SUPER SMOKY BACON & TOMATO SPAGHETTI

Steps:
- Bring a large pan of water to the boil and cook the spaghetti following pack instructions. Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon for 3-4 mins until just starting to crisp. Stir in the onion and cook for another 3-4 mins, then add the garlic and smoked paprika, and cook for 1 min more.
- Pour in the chopped tomatoes, bring to the boil and bubble for about 5 mins until thickened, stirring every so often to stop it catching on the bottom. Drain the pasta and toss with the sauce. Serve with Parmesan, if you like.

- Cook spaghetti according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute tomatoes in drippings until tender. Drain spaghetti; stir into skillet. Add the spinach, bacon, vinaigrette, salt and pepper; heat through. Sprinkle with cheese.

- Drain, reserving 2 Tbsp (30 mL) drippings.
- Set bacon aside.
- Combine drippings and butter; set aside.
- In large saucepan, cook spaghetti according to package directions; drain; return to saucepan.

- Cook and stir over low heat until mixture is creamy and slightly thickened.

- Cook the spaghetti in a large pan of boiling salted water for 10 mins or according to packet instructions.
- Meanwhile, heat a non-stick frying pan and when hot, add the oil and bacon, then sauté for 3-4 mins, then add the mushrooms and cook for 5 mins or until the bacon and mushrooms are golden.
- Add the chopped tomatoes and chili and simmer over a high heat for 3-4 mins or until the sauce has reduced. Remove from the heat, stir in the sugar and season to taste.
- Drain the spaghetti in a colander and return to the pan, add the spaghetti to the sauce and toss well to mix. Finally add the parsley and serve.

Steps:
- In a large stock pot, fill with enough water to cover squash.
- Cook until done, about 25 minutes.
- Meanwhile, in large fry pan, fry bacon until crisp.
- Remove bacon and set aside.
- Drain all but 2 Tbsp of the drippings, and add the butter, when melted and garlic and sauté careful not to burn, set aside.
- When squash is cooked and cooled enough to handle.
- Cut the squash lengthwise and scrap another pan.
- Add butter mixture, eggs, cheese and parsley and give it a good toss.
- Stir over low heat until mixture is slightly thickened.
- Stir in tomatoes and bacon.
- Add salt and pepper to taste.
- Serve immediately sprinkled with Parmesan cheese.
