove to paper towel. In the drippings, saute onion until tender. Add the vinegar, water,sugar, salt and pepper; cook until bubbly. Stir in cabbage and apple; toss to coat. Cover and cook for 5-6 minutes or until cabbage is tender. stir in sour cream; heat through (do not boil). Sprinkle with bacon.
