Spicy Maple Bacon Peanut Brittle image

I wanted to come up with a "different" peanut brittle to give away for the holidays, and combined a few of my favorite things. Posting here for safekeeping!

8 slices bacon
1 1/2 cups sugar
1/2 cup pure maple syrup
2 1/2 cups unsalted dry roasted peanuts (if salted, reduce salt to 1/4 teaspoon)
8 tablespoons unsalted butter (one stick)
3/4 teaspoon Old Bay Seasoning
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 400 degrees.
  • Place bacon on a rack over a cookie sheet and cook until crispy, about 15 minutes. Reserve bacon fat. The recipe calls for 8 tablespoons of butter (fat) - replace as much of butter as you have bacon fat. Once bacon is done, drain on paper towels and chop into bits.
  • Place the sugar and maple syrup in a large, heavy saucepan over high heat and stir with a wooden spoon until sugar begins to melt. Lower the heat to medium-high and keep stirring just until the sugar is melted. Stop stirring and watch for it to turn a medium caramel color. About 10 minutes total.
  • Stir in peanuts, and then bacon fat and butter. Then add Old Bay, cayenne and dry mustard. Allow peanuts to cook for about two minutes, stirring constantly. Stir in the bacon.
  • Turn the mixture out onto a sheet pan lined with parchment paper, and spread it evenly to the desired thickness with a wooden spoon or stiff rubber spatula. Sprinkle salt on top, while brittle is still warm.
  • Allow to cool completely--at least one hour--then break the brittle into pieces and store in an airtight container at room temperature. If your brittle isn't brittle enough to break into pieces, pop it in the freezer for 10 to 15 minutes, until it hardens enough to snap easily.

Bacon Peanut Brittle image

Sweet and salty peanut brittle studded with crumbled bacon.

4 slices Bacon, Diced
2 cups Sugar
1 stick Unsalted Butter
½ cups Water
⅓ cups Light Corn Syrup
1-½ teaspoon Kosher Salt
½ teaspoons Baking Soda
2 cups Roasted, Unsalted Peanuts

Steps:

  • Place a small skillet over medium-high heat. Add the bacon and cook for 6 to 8 minutes or until golden and crispy. Remove bacon from the skillet and drain it on some paper towels and set aside.
  • Spray a large rimmed baking sheet and a metal spatula with nonstick cooking spray. Combine the sugar, butter, water and corn syrup in a large saucepan over high heat. Bring to a boil and cook for 10 to 12 minutes or until the mixture registers 325°F on a candy thermometer. Remove pan from the heat and whisk in the salt and baking soda. Stir in the peanuts and cooked bacon.
  • Working quickly, pour the brittle out onto the prepared baking sheet and, using the coated spatula, spread it out into an even 1/2-inch thick layer. Let it cool completely at room temperature before breaking into pieces.
