ROASTED GARLIC AND PARMESAN BAKED HALIBUT

Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

1 garlic head
1/2 tablespoon olive oil
1 tablespoon unsalted butter
1 pound halibut, skin removed, in 4 even fillets
Kosher salt, as needed
Freshly ground black pepper, as needed
1/2 cup mayonnaise
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 375˚F.
  • Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
  • Raise the oven temperature to 425˚F.
  • Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
  • While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
  • Remove and serve immediately.

1/4 lb blue cheese, crumbles
1/2 quart buttermilk
1 1/2 cups mayonnaise
1 cup water
1/2 teaspoon black pepper
1 teaspoon garlic, crushed
1/2 teaspoon white pepper
2 lbs halibut, cut into 5 oz. pieces
1 red onion, sliced
blue cheese, crumbles

Steps:

  • Mix all dressing ingredients, add water to thin if needed.
  • Chill (or use prepared blue cheese dressing of your choice).
  • Preheat oven to 350 degrees.
  • In a large baking dish layer a thin amount of the blue cheese dressing.
  • Lay fish on top and add another layer of dressing on top.
  • Cover with sliced red onion and blue cheese crumbles.
  • bake 30 minutes or until the halibut flakes.

1 cup shredded Cheddar cheese
½ cup mayonnaise
½ cup sour cream
2 tablespoons all-purpose flour
1 ½ teaspoons lemon juice
1 tablespoon diced onion
⅛ teaspoon ground cayenne pepper
2 pounds halibut steaks

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a medium baking dish.
  • In a bowl, mix the Cheddar cheese, mayonnaise, sour cream, flour, lemon juice, onion, and cayenne pepper.
  • Arrange the halibut steaks in the prepared baking dish, and cover with the Cheddar cheese mixture.
  • Bake 10 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue baking 15 minutes, or until fish is easily flaked with a fork.

My best friend that lives in Alaska gave me this recipe. She owns her own restaurant and makes her own sourdough bread.

halibut ( i buy halibut with the skin on)
lemon juice
2 Tbsp butter
1/2 c white wine
2 Tbsp mayo
2 dash(es) garlic salt
2 dash(es) garlic powder
1 pinch parsley
1/2 c parmesan cheese

Steps:

  • 1. The ingredients do not have to be perfect in this recipe. The mayo, Parmesan cheese, garlic salt, garlic powder and parsley are mixed together just to coat the top of the Halibut.
  • 2. Heat oven to 400. Put glass dish with a couple tablespoons of butter in the oven until the butter is melted.
  • 3. Put the fish fillets, skin side down on the hot butter. Sprinkle a little lemon juice over the fish. Sprinkle a little white wine over the fish.
  • 4. Mix together mayo (just enough to make it spreadable ), Parmesan cheese, garlic salt, garlic powder and parsley and spread over fish fillets.
  • 5. Bake until fish is done and topping is golden (15 minutes-ish).

BLUE CHEESE BAKED HALIBUT

This is a super easy and uber delicious way to prepare fish. The recipe calls for halibut but other white fishes will do. Enjoy!

1 1/2 lbs halibut fillets (thawed if frozen)
1/2 cup mayonnaise
1/2 cup blue cheese dressing (The light version works just as well)
1/2 cup parmesan cheese
1/4 cup chives or 1/4 cup green onion

Steps:

  • 1.Combine mayo, dressing, parmesan cheese and chives in a bowl.
  • 2. Place halibut in baking dish (something with a rim so sauce won't flow off the edge). Smother the halibut with the sauce and top with any remaining amount.
  • 3. Bake the halibut at 325 for about 35 minutes or until fish is flaky but not dry (this is for relatively thick pieces of fish).
