- Preheat the oven to 350 degrees F.
- Cook the bacon in a nonstick skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Reserve 1 tablespoon of the drippings.
- Mix together the cream cheese, Cheddar, sour cream, milk, vinegar, jalapenos, bacon and reserved drippings in a medium bowl. Spread the mixture in a baking dish and bake until golden and bubbly, about 30 minutes. Sprinkle with the scallions before serving.

- Heat oven to 350ºF.
- Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 2 tsp. drippings from skillet. Add potatoes, corn, onions, peppers and garlic to reserved drippings; cook 8 to 10 min. or until heated through, stirring occasionally.
- Reserve 2 Tbsp. bacon for later use. Stir remaining bacon into potato mixture; spoon into 9-inch pie plate. Top with cheese.
- Bake 12 to 15 min. or until heated through. Top with reserved bacon. Serve with chips.

- 1. Cook bacon in cast iron skillet until slightly crisp. Drain grease reserving 1 tsp. to grease skillet .
- 2. Crumble bacon. Combine corn, jalapeño, cream cheese, mozzarella, salt , cayenne, half bacon, and half basil into the bacon greased skillet.
- 3. Bake for 20 min on 400° Sprinkle with remaining bacon, and basil. Sprinkle with parmesan cheese. Serve with crackers or chips

- Spray slow cooker with cooking spray. Place cheeses, garlic, frozen corn, jalapeño chiles, and liquid from chiles in slow cooker. Cover and cook on Low heat setting 2 hours, stirring a couple of times during cooking.
- Stir in half of the chopped bacon. Transfer to serving bowl, and top with remaining bacon and scallions. Alternatively, you can serve this dip right out of the slow cooker.

BACON JALAPENO DIP
My friend Cheryl brought this easy, fun dip to a party with slices of baguette bread. It was so delicious and smelled wonderful; everyone was asking for the recipe. There are other recipes similar to this, sometimes called "Jalapeno Popper Dip", but I've never found one that turns out quite as well as this. Most don't include the garlic, which really makes the dish. Enjoy!

- Preheat oven to 350.
- Reserve 3 Tbs of bacon and sprinkle on top of dip before baking.
- Combine cream cheese, mayo, parmesan, and garlic and stir until smooth.
- Stir in jalapenos, green chilies and bacon.
- Spread dip into a 9″ pie plate or a small baking dish.
- Sprinkle with remaining bacon and sliced green onions (optional).
- Bake for 20-25 minutes or until dip is bubbly and golden brown at the edges.
BACON JALAPENO CHEESE DIP

- 1.In large saucepan set over medium heat, cook the bacon for 3-5 minutes, or until it's starting to crisp and has rendered out most of its fat. Add jalapenos, and continue cooking for another 2-3 minutes, or until the bacon is crisp and the jalapenos are softened. 2.Add flour and cook for 1 minute, stirring constantly. Slowly add the beer, whisking briskly to break up lumps, and bring to a simmer, stirring constantly. 3.Reduce heat to low. Add the cheddar cheese and cream cheese, and simmer for 3-5 minutes longer, stirring constantly, until the dip is thick and smooth and bubbling hot. 4.Serve the dip immediately, preferably in a warming crock or small fondue pot to keep it melty and warm.

- In a medium bowl, add cream cheese, mayonnaise, green chiles, red peppers, jalapeño peppers, bacon and 1/4 cup grated cheese; stir to combine.
- Transfer cream cheese mixture to a small baking dish and spread evenly with a spatula; set aside.

HOT JALAPENO BACON-SPINACH DIP
I saw this on the label of my Duke's mayo. I am posting it here for safekeeping. I have not tried it, I don't like very hot spicy foods. I have a friend who likes things the hotter the better, so I am sure she will like it :) I may try it with the jalapenos greatly reduced. Even people who make their own jalapeno popper dip ask for the recipe for this dip. I show them the recipe which reads like everyone elses. I actually use authentic Mexican cheeses but the recipe states cheddar, mozzarella and parmesan cheese.

- Preheat oven to 350.
- Combine all of the ingredients into a medium bowl. Stir well. Transfer to an oven proof dish. The size of the dish depends on how thick the dip is. A 12 inch dish will make your dip about an inch thick.
- Combine the topping ingredients and sprinkle all over the top of the dip.
- Bake the dip for 20-30 minutes or until bubbly and golden brown on top.
- Notes: If you like cilantro you can add a little bit of fresh chopped into dip. You can also add just a touch of cumin into the melted butter before stirring into the topping. Serve with chips, tortillas, pitas, or crackers.
