This is an easy, simple recipe that goes over well. You can make the filling ahead and scoop out the tomatoes well ahead of time but do not fill the tomatoes until just before serving. I like to add the lettuce to the filling just before filling the tomato however the original recipe said you can mix it in when you combine all the stuffing ingredients. Looks great on a buffet table

Yield 20 stuffed tomatoes

Number Of Ingredients 6

20 cherry tomatoes
1/4 cup chopped fresh chives or 1/4 cup green onion
10 slices bacon, fried crisp and crumbled
1/2 cup lettuce, very finely chopped
3 tablespoons mayonnaise
salt and pepper

Steps:

  • Cut the top off the tomatoes, scoop out the seeds& pulp. Use the seeds & puld in some other recipe.
  • Salt the inside of the tomato and put them upside down on a paper towel to drain for about15 minutes.
  • Meanwhile combine the bacon, chives, lettuce and Mayo, season with salt and pepper (remember that you have already salted the inside of the tomatoes).
  • Fill the tomatoes just before serving.

12 cherry tomatoes (about 1 pint), cut in half crosswise
1 (8-oz.) aerosol can bacon-cheese spread
1 tablespoon chopped fresh chives

Steps:

  • Gently squeeze tomato halves to remove juice and seeds. Pipe cheese spread on top of each tomato half. Sprinkle each with chives. Arrange on serving platter.

1 pint cherry tomatoes
5 slices bacon, cooked until crisp, then chopped finely
1 shallot, minced
1/4 cup minced, fresh flat-leaf parsley
1/3 cup finely shredded Parmigiano-Reggiano Cheese
1/3 cup mayonnaise
Freshly ground black pepper

Steps:

  • 1.Using a sharp paring knife, cut a small circle around the stem of each cherry tomato. Discard the core and, using the handle of a small spoon or the small scoop on a melon-baller, scoop out the seeds until the interior is hollow. Set tomatoes stem-side down on a double layer of paper towels and let drain for 1 hour. 2. Add bacon to a medium bowl, along with shallot, parsley, Parmesan and mayonnaise. Season generously with pepper and stir to combine. 3. Slice a thin sliver from the bottom of each tomato so it sits flat. Fill hollow with bacon mixture using a melon-baller or small spoon. Refrigerate at least 1 hour and up to 3 hours before serving.

16 to 20 cherry tomatoes
1/2 lb. bacon, cooked and crumbled
1/2 cup mayonnaise
1/3 cup chopped green onion
3 tablespoons grated Parmesan cheese
2 tablespoons fresh snipped parsley
dash of freshly ground black pepper

Steps:

  • Cut a thin slice off each tomato top. Scoop out and discard pulp and seeds. Invert the tomatoes on paper towels or clean kitchen towel to drain. In a small bowl, combine all remaining ingredients; mix well. Spoon mixture into tomatoes. Refrigerate for several hours.
