3/4 pound lean ground beef (90% lean)
4-1/2 teaspoons cream cheese, softened
3 tablespoons crumbled blue cheese
3 tablespoons bacon bits
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/2 pound sliced fresh mushrooms
1-1/2 teaspoons olive oil
1-1/2 teaspoons water
1-1/2 teaspoons Dijon mustard
2 whole wheat hamburger buns, split
2 tablespoons mayonnaise
2 romaine leaves
4 tomato slices

Steps:

  • Shape beef into four thin patties. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of two patties. Top with remaining patties and press edges firmly to seal. Combine the salt, garlic powder and pepper; sprinkle over patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. , Meanwhile, in a large skillet, saute mushrooms in oil until tender. 1 lb lean ground turkey
1/2 teaspoon kosher salt
2 -3 garlic cloves, grated
8 slices hickory smoked pepper bacon or 8 slices regular smoked bacon
2 -4 tablespoons crumbled blue cheese
4 large hamburger buns, toasted (flour or whole wheat)
4 tablespoons mayonnaise
lettuce
sliced onion
1 large tomatoes, sliced
fresh ground black pepper

Steps:

  • Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium high heat, until evenly browned. Drain bacon pieces and discard fat. Set bacon aside.
  • In a medium mixing bowl, combine turkey, salt and garlic.
  • Divide turkey into 8 equal pieces and form into thin patties.
  • Layer four of the patties with blue cheese crumbles and bacon. Top with another turkey patty.
  • Press patties together firmly but gently. Be sure to seal the edges of the patties together to avoid burgers falling apart during cooking.
  • Cook burgers on a grill skillet, or grill pan until nicely browned and have reached a minimum internal temperature of 165°F Allow burgers to rest for about 5 minutes.

olive oil, to season your grill or skillet
8 slices apple-smoked bacon
2 lbs ground chuck
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 teaspoons dried thyme
1 teaspoon crumbled dried sage
1/2 cup crumbled blue cheese
1 fuji apple
4 sesame seed rolls, split and toasted

Steps:

  • Wipe the grate of your grill or your skillet with olive oil before heating over a medium-high flame.
  • Cook the bacon in a dry skillet over medium heat; when done to your like, place on paper towels to drain and set aside.
  • In a medium bowl, combine the ground beef, salt, pepper, thyme and sage; mix well using your hands and form into 8 thin patties; form small craters in the center of half of the patties, leaving an edge of about a quarter inch all the way around and place a scant 2 tablespoons of blue cheese in the center; top each with another patty, pinching the seams together, making sure the stuffing is completely covered.

2 ounces blue cheese, crumbled
4 bacon slices, cooked until crispy and crumbled

9 tablespoons Dijon mustard

Steps:

  • In a large, heavy frying pan over medium heat, warm olive oil. Add onions, cover and cook, stirring occasionally, until they are completely limp, 10-15 minutes. Uncover the pan, reduce heat to medium low and cook, stirring frequently, until the onions are golden brown and sweet, 35-45 minutes; do not allow them to burn. Remove the pan from heat and let the carmelized onions cool to room temperature. In a small bowl, stir together blue cheese and bacon. Set aside.
