1 lb. fresh green beans, trimmed
3 carrots, peeled, cut into 4-inch matchlike sticks
1/4 cup fresh lemon juice
2 Tbsp. extra virgin olive oil
1 Tbsp. GREY POUPON Dijon Mustard
1/2 tsp. garlic powder
12 slices OSCAR MAYER Turkey Bacon

Steps:

  • Heat oven to 425°F.
  • Combine vegetables in large bowl. Whisk next 4 ingredients until blended. Add to vegetables; mix lightly.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Place bacon slices in single layer on prepared baking sheet; top evenly with beans and carrots, placing vegetable pieces crosswise along length of bacon slices. Roll up, starting at one short end of each bacon slice. Place, seam sides down, on baking sheet.
  • Bake 30 min. or until bacon is crisp, turning after 15 min.

1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

This is such a tasty side dish!!!! I love it with beef, but have made it with everything. Although it's a little time-consuming at the beginning, they are really very easy to make. You can wrap the beans ahead and keep in the refrigerator until ready to broil.

2 (16 ounce) cans green beans (WHOLE style)
1 lb bacon
1 cup brown sugar (approximately)
salt
pepper
garlic powder
toothpick

Steps:

  • Preheat broiler.
  • Pour drained green beans into large bowl.
  • Season with salt, pepper and garlic powder.
  • Cut each bacon slice into 3 equal portions.
  • Wrap 6-8 beans with bacon piece, securing with toothpick.
  • Place on broiler pan.
  • Sprinkle evenly with some of the brown sugar.
  • Broil until sugar melts and bacon browns.
  • Turn bundles over and sprinkle with additional brown sugar.
  • Broil until brown and bubbly.

If you want a veggie everyone will love, you can't go wrong with these. Bacon wrapped anything is a hit! These are unique with their brown sugar, salt, and pepper flavor. The bacon drippings and brown sugar create their own sauce that the green beans cook in. Serve these and kids will definitely eat their veggies.

1 lb whole, fresh green beans
3-4 slice bacon, cut in thirds
1/3 c light brown sugar, firmly packed
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • 1. Preheat oven to 325F degrees.
  • 2. Combine green beans and enough water to cover in a large saucepan. Bring to a boil. Boil for 3 minutes.
  • 3. Drain.
  • 4. Wrap 5 or 6 green beans with a piece of bacon and secure with a toothpick.
  • 5. Repeat procedure with remaining green beans and bacon.
  • 6. Arrange bundles in a 13x9 baking dish.
  • 7. Sprinkle with brown sugar, salt and black pepper.
  • 8. Bake bundles until bacon is crisp about 15 to 20 minutes.
  • 9. TIP: If you don't have fresh green beans use 2 - 14.5-ounce cans of canned green beans. Drain, rinse and drain one more time. Toss beans with 1 tbsp lemon juice for a taste of freshness before making recipe.

Seriously... there are none better than these. I took the skeleton of a recipe and made it my own. Full of flavour! Make your dinner guests DREAM of this dish. If you don't think these are the greatest asparagus/bacon bundles after making them... then I just don't know what to think! ;)

1 bunch fresh asparagus
1 pt chicken stock (homemade is best)
6-8 slice bacon (i like thick peppered bacon)
FLAVOURED OIL
2-3 Tbsp canola oil
garlic powder
onion powder
seasoned salt
black pepper
crushed red pepper

Steps:

  • 1. Preheat oven to 400. Spray the top portion of a broiling pan with non-stick cooking spray. Set aside.
  • 2. Add chicken stock and some salt to a saute pan. Place on stove top on medium heat. Bring to light boil. (I also add garlic powder here because I really like garlic, but that's optional.)
  • 3. Meanwhile, wash asparagus bundle and while rubber bands are still on, cut off the bottom couple of inches of the stalks. (These can be tough and difficult to eat.) Remove rubber bands.
  • 4. When stock is lightly boiling, drop the stalks in, all facing the same direction. Reduce heat to simmer the asparagus for about 5-7 minutes. (Do not overcook. If the asparagus starts to lose too much green colour, take them out.)
  • 5. While asparagus cooks, in a baking dish or bowl, combine the flavoured oil ingredients. (I didn't add measurements for the seasoning as each cook is different and prefers more or less of each thing. I always add LOTS of the red and black pepper which compliments the bacon well.)
  • 6. Transfer stalks from pan to dish with flavoured oil. Toss stalks to thoroughly coat each one. Allow asparagus to cool in the oil for at least 5 minutes. [Save your stock if you want. I do and the veggie flavour adds a whole new element to it. (I use it to cook rice in.)]
  • 7. Divide the stalks evenly. A good bundle is about 6-7 stalks. Count your stalks and divide them. (If you have an extra or two... no harm in tasting them. No one will ever know! We wouldn't want uneven bundles!) Take a strip of bacon and wrap it around a bundle about three times. Tuck the ends in so the bacon doesn't unfurl while cooking. (Do not overlap the bacon TOO much. A little is fine. Refer to pictures.)
  • 8. Arrange bundles on the broiler pan with some space between each one. Place in the oven and cook 15-20 mins or until bacon is cooked on top. Cooking time will depend on thickness of bacon. (Sometimes, I finish them up with the broiler on for a couple mins.) If the tips of the asparagus are looking too done, take them out.
  • 9. Allow to cool no more than 5 mins. They get cold fast if you're not careful. Serve as a side dish or appetizer. ENJOY!

4 bacon strips
2 boneless pork loin chops (4 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2 slices onion (1/4 inch thick)
2 slices tomato (1/2 inch thick)
1/2 medium green pepper, cut in half
2 slices Swiss cheese

Steps:

  • Cross two bacon strips to form an "X"; repeat. Sprinkle pork chops with salt and pepper; place over bacon strips. Layer with onion, tomato and green pepper. Wrap bacon strips over vegetables and secure with a toothpick., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare the grill for indirect heat, using a drip pan. Place pork bundles over the drip pan. Grill, covered, over indirect medium heat for 20-25 minutes or until a thermometer reads 160°. , Place cheese slices over bundles; cover and grill 1 minute longer or until cheese is melted. Discard toothpicks.
