I received this recipe from a coworker and made it for Easter brunch this year. It was easy to assemble and tasted fantastic. It was an instant hit with my family! I modified the original recipe, using low-fat egg/dairy products.

1 cup light brown sugar
½ cup light butter, melted
1 teaspoon ground cinnamon
3 Granny Smith apples - peeled, cored, and thinly sliced
½ cup dried cranberries
½ cup chopped pecans
1 loaf Italian bread, cut into 1/2-inch slices
1 ½ cups egg substitute
1 ½ cups skim milk
1 tablespoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • Spray a 9x13-inch casserole dish with cooking spray.
  • Mix brown sugar, butter, and 1 teaspoon cinnamon in the bottom of the prepared casserole dish. Add apples, cranberries, and pecans; toss to coat. Evenly spread apple mixture to cover bottom of dish.
  • Arrange bread slices atop apple mixture, overlapping slightly until apple layer is completely covered.
  • Whisk egg substitute, skim milk, vanilla extract, and 2 teaspoons cinnamon in a bowl; evenly pour over bread slices. Cover dish with aluminum foil and refrigerate 4 to 24 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake the covered casserole dish in the preheated oven for 40 minutes. Remove aluminum foil and continue baking until lightly browned and egg mixture is set, about 5 more minutes. Let cool 5 minutes before serving.

10 slices day-old French bread (3/4 inch thick)
6 large eggs, lightly beaten
2-3/4 cups whole milk
2/3 cup sugar, divided
1 tablespoon vanilla extract
4 medium apples, peeled and thinly sliced
2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 tablespoon butter or margarine

Steps:

  • Place bread in a 13-in. x 9-in. baking dish. Combine eggs, milk, 1/3 cup sugar and vanilla; pour half over bread. Top with half of the apples. When you're ready to cook, pop the pan into the over. The French toast will come out moist, succulent, and adorned with a fragrant melange of apple and banana. Serve it just as is without any additional fruit, butter or syrup.

4 tart apples, such as McIntosh or Granny Smith
2 tablespoons fresh lemon juice
3 large ripe bananas
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter
1/2 cup (firmly packed) light brown sugar
1 tablespoons maple syrup
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
4 to 5 slices challah bread (1-inch thick)

Steps:

  • Preheat oven to 375 F.
  • Peel, core, and cut each apple into 3/4 inch thick wedges. Place the apple wedges in a large mixing bowl, and toss gently with the lemon juice to prevent discoloration. Peel the bananas, and slice them crosswise 3/4 inch thing. Add the bananas to the apples and toss to coat evenly with lemon juice. Sprinkle the cinnamon over the fruits and toss well to combine.
  • Melt butter in a large skillet over medium-high heat. Add the fruit and saute until tender, about 30 seconds. Add the brown sugar and maple syrup and cook until the sugar is dissolved, 30 seconds longer, remove from heat.
  • Pour the contents into a lightly buttered, non-reactive, 9- inch round baking dish. In a medium size bowl, beat the eggs, then stir in the milk and vanilla. Dip the bread slices into the egg mixture just to moisten (both sides), then place them over the fruit in a single layer in the pan, making sure to cover the fruit entirely. Pour any leftover egg mixture over the bread. Let the mixture sit for 10 minutes. (This can be prepared up to this point in advance, covered and refrigerated overnight)
  • Bake the French toast, uncovered until the top is golden, 30-35 minutes. Cool for 5 minutes. Place a serving tray over the pan, and carefully turn them over to unmold the French toast. Spoon any syrup or fruit left in the pan over the bread, and serve at once.

Next-Day Baked Cinnamon-Apple French Toast image

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 .

1/2 cup light brown sugar, packed
1 1/2 teaspoons cinnamon, ground
1/2 teaspoon nutmeg, ground
8 slices white bread (use Texas toast, that REALLY thick white bread)
8 eggs
1/2 cup granulated sugar
3 1/2 cups milk (original recipe calls for whole milk, I used 2%)
1 tablespoon vanilla (use the very best! Use Penzey's!)
6 apples (used a variety ( Jonagold, McIntosh, your favorites)
2 tablespoons unsalted butter (plus more to grease pan)

Steps:

  • Peel, core and cut apples into 1/4" thick slices. Heat butter in a saute pan until foamy; add apples and cook until tender (about 10 minutes).
  • Turn off heat and stir in brown sugar, cinnamon and nutmeg. Set aside.
  • Toast bread. Cut slices in half on the diagonal, making triangles.
  • Butter a 13x9 baking dish and arrange bread triangles in 2 rows, overlapping. (There was no photo for this, and I couldn't figure out the best way to do it -- I ended up with an arrangement that looked like two Flying Geese quilt borders, going opposite directions.).
  • Beat eggs in a medium bowl; add sugar, milk and vanilla and beat well. Pour custard mixture over bread. Spoon apples over top. Cover and refrigerate over night.
  • The next morning, heat oven to 350. Uncover baking dish and bake 60 minutes, until custard is set and doesn't shimmy when you tap it.
  • Let dish rest for 10 minutes when you take it out of oven. The original recipe says to serve in squares -- hah! Serve by spoonful; there wasn't any chance that I was going to get this out of the pan in nice, neat squares. Serve with honey butter, maple syrup, or nothing -- it's quite sweet, and the apples create a lovely topping.

