1/3 cup BULL'S-EYE Brown Sugar & Hickory Barbecue Sauce
3 green onions, sliced

Steps:

1/2 tsp. onion powder
8 slices OSCAR MAYER Bacon, cut in half lengthwise, divided

Steps:

  • Heat grill for indirect grilling. Light one side of grill, leaving other side unlit. Close lid; heat grill to 425ºF.
  • Whisk eggs and milk in large bowl until blended. Add ground beef, stuffing mix, cheese, 1/4 cup barbecue sauce, garlic powder and onion powder; mix lightly. Shape into 8 balls, using about 1/2 cup meat mixture for each.

chopped fresh rosemary
1/2 lb sliced bacon
3/4 cup seasoned breadcrumbs
2 minced garlic cloves
2 lbs meatloaf mixture
1 egg
1 tablespoon Dijon mustard
1/2 cup ketchup
1 onion, finely chopped
chopped fresh parsley
1 dash Worcestershire sauce

Steps:

  • I start by sauteing my onion and garlic in a pan with some olive oil until soft.
  • I add the cooked onion and garlic to my meat mixture.
  • Mix everything in a bowl together except the bacon.
  • Don't over mix.
  • Now form your lovely packages into 5" long loaves. Cut bacon slices to drape over each loaf. About 4 half slices for each little mini meatloaf. Pack them tightly on the meat to keep them moist.
  • I bake them on a rack over a cookie sheet to catch the drippings. Less mess this way.
  • Bake at 350 degrees for about 35-45 minutes. Temperature should reach 160.
  • Let rest about 10 minutes on cutting board before slicing, otherwise the slices will fall apart. Let the juices redistribute and solidify.

1 small onion (minced, about 1 cup)
•2 cloves garlic (minced)
•1 teaspoonfresh thyme leaves (roughly chopped)
•1 poundground beef (80/20)
•1/2 poundground pork
•1/2 poundground veal
•3 tablespoonsWorcestershire sauce
•1 large egg (beaten)
•1 cupplain breadcrumbs
•1/4 cupfresh parsley (roughly chopped)
•18 slices bacon (1/4 of each piece trimmed off)
•olive oil
•kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 375ºF. Line a sheet tray with foil and spray it with cooking spray. 2 Place a sauté pan over medium heat and add a drizzle of olive oil. Add the onion and garlic with a pinch of salt. Cook, stirring occasionally for 3 minutes. Add the thyme and continue to stir and cook until the vegetables have softened, about 2 more minutes. Remove from heat and set aside to cool. 3 In a large mixing bowl, combine the beef, pork, veal, Worcestershire, egg, breadcrumbs and parsley. Repeat with the remaining meatloaves and bacon. 5 Bake meatloaves for 30-35 minutes, until the bacon has crisped and the meat is cooked through. (The internal temperature should be 155ºF.) Remove from the oven and let rest for 5 minutes before slicing and serving.
