Warm Pecan-crusted Goat Cheese Toasts with Mixed Baby Greens image

1 cup very finely chopped pecans
Coarse salt and freshly ground black pepper
1 (6-ounce) log fresh goat cheese
4 to 6 thick slices country bread
1/4 cup extra-virgin olive oil, plus more for drizzling
1 shallot, very finely chopped
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
4 to 6 cups mesclun greens (about 4 ounces)

Steps:

  • Preheat the broiler. Place the chopped pecans in a shallow dish and season with salt and pepper. Roll the goat cheese log in the pecans to coat evenly. Refrigerate until firm, if necessary, then cut into 4 to 6 uniform rounds.
  • To heat the goat cheese toasts, place the bread slices on a baking sheet and drizzle with some of the olive oil. Place a round of goat cheese atop a piece of bread. Broil until the cheese is melted and browned, 3 to 5 minutes.
  • Meanwhile, to make the dressing, whisk the shallot, mustard, and vinegar together in a small bowl. Add the remaining 1/4 cup oil in a slow steady stream, whisking constantly, until the dressing is creamy and emulsified. Season with salt and pepper.
  • To serve, toss the salad greens with just enough dressing to coat. Taste and adjust for seasoning with salt and pepper. Divide among serving plates and top each salad with a warm goat cheese toast.

1/2 cup balsamic vinegar
1/2 pint walnuts, for garnish
3 bunches assorted winter greens (such as Swiss chard, radicchio, or escarole), washed, stemmed, and torn into pieces
1 tablespoon grainy mustard
Extra-virgin olive oil
1/2 cup pomegranate seeds, for garnish
Parmesan shavings, for garnish
1 shallot, chopped, for garnish

Steps:

  • Cook honey and balsamic together over medium-high heat in a large saute pan, about 5 minutes. Toast walnuts in a small skillet; set aside to cool.
  • Pile greens on a platter. Stir mustard into balsamic-honey dressing, then whisk in about 1 cup extra-virgin olive oil; pour over greens. Season greens with salt and pepper and garnish with walnuts, pomegranate seeds, shavings of Parmesan, and shallot.

1/4 cup water
3 dried peach halves (about 2 ounces), coarsely chopped
1/2 cup toasted pecans
2 teaspoons Cajun seasoning
1 medium log fresh goat cheese (about 11 ounces)

Steps:

  • Warm the bourbon and water in a small saucepan, add the peaches, and set aside until plump, about 15 minutes.
  • Put the toasted pecans and Cajun seasoning in a mini chopper and pulse until the nuts are finely ground but not pasty. Spread the nut mixture on a large plate. Roll the goat cheese in the mixture, pressing firmly to coat the whole log generously.
  • Slice the cheese into rounds and arrange on a platter. Top with the chopped peaches and juices.

1 cup whole pecans
5 slices bacon
1/3 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon grade A pure maple syrup
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
6 cups sweet baby greens, such as chard, kale, spinach and romaine
4 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans on a small baking sheet and bake until brown and toasty-smelling, about 10 minutes.
  • Meanwhile, put the bacon in a medium skillet over medium heat and cook, turning once, until crisp, 4 to 5 minutes per side. Transfer to a paper-towel-lined plate. Put 1 teaspoon of the bacon drippings in a medium bowl. When the bacon is cool, crumble and set aside.
  • Whisk together the bacon drippings, olive oil, vinegar, maple syrup, mustard and salt and pepper.
  • Toss the greens with the goat cheese, pecans and bacon in a large serving bowl. Drizzle with the dressing, toss to coat, season with more pepper and serve.