  • Sprinkle a couple more shakes of cinnamon over bread.

  • Remove, let cool 5-10 minutes before serving. Cut into squares and serve with homemade whip cream.
  • NOTE: actual casserole can be made the night before by letting the bread mixture soak overnight and baking it in the morning.

1 dried out loaf french bread cut into 1 inch slices
3 eggs
2 c whole milk
1/2 c heavy cream
1 c white sugar
1/4 c apple juice concentrate
3 Tbsp vanilla
APPLE CINNAMON TOPPING
1 apple, peeled and cored cut into small chunks
1/4 c butter
1/4 c maple syrup
1/4 c brown sugar, light
1 Tbsp cinnamon
1 tsp nutmeg
3 Tbsp melted butter

Steps:

  • 1. Place dried and sliced bread in a casserole dish.
  • 2. Combine beaten eggs, milk, cream, sugar, apple juice concentrate, and vanilla.
  • 3. Pour over the bread, cover and refrigerate overnight.
  • 4. APPLE CINNAMON TOPPING Place diced apple, and 1/4 cup butter in sauce pan, heat until boiling. Remove from heat and stir in brown sugar, cinnamon, and nutmeg. Allow to set for 5 min.
  • 5. Press the french toast down into the pan using a fork or spatula. Pour apple cinnamon topping over bread.
  • 6. Bake at 400 for 45 min
  • 7. Remove from oven top, press bread back down in the pan it will rise as it cooks. Top with 3 tablespoons melted butter, turn oven off and let the toast sit in the oven for 5 - 10 min or until ready for serving. Enjoy!

  • Spray a 13 x 9 inch pan with cooking spray. Peel, core & slice apples. Slice bread into 1 ½-inch thick slices and tightly pack into pan. 1 c dark brown sugar
3 Tbsp white corn syrup (karo or other)
6 Tbsp butter
1 c chopped pecans
3 each golden delicious apples, peeled, cored and sliced (or you may use pears instead!)
1/3 c water
1 tsp ground cinnamon
3 Tbsp white sugar
1 Tbsp each: lemon juice and cornstarch
12 slice french bread or challah, 1 inch thick
12 oz cream cheese
6 large eggs
1 c milk (whole milk preferably)
1 c whipping cream or half n half
1 Tbsp vanilla extract
2 tsp ground cinnamon
OPTIONAL GARNISHES:
confectioner's sugar, whipped cream, chopped pecans, cinnamon, nutmeg

Steps:

  • 1. Generously grease a 9x13" oven baking pan. Preheat oven to 350 deg. F.
  • 2. Combne brown sugar, white corn syrup, and butter in a sauce pan. Bring to a boil and boil for one minute, stirring often. Pour into bottom of greased oven dish, spread out evenly. Spread pecans over.
  • 3. Combine the apples, water, cinmamon, white sugar, lemon juice and cook, stirring constnatly, in sauce pan over medium heat just until apples slices begin to soften up. Add the cornstarch, mix in well and continue to stir until mixture thickens up, then remove from the heat.
  • 4. Place just six of the bread slices in a single layer in the baking dish over the caramel layer. Thickly spread each slice with some cream cheese. Distribute the apple mixture over the bread slices in the pan. Pour apple mixture over the bread. Cover the pan with the remaining 6 slices of bread.
  • 5. Mix together the eggs, milk, cream, vanilla, connamon. Pour this over the bread in the baking dish. Cover and refrigerate overnight (not for more than 24 hours).
  • 6. Remove pan from refrigerator, and remove cover. Bake for 1 hour in a 350 deg. oven until browned and slightly puffy. Remove from oven and immediately place portions on serving plates. Sprinkle with powdered sugar. If desired add whipped cream and a garnish of more chopped pecans, cinnamon, or nutmeg.

Press the bread down with the back of a wooden spoon, making sure it's evenly moist. Cover with parchment paper, then foil, and refrigerate for at least 8 hours or up to 24 hours. Preheat oven to 350°F. Bake the casserole, covered, for 40 minutes. Uncover and continue baking until puffed, set and lightly browned, about 20 minutes more. Let stand for 10 minutes; dust with confectioner's sugar and serve.

I found this recipe at my mother in law's house. You can try other flavors of pie filling like blueberry but apple is the favorite at our house.

