BACON WRAPPED PINEAPPLE

Steps:
- Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
- Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
- Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
- Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
- Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

- Preheat oven to 400˚F.
- Place an oven-safe rack inside a foil lined rimmed baking sheet (for easy cleanup - see recipe note #2); brush rack with oil or spray with cooking spray to prevent sticking.
- Whisk maple syrup and cayenne pepper together in a small bowl.
- Spread brown sugar on a small plate
- Cut bacon slices in half crosswise.
- Use a fork or small tongs to dip one pineapple chunk in maple syrup mixture, coating all sides; allow any excess to drip off and place in brown sugar. Turn to coat lightly on all sides. Wrap coated pineapple chunk in a half slice of bacon (starting at one end of of the bacon slice and rolling it up); place on rack in baking sheet. Repeat with remaining pineapple. Bake 30 to 35 minutes, or until bacon is crispy and pineapple is hot. Serve with toothpicks if desired.

BACON WRAPPED PINEAPPLE

- 1. Preheat oven to 375 degrees. Cut raw bacon in half and place on a baking sheet covered with aluminum foil in single layer. Bake for 3 minutes, flip and bake for another 3 minutes. Let cool for 5-10 minutes. Wrap each piece of bacon around a pineapple chunk. Secure with toothpick and place back on the baking sheet covered with aluminum foil. Place in oven.
- 2. Combine honey, Worcestershire sauce, soy sauce, ginger, ketchup, pineapple juice and sriracha in small saucepan and simmer for 10 minutes; stirring several times.
- 3. Using brush baste with sauce after they have cooked for 20 minutes. Bake for 10 additional minutes or until bacon is crispy and the pineapple is heated through. Serve promptly with remaining sauce.
BACON-WRAPPED PINEAPPLE CHUNKS
Steps:
- Combine first 5 ingredients in saucepan, stirring well. Bring to a boil, reduce heat and simmer, uncovered, 10 minutes, stirring frequently. Remove from heat, set sauce aside. Wrap each pineapple chunk with a piece of bacon, securing with a wooden pick. Place on rack in shallow roasting pan. Bake at 400 degrees for 15 minutes. Baste with sauce, return to oven, bake an additional 15 minutes until bacon is cooked. Before serving, secure a mandarin orange slice to bottom of each pineapple chunk. Serve with sauce.
BACON WRAPPED PINEAPPLE AND WATER CHESTNUTS
This is a great appetizer with a delicious sweet and tangy flavor.

- Stir the water chestnuts together with the garlic powder and soy sauce in a small bowl. Set aside to marinate for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Drain the water chestnuts, discarding the soy sauce. Place a pineapple chunk in the center of each piece of bacon, then place a water chestnut on top of that. Fold the ends of the bacon over the water chestnut, and secure with a toothpick. Repeat with the remaining bacon, pineapple, and water chestnuts. Gently toss the bacon-wrapped chestnuts with brown sugar in a bowl, then place onto the prepared baking sheet.
- Bake in the preheated oven for 25 minutes, then turn the pieces over, and continue baking 15 to 35 minutes longer until the bacon has cooked to your desired degree of doneness. Briefly drain on a paper towel-lined plate, and serve hot.
