This recipe is inspired by a number of different recipes I have tweaked according to my tastes. I love it every way you can imagine, on ice, in milkshakes, and even recently made in to my EXTREMELY homemade Baileys Irish Cream Ice Cream. Delicious

BAILEYS IRISH CREAM CHOCOLATE CHIP CHEESECAKE
This is a decadent, moist cheesecake that never fails. I got the recipe from my sister-in-law who brings it to every family function. There are never any leftovers! *This cheesecake needs to be made and refrigerated one day in advance. Hope you enjoy!

- Crust:.
- Mix all ingredients.
- Press into a 10" spring form pan and up the sides one inch.
- Bake at 325 for 7-10 minute.
- Filling:.
- Beat cream cheese with electric mixer until smooth.
- Beat sugar in gradually, and then add eggs one at a time.
- Blend in Bailey's and vanilla.
- Sprinkle half of chocolate chips over crust.
- Spoon in filling.
- Sprinkle with remaining chocolate chips.
- Bake at 325 degrees approximately 1 hour and 20 minutes or until puffed, springy in center and golden brown. Place a pan of water on bottom rack of oven while baking to keep it moist.
- Cool cake completely.
- Coffee Cream Topping:.
- Beat all ingredients and spread over cooled cake.
- Top with chocolate curls or Skor bits.
- *NOTE: Be sure to make and refrigerate at least one day before serving.

- Sprinkle nuts into bottom of pan.

- 1. In a small bowl, combine Baileys and coffee crystals. Microwave on high for 10 seconds or until melted and dissolved.
- 2. In a medium saucepan, over medium heat, melt butter, evaporated milk, sugar, and marshmallow cream.
- 3. Slowly add the Baileys coffee mixture; stir well.
- 4. Boil for 5 mins.
- 5. Remove from heat. Stir in chips and vanilla extract. Stir for approx. 3-4 mins until smooth.

- Preheat oven to 350°F In a large bowl, mix together the cookie crumbs, confectioner's sugar and 5 tablespoons cocoa. Add melted butter and stir until well mixed.
- Pat into the bottom of a 9in loose-bottomed or springform cake tin. Bake in preheated oven for 10 minutes; set aside. Increase oven temperature to 450°F.
- In a large bowl, combine cream cheese, superfine sugar, 4 tablespoons cocoa and flour. Beat at medium speed until well blended and smooth. Add eggs one at a time, mixing well after each addition. Blend in the soured cream and Baileys liqueur; mixing on low speed. Pour filling over biscuit base.
- Bake at 450F for 10 minutes. Reduce oven temperature to 200F and continue baking for 60 minutes.
- With a knife, loosen cake from sides of tin. Allow to cool slightly, then push up base of the tin to remove cheesecake. Chill before serving. If your cake cracks, a helpful tip is to dampen a palette knife and smooth the top, then sprinkle with some cookie crumbs.

- 1. In a very large bowl, combine the milk chocolate chips, semi-sweet chips, marshmallow cream, vanilla, and Baileys Irish Cream. Set aside.
- 2. Line a 10x15" baking pan with foil. Lightly spray with cooking spray.
- 3. In a medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to a gentle boil over medium heat. Cook slowly and stir constantly for 10 minutes.
- 4. Pour the hot mixture into the bowl with the chips. Stir slowly by hand to combine. It is important to do this step by hand NOT with a mixer. Stir for approx. 2-3 minutes.
- 5. Pour fudge into greased pan and chill to set.

HOMEMADE BAILEYS IRISH CREAM
This tastes just like the store-bought version. I make it every year, before Christmas, to give as gifts (and of course to keep some for ourselves!). It ends up being less expensive than buying from the store AND you get to say that you made it yourself! :) *Note about raw eggs: Even though pasteurized and refrigerated eggs are typically safe, there can never be a guarantee that an egg is free from salmonella. One reviewer said she skipped the eggs in this recipe and it still tasted great. I haven't tried it that way yet, but that could be an option. - To prepare vanilla wafer crumbs, place cookies in a plastic bag and finely crush until the required amount has been prepared.
- Place the vanilla wafer crumbs in a small mixing bowl.
- Melt the butter in a small saucepan and mix with the crushed wafers.
- Press the wafer and butter mixture into the base of an 8-inch cake or pie tin.
- Dissolve the gelatin in just enough cold water to soften it and reserve.
- In a large mixing bowl, beat together the cream cheese and sugar until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form and fold in the Baileys Irish Cream.
- Gently fold the Baileys and cream mixture into the creamed cheese and sugar.
- Add gelatin and continue to gently fold to combine all ingredients.

- Refrigerate and allow to set for 1 to 2-hours.
- Garnish with rosettes of whipped cream and a fan of freshly sliced strawberries, if desired.

- Preheat the oven to 350 degrees F. Line a 9 X 13 inch baking dish with parchment paper. In a large bowl, mix the flour, cocoa powder, granulated sugar, brown sugar, and salt together.Whisk in the melted butter, Baileys Irish Cream, and 3 eggs. Once smooth, stir in the mini chocolate chips. Spread the batter evenly in the prepared baking dish.Place the cream cheese in the food processor (or the bowl of a stand mixer.) Puree/Beat to soften. - 1. Prepare bundt pan by greasing and flouring. Set oven to 325 degrees. Add the nuts into the bottom of the pan.
- 2. In a large mixing bowl add the remaining cake ingredients and mix on medium with electric mixer for 5 minutes. Pour mix evenly over nuts in cake pan. Bake for 1 hour or until toothpick comes out clean.

- 1. Beat egg yolks thoroughly. Add salt and Baileys, stir
- 2. Cook in top of double boiler until yolk mixture thickens. Cool. Beat egg whites until stiff.
- 3. Combine egg/Baileys mixture, egg whites, and 2/3 of Cool-Whip, using a folding motion. Fold in 3/4 cup of the chopped nuts. Scrape into a baked pie shell. Cover with remaining Cool-Whip. Sprinkle with remaining chopped nuts and chocolate shavings.
- 4. Chill for at least 4 hours before serving.
