BACON CHILI CHEESEBURGER MEATLOAF

1 (12 ounce) package center-cut smoked bacon, diced
1 sweet onion (such as Vidalia®), chopped
½ cup ketchup
2 tablespoons chili powder
2 tablespoons ancho chile powder
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 teaspoon garlic powder
2 pounds ground sirloin
4 ounces shredded extra-sharp Cheddar cheese
4 ounces shredded pepper jack cheese
2 eggs, beaten
1 cup bread crumbs
1 serving cooking spray
½ cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1 teaspoon ground ancho chile pepper

Steps:

  • Cook and stir bacon in a large skillet over medium heat until bacon is translucent and beginning to brown, about 5 minutes; stir in onion and continue cooking and stirring until bacon is browned and sweet onion is translucent, about 5 more minutes.
  • Mix 1/2 cup ketchup, 2 tablespoons chili powder, 2 tablespoons ancho chile powder, 1 tablespoon Worcestershire sauce, cumin, salt, black pepper, and garlic powder in a large bowl. Mix in ground sirloin, bacon-onion mixture, Cheddar cheese, pepper jack cheese, eggs, and bread crumbs until thoroughly combined. Form the mixture into a loaf shape and refrigerate 1 hour.
  • Preheat oven to 425 degrees F (220 degrees C). Line a 9x13-inch baking pan with aluminum foil and spray the foil with cooking spray.
  • Place loaf into the prepared baking dish. Mix 1/2 cup ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon chili powder, and 1 teaspoon ground ancho chile in a bowl. Spread the mixture over the loaf.
  • Bake in the preheated oven until the loaf is no longer pink inside and the juices run clear, 1 hour and 5 minutes to 1 hour and 15 minutes. An instant-read meat thermometer inserted into the center of the loaf should read at least 160 degrees F (70 degrees C).

 1 tbsp olive oil
 1 lb. ground beef
 ½ lb. crispy bacon pieces
 ½ diced red onion
 1 cup sliced mushrooms
 1 pkg. chili seasoning
 1 cup of beef stock
 4 cups cooked macaroni noodles
 1 ½ cups shredded tex-mex cheese

Steps:

  • Preheat broiler to 350F Sauté onion and mushroom for 3 minutes in olive oil. Then add beef. Once beef is fully cooked, combine beef stock and chili seasoning and then pour over meat. Simmer for 10 minutes then add noodles to meat and toss. Pour meat/noodle mix into a casserole dish. Sprinkle bacon pieces over top and then sprinkle cheese over that. Number Of Ingredients 21

6 slices center cut bacon, diced and uncooked
1 lb extra lean ground beef, raw
1 large green pepper, chopped
1 large yellow onion, chopped
4-5 garlic cloves, minced or pressed
1 tsp cumin
1 tsp smoked paprika
3 tbsp chili powder ((I use McCormick. Make sure you use a chili powder that you know and love. Some chili powders can be super spicy!) )
¼ cup reduced sugar ketchup
2 tbsp Worcestershire Sauce
3 tbsp dill pickle relish, not sweet relish
2 tbsp yellow mustard
1-½ cups low sodium beef broth
1 14.5 oz can fire roasted diced tomatoes ((can also used petite diced tomatoes or crushed tomatoes))
2 cups pinto beans, canned, drained, but not rinsed.
kosher salt & pepper, (to taste)
Frank's hot sauce (to taste, I use about a tablespoon)
extra cooked bacon, crumbled
diced green onions, red onions, or jalapenos
crispy onions toasted in a pan with cooking spray ((i use french's brand))
cheese ((i use reduced fat shredded colby jack or shard cheddar) )

Steps:

  • In a large pot or dutch oven over medium heat add center cut bacon and cook until crispy. Drain extra grease. Add in ground beef and break apart with spatula and cook until mostly done. Add in green peppers, onions, and garlic sprinkle with a pinch or two of salt. Stir all together and cook until veggies are softened. Stir in cumin, chili powder, and paprika. Cook for another minute.
  • Throw in ketchup, mustard, dill relish, worcestershire sauce. Stir until combined then add in tomatoes, beef broth, and pinto beans. Stir together well. Mash tomatoes if you want them blended more. Reduced heat to medium low and cook, partially covered, for about 20-25 minutes. Chili will thicken during this time. If you like a little more liquid in your chili feel free to add a bit more broth. Enjoy!As with most chili, this stuff tastes better the next day so this would be a perfect meal prep option!
  • Optional: Add cheese, a little extra crumbled bacon, onions, and crispy onions.
