Official Contest Entry: Simply Potatoes 5Fix. I'm always looking for a fun, new way to serve up breakfast and I just happen to be a lover of potatoes, bacon, eggs and cheese...enough said, right? These bacon, egg and cheese hashkets are a savory breakfast treat with a twist! Serve it up with some fruit on the side and you've got a perfect start to the day.

Steps:
- Pre-heat oven to 350 degrees.
- Heat small skillet on medium-high temperature.
- While skillet is heating up, slice bacon in half lengthwise and then dice into medium sized pieces.
- Place bacon in skillet and cook 5-7 minutes or until just crispy, set aside on plate lined with papertowel.
- Slice white and light green parts of scallions, set aside .
- Lightly beat eggs until just blended.
- Spray four cupcake holes with non-stick spray.
- Line each greased cupcake hole with enough hash browns to coat all sides.
- Sprinkle scallion and bacon evenly into each greased and lined cupcake hole.
- Pour egg mixture into each, filling the rest of the hash brown basket.
- Sprinkle the cheese evenly amongst each filled cupcake hole.
- Bake for 15-18 Minutes until cheese is slightly browned and just bubbling.
- Serve & Enjoy!

5-Ingredient Fix Contest Entry. This recipe is super simple, can be made ahead of time, and tastes great. I first tasted this at a pot-luck lunch at work years ago. Over the years I have added bacon and increased the cheese, making it even better than the original. Multi-purpose dish, can be used as a main dish or side dish. Can also be served at breakfast, brunch, lunch, or even dinner.

- Heat oven to 350°F Spray 11x7 glass baking dish with nonstick cooking spray. Add 1 bag Simply Potatoes hashbrowns. Next, layer crumbled bacon on top of potatoes. Crack eggs, 1 at a time and evenly spaced, across top of potatoes and bacon. Poke yokes with a fork. Spread 2 cups grated cheddar cheese evenly over top. Pour 1 1/2 cups half and half over casserole. Cover with foil and bake for 1 hour, remove foil and bake for additional 15 minutes or until cheese begins to bubble and turn lightly brown.
- Remove from oven, let sit for 5 minutes and serve.

- 1. To assemble, with the macaroni slightly warmed to a little higher than room temperature, mix in the crumbled bacon to the macaroni and cheese side dish. Then scoop a heaping tablespoon of macaroni and roll into a tightly packed ball. Place on a parchment-lined baking sheet. Once all the macaroni has been rolled, place in freezer for 20 minutes to firm up.
- 2. Preheat oven to 425ºF. Place a baking rack on a baking sheet and coat the rack with non-stick cooking spray. Place flour and a pinch of salt in a small bowl. Place eggs and the yolks in a second bowl and beat them until uniform in color, and put the panko breadcrumbs in a third bowl. Dip macaroni balls in the flour, shaking off excess flour, then dip into eggs and then the panko mixture, patting crumbs to adhere. Place on baking rack and bake 15 minutes until golden brown. If desired, serve with marinara sauce for dipping. Serve immediately.
- Yield: 45-40 macaroni and cheese balls depending on how big you make them.

- Boil four of the eggs for five minutes at a rolling boil then take off the heat and rinse with cold water then peel.
- Grate the onion with a cheese grater.
- In a mixing bowl mix together the Potatoes, sausage, onion and one egg.
- Divide the mixture into four parts and one at a time flatten out 1/4 of the mixture onto the palm of your hand, place the egg in the middle and wrap the mixture completely around the egg.
- Roll the eggs in bread crumbs for a light coating and then place them on a baking sheet.
- Bake at 425 degrees Fahrenheit for 20 minutes and enjoy!

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towel to drain. , In a large bowl, beat eggs. - Heat oven to 375 degrees F. Generously coat 2 6-compartment non-stick muffin tins with cooking spray. Set aside.
- In a large bowl, combine the potatoes, egg and flour, adding just enough flour so mixture "sticks together". Divide evenly among the prepared muffin compartments. Using the back of a spoon, firmly press potato mixture into bottom and up sides of each compartment, making a "well" in each.
- Place in oven and bake for 20-25 minutes or until just starting to brown. Remove from oven and divide shredded cheese evenly among cups and top each with crumbled bacon. Return to oven and bake another 5-10 minutes or until "baskets" are golden brown and cheese and bacon is hot, melted and bubbly.
- Remove from oven and let rest for 5 minutes. To serve: gently run the tip of a sharp knife blade around rim of each cup to loosen. Release each basket and place on serving platter.
