Best potatoes you will ever make, guaranteed! This recipe feeds a lot of people. I took it to a potluck and the pan came home licked clean, literally! People were going back for seconds and thirds and disappointed when it was all gone. This is a totally addictive potato recipe, you just can't stop eating them! It's a cinch to toss together and goes great with chicken, beef or pork, heck it would even make your sneakers taste good. Recipe can easily be halved to feed a family of four.

1 (32 ounce) package frozen hash brown potatoes, thawed
1 (16 ounce) container sour cream
8 slices cooked bacon, crumbled
1 (1 ounce) package ranch dressing mix
2 cups shredded Cheddar cheese, divided, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 13X9-inch baking pan with cooking spray or butter.
  • Combine hash browns, sour cream, bacon, ranch mix, and 1 cup Cheddar cheese in a large bowl; stir until well mixed. Spread into baking pan; cover with aluminum foil.

1/2 cup (1 stick) unsalted butter
1 cup warm milk
1/2 teaspoon garlic salt
1/2 teaspoon freshly ground black pepper

1 1/2 cups shredded cheddar cheese, divided
2 cups cooked, crumbled bacon pieces

Steps:

  • Boil cubed potatoes for 10 to 15 minutes, or until fork tender. Drain and place into bowl of stand mixer. Add butter, milk, garlic salt, pepper, ranch seasoning and 1/2 cup shredded cheese. Mix until just combined. Transfer potatoes to large Dutch oven or pot over medium heat. Top with remaining shredded cheese and close lid for 3 to 5 minutes to melt cheese. 4 medium sized potatoes, unpeeled and cut into cubes
1 large onion, thinly sliced
1/2 lb bacon
2 1/2 cups shredded cheddar cheese
3 ounces ranch dressing mix, dry packet
2 tablespoons butter
1/2 cup sliced green onion

Steps:

  • Cook the bacon until it is just done but not too crisp.
  • Line your slow cooker with aluminum foil. Leave enough to over hang so that you can wrap the potatoes on the top once in the slow cooker.
  • Spray the inside of the foil with cooking spray and layer half of the potatoes along the bottom. Next layer with half of the bacon, green onions, onion, ranch packet and top with cheese. Repeat the layers and top with cheese reserving ½ cup.
  • Cover the potatoes with remaining foil. This helps them to steam and cook perfectly. Cook on low for 4-6 hours in your slow cooker. Once finished, top with remaining ½ cup cheese and let melt on the top.

2 tablespoons ranch dressing mix

Steps:

  • Drain the beans and beans & potatoes in a colander then rinse under cold tap water; set aside to drain well. Cut up onion and garlic and set aside. Cook bacon; drain on paper towels then cut or tear into small pieces. Set aside. In a large, deep skillet melt the butter over medium heat. Add onion and sauté just until softened. Add garlic and cook for another minute. Increase heat to medium-high; add the beans and potatoes and let cook undisturbed for 3-4 minutes then use an egg turner or similar spatula to flip the mixture over so you don't wreck the beans and potatoes. Cook down until almost all the liquid is gone, flipping occasionally to prevent scorching. When liquid is almost out, sprinkle the dry Ranch mix and black pepper over the top and flip over a couple of times to combine. Just before beans are finished cooking, add the bacon (or you can wait until serving and use it to garnish the top). (I put half of it in the beans and garnished top with other half). Crumbled cooked bacon, for serving

1 clove garlic

1/3 cup buttermilk
2 tablespoons minced fresh chives
2 tablespoons minced fresh flat-leaf parsley leaves
1 teaspoon white wine vinegar

Steps:

  • Put the potatoes and 1/2 cup salt in a large saucepan. Cover by about 1 inch with cold water. Bring to a boil, lower the heat and simmer until the potatoes are fork tender, 5 to 8 minutes. 4 baking potato es (1-1/4 lb.)
1/2 cup KRAFT Ranch with Bacon Dressing
1/4 cup OSCAR MAYER Real Bacon Bits

Steps:

  • Prick potatoes with fork or sharp knife; place on microwaveable plate. Microwave on HIGH 8 min. or until tender.
  • Cut potatoes in half lengthwise, then crosswise, being careful not to cut all the way through to bottoms of potatoes. Squeeze potatoes from both ends to open. Lightly mash potatoes (in skins) with fork.
  • Drizzle 2 Tbsp. dressing over each potato; mix with fork. Sprinkle with bacon. Microwave 1 min. or until heated through.
