8 oz cream cheese, room temperature
1 cup shredded cheddar cheese
2 jalapeñoes, seeded, minced
1 pack bacon, cooked, crumbled
1 ½ cups yellow cornmeal
½ cup all purpose flour
3 teaspoons kosher salt
2 teaspoons freshly ground black pepper
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons sugar
½ teaspoon cayenne pepper
1 cup buttermilk
1 egg, beaten
1 yellow onion, grated
oil, to fry

Steps:

  • In a medium-sized bowl, add the cream cheese, cheddar cheese, jalapeños, and bacon, and use a hand mixer to blend until combined.
  • Using a teaspoon, scoop out the cream cheese mixture and roll into a ball. Place onto a parchment paper-lined sheet tray and freeze for 30 minutes.
  • In a bowl, add the cornmeal, flour, salt, pepper, baking powder, baking soda, sugar, and cayenne pepper, and whisk to combine.
  • In a separate bowl, add the buttermilk, egg, and onion, and stir until combined.
  • Slowly add the buttermilk mixture to the dry ingredients, whisking until just combined. Let rest at room temperature for 30 minutes.
  • Preheat a pot of oil to 350˚F (180˚C).
  • Dip the cream cheese balls into the batter, ensuring they are fully coated on all sides.
  • Add the hush puppies to the oil and fry until golden brown on all sides.
  • Transfer to a wire rack or paper towel lined-plate to drain.
  • Serve immediately.

The bacon must be cooked before they are assembled, but that's the only other bit of prep work. Keep them warm before serving, and make sure to offer plenty of good butter to gild them.

2 cups cornmeal
1 teaspoon baking powder
1 and 1/2 teaspoons baking soda
2 eggs
1 cup buttermilk, more if needed
2 tablespoons warm bacon fat (or melted and slightly cooled butter)
1 cup crab meat (about 1/2 pound)
8 pieces well-cooked bacon, chopped fine
Salt and pepper
Oil, for deep-frying
Butter, for serving

Steps:

  • Heat oven to 200 degrees. Cover a baking sheet with a double layer of paper towel. In a large bowl, combine cornmeal, baking powder and baking soda.
  • In a small bowl, whisk together eggs, buttermilk and bacon fat. Add to the cornmeal mixture and mix to combine. Stir in crab and bacon and season to taste. Allow to stand for 10 to 15 minutes while oil heats.
  • In a Dutch oven or other large pot, add enough oil to come to a depth of 3 inches. Heat over medium-high heat until oil is 350 to 360 degrees.
  • Form batter into golf ball-sized balls (if batter is too dry to cohere well, stir in a bit more buttermilk). Drop balls into hot oil 5 or 6 at a time and cook until golden brown, 2 to 3 minutes. As each batch is finished, place on baking sheet and put into the oven to keep warm. Serve accompanied by plenty of room-temperature butter.

1/4 cup sour cream
1/3 cup honey mustard
1 teaspoon lemon juice
Canola or vegetable oil, for frying
1 (8.5-ounce) box corn bread or muffin mix (recommended: Jiffy)
1/4 cup cornmeal
1/4 cup frozen chopped onions, thawed and drained
1 egg
1/2 cup sweet potato puree
1/4 cup cooked crumbled bacon (about 4 strips)

Steps:

  • For the dip: Combine the sour cream, honey mustard and lemon juice in a bowl and mix until well blended.
  • For the hushpuppies: Fill a medium heavy-bottomed pot with enough oil to come 1/3 of the way up the sides. Place over medium heat.
  • In a large bowl, mix together the corn bread mix, cornmeal, onions, eggs, sweet potato puree and bacon until well combined. When the oil reaches 350 degrees F, carefully drop the batter by the heaping tablespoonful into the oil using 2 spoons or a small ice cream scoop. Fry in batches until golden brown and cooked through, 3 to 4 minutes. Remove from the oil and drain on a tray lined with paper towels. Serve immediately with creamy honey mustard dip on the side.

1 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 cup KRAFT Grated Parmesan Cheese
1 cup buttermilk
2 eggs
1/2 cup OSCAR MAYER Real Bacon Bits
Hot oil for frying (about 3-1/2 cups)

Steps:

  • Mix cornmeal, flour, baking powder, baking soda and cheese in medium bowl. Add buttermilk, eggs and bacon bits; stir just until blended.
  • Heat oil in large saucepan to 375°F. Drop tablespoonfuls of batter, in batches, into hot oil; cook 2 to 3 min. or until browned on both sides. (Hush puppies will float to the top as they cook.) Remove hush puppies from oil with slotted spoon; drain on paper towels.
  • Place in shallow pan in warm oven to keep warm until ready to serve.

Number Of Ingredients 16

1 cup cornmeal
1/2 cup unbleached flour
1/2 cup cornflour (available at health food stores) or 1/2 cup masa harina (Mexican corn flour)
1 tablespoon baking powder
3/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried thyme, lightly crushed
1/4 teaspoon white pepper
1/4 teaspoon dried oregano leaves, lightly crushed
1/4 cup very finely chopped green onion (tops only)
1 1/2 teaspoons minced garlic
2 eggs, beaten
1 cup milk
2 tablespoons chicken fat or 2 tablespoons bacon drippings
peanut oil (for deep frying) or canola oil (for deep frying)

Steps:

  • Combine all dry ingredients in a large bowl, breaking up any lumps.
  • Stir in green onions and garlic, add eggs, and blend well.
  • In a small saucepan, bring milk and lard (or other fat) to a boil.
  • Remove from heat, and add to flour mixture, half at a time, stirring after each addition.
  • Refrigerate 1 hour.
  • In a large skillet or deep fryer, heat 4" oil to 350 degrees F.
  • Drop batter by tablespoonfuls into the hot oil.
  • Do not crowd.
  • Cook until dark golden brown and cooked through, about 1 minute on each side.
  • Drain on paper towels.

1 ¼ cups white cornmeal
½ cup all- purpose flour
1 tsp Kosher salt
1 tsp black pepper
2 tsp baking powder
1 cup buttermilk
1 egg, beaten
1 tsp garlic, minced
2 tbsp Texas Pete® Hot Sauce
1 cup Texas Pete® Medium Salsa, drained, pulsed in food processor
1 cup cheddar cheese, thick shred
½ cup bacon, cooked and crumbled
To taste Kosher salt for finishing

  • 1. Preheat fryer to 350°F or pour 4 inches of oil into a deep, heavy pot. Clip a candy thermometer on the side of the pot and bring to 350°F over medium-high heat. 2.