1 (21 ounce) can apple pie filling
3 eggs
1 cup milk
1 teaspoon vanilla
10 slices day-old French bread or 8 slices day old cinnamon raisin bread, about 1/2 inch thick
2 tablespoons butter, melted
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Steps:

  • Grease a 9 x 13 baking dish.
  • Spread pie filling in dish.
  • In a pie plate, beat the eggs, milk and vanilla.
  • Dip bread slices into the egg mixture for about a minute per slice, turning once.
  • Arrange 2 rows of bread on top of pie filing overlapping slices slightly.
  • Mix cinnamon and sugar.
  • Brush bread with melted butter and sprinkle with sugar mixture.
  • At this point, the dish may be refrigerated overnight, if needed.
  • Preheat oven to 350°.
  • Bake dish uncovered for 30-35 minutes or until slightly browned.
  • Serve fruit side up.

4 tart apples, such as McIntosh or Granny Smith
2 tablespoons fresh lemon juice
3 large ripe bananas
1/2 teaspoon ground cinnamon
3 tablespoons unsalted butter
1/2 cup (firmly packed) light brown sugar
1 tablespoons maple syrup
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
4 to 5 slices challah bread (1-inch thick)

Steps:

  • Preheat oven to 375 F. Peel, core, and cut each apple into 3/4 inch thick wedges. Place the apple wedges in a large mixing bowl, and toss gently with the lemon juice to prevent discoloration. Peel the bananas, and slice them crosswise 3/4 inch thing. Add the bananas to the apples and toss to coat evenly with lemon juice. Sprinkle the cinnamon over the fruits and toss well to combine. Melt butter in a large skillet over medium-high heat. Add the fruit and saute until tender, about 30 seconds. Add the brown sugar and maple syrup and cook until the sugar is dissolved, 30 seconds longer, remove from heat. Pour the contents into a lightly buttered, non-reactive, 9- inch round baking dish. In a medium size bowl, beat the eggs, then stir in the milk and vanilla. Dip the bread slices into the egg mixture just to moisten (both sides), then place them over the fruit in a single layer in the pan, making sure to cover the fruit entirely. Pour any leftover egg mixture over the bread. Let the mixture sit for 10 minutes. (This can be prepared up to this point in advance, covered and refrigerated overnight) Bake the French toast, uncovered until the top is golden, 30-35 minutes. Cool for 5 minutes. Place a serving tray over the pan, and carefully turn them over to unmold the French toast. Spoon any syrup or fruit left in the pan over the bread, and serve at once.

1 stick butter

1 loaf French bread

  • Mix brown sugar, maple syrup, and butter. Cook over medium-low heat 5 minutes, pour into 9x13 casserole. Lay apple slices on top of sugar mix. Top with loaf of french bread cut into slices/cubes. Beat eggs, milk, vanilla, and cinnamon. Whisk well, pour over bread. COVER AND REFRIGERATE OVERNIGHT. Bake at 350 for 45-60 minutes. Let sit 5 minutes. Flip into another casserole dish to serve.

3/4 cup sugar, divided
1 tablespoon vanilla extract
5 Granny Smith apples, peeled, sliced
2 teaspoons ground cinnamon
2 tablespoons butter or margarine

Steps:

  • Preheat the oven to 400°F. Cut the bread into 1 1/2-inch slices. Arrange the slices in a single layer in a lightly greased 9x13-inch baking pan. Whisk the eggs in a large bowl until blended. Whisk in the milk, 1/4 cup of the sugar and vanilla. Pour half the egg mixture over the bread. Arrange the apple slices over the bread. Pour the remaining egg mixture over the apples. Mix the remaining 1/2 cup sugar and cinnamon in a small mixing bowl. Sprinkle over the top. Dot with the butter. Bake for 30 to 35 minutes or until the apples are tender. Let stand for 10 minutes before serving. Serve with maple syrup.

1 (1lb) unsliced italian bread
8 large eggs
1 c sugar
3 1/2 c milk
1 Tbsp vanilla
4-5 granny smith apples
1 Tbsp ground cinnamon
1 tsp ground ginger
2 Tbsp butter

Steps:

  • 1. Slice bread into 1 1/2 slices. Arrange bread slices tightly together in a greased 9 x 13 baking dish. Beat eggs, 1/2 cup sugar, milk, and vanilla with a wire whisk until blended. Pour half of the mixture over bread. Peel, core, and slice apples. Put apples over bread to cover. Pour remaining egg mixture over apples. Combine remaining 1/2 cup sugar, cinnamon and nutmeg; sprinkle over apples. Dot with butter and chill at least 8 hours. Bake uncovered at 350 degrees for 1 hour. Remove from oven and let stand 5 to 10 minutes. Cut into squares and serve with syrup and whipped cream.
