CHEDDAR AND BACON PINWHEELS

Steps:
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
- In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
- Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
- Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
- Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

- In a pan, cook bacon until crisp, then chop into small pieces.
- Discard excess fat (reserve approximately 2 tablespoons).
- In the same pan, sauté the onions in the reserved fat until they start to become translucent.
- Add the jalapeños. Cook until the onions start to caramelize and remove from heat.
- Preheat oven to 375°F (190°C) and cover a cookie sheet with parchment paper.
- In a large bowl, combine the cream cheese, bacon, cheddar, pepper, garlic powder, and jalapeño mixture. Stir until thoroughly incorporated.
- On a lightly floured surface, gently roll out the puff pastry until the surface is smooth and even.
- Spread the japapeño mixture on the pastry sheet, stopping 1 inch (2 ½ cm) from the top of the dough.
- Starting at the bottom, tightly roll upwards and pinch the top edge to seal into a log shape.
- Cut the roll every 1½ inches (3 ¾ cm). Place the pieces face-up, 2 inches (5 cm) apart on the baking sheet. Sprinkle the tops of the pastries with cheddar.

- In a large skillet cook bacon just until done but not crisp.
- Drain on paper towels.
- Score steak by making shallow cuts at 1-inch intervals diagonally across steak in a diamond pattern.
- Repeat on second side.
- Place steak between 2 pieces of plastic wrap.
- Working from the center to the edges, pound meat lightly with the flat side of a meat mallet to form a 12x8-inch rectangle; remove plastic wrap Sprinkle the 1/2 teaspoon lemon-pepper seasoning and 1/4 teaspoon salt over top.
- Arrange the bacon lengthwise on the steak.
- In a mixing bowl stir together the spinach, bread crumbs, thyme, 1/4 teaspoon lemon-pepper seasoning, and dash salt.

- Roll up meat from a short side.

CHICKEN PINWHEELS TOPPED WITH MANGO SALSA AND SERVED WITH SAUTEED ASPARAGUS SPEARS AND BACON CRUMBLES

- In a large pan, saute red peppers, green peppers, garlic, thyme, and rosemary until the vegetables begin to soften. Remove from the heat and allow to cool while you prepare the chicken. Pound the chicken breasts in between 2 pieces of plastic wrap until they are flattened. Place the sauteed vegetables in the center and roll the breast around them. Secure closed with a toothpick, if necessary.
- Heat a large saute pan over medium heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the stuffed chicken and cook until all sides are browned and the chicken is cooked through.
- Combine the mango, garlic, and the red onion and place in a medium-sized bowl. Add salt, lime juice, and corn syrup to the bowl and thoroughly combine. Serve the salsa over the sauteed chicken.
- In a medium saute pan, cook the bacon until it is crisp. Drain and crumble the pieces into a bowl. In a separate pan, saute asparagus with garlic until the asparagus is tender. Add crumbled bacon on top of the spears.

- Pound steak until it is uniformly 1/2 inch thick.
- Use meat tenderizer as directed on label.
- Cook bacon until almost done, but NOT CRISP.
- Sprinkle meat with pepper, garlic salt and kosher salt.
- Score steak diagonally making diamond shaped cuts.
- Turn steak, scored side down.
- Place bacon strips lengthwise on steak.
- Sprinkle with parsley.

BACON CHEDDAR RANCH PINWHEELS
I got this recipe from a good friend who was a Chief Cook in the Navy. I made these on 7 Mar 2022 and tested by the family, they were very well liked, and a lot of folks tried these. These are excellent pinwheels.

- Fry bacon until crisp, then drain on paper towels, then chop. I prepped the cheese and spring onion tops, then chopped the bacon.
- In a small mixing bowl, combine cream cheese and Ranch dressing. Mix until smooth.
- Stir in the Cheddar cheese, bacon, and chives.
- Spread a generous layer of filling over a tortilla. (I used 8 inch tortillas.)
- Roll tortilla tightly and stick a toothpick in it.
- Repeat rolling more tortillas to use all the filling. I used three 8 inch, which was perfect, using larger or smaller tortillas will determine how many you roll. Cover with foil or plastic wrap and place in the fridge to chill for 1-2 hours.
- When ready to serve, remove the toothpicks and using a very sharp knife, slice ¾ to 1 inch thick. Serve and enjoy as appetizers or as a light main dish.

Lay three slices of bacon side by side 6. Top with one slice flattened bread 7. Place @1 tsp of mixture atop bread and spread evenly 8. Roll up bacon/bread/mixture 9. Place three toothpicks in roll up (one for each bacon slice) 10. Slice in thirds 11. Continue until bread and bacon are used 12. Place each piece on an ungreased cookie sheet or baking pan 13. Bake for 30 minutes until bacon is somewhat crispy 14. Drain on paper towel and serve.
