Helen Henderson, the chef, says that to satisfy any potato loving Swede's craving for pasta salad, you should add angel-hair pasta tossed with olive oil, salt and pepper. I say this looks good enough to eat on its own and the olives and tomatoes look too good to leave out. I reduced the olive oil to 1 tablespoon from 3 and guessed on the cook time. If you don't have access to a grill I think you could grill in a non-stick frying pan with a small amount of olive oil. From The Swedish Table.

2 quarts water, salted
2 lbs baby new potatoes, assorted, such as Peruvian blue, fingerling, red bliss (about 25-30)
1 lb French style green bean, trimmed (thin)
olive oil flavored cooking spray
1 garlic clove, peeled and minced
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
1/2 cup fresh parsley, chopped (flat-leaf)
1 tablespoon of fresh mint, chopped
1 tablespoon extra virgin olive oil
salt and pepper
1 cup kalamata olive, pitted, herbed (optional)
1 pint cherry tomatoes, halved (optional)

Steps:

  • In large saucepan bring salted water to a boil. Add potatoes and cook until just soft, about 3-5 minutes. Drain in colander and let dry on paper towels.
  • While potatoes are boiling bring a small pot of water to a boil. Cook beans until just done but still crisp, about 4-5 minutes. Drain immediately and rinse in cold water. Set aside.
  • Light an outdoor grill or a stovetop grill pan. Cut cooked potatoes in half or, if tiny, leave whole. Spray cut side with olive oil and grill cut side down until marks appear.
  • Meanwhile, prepare dressing by mixing garlic, mustard, vinegar, parsley and mint in a small bowl. Slowly whisk in olive oil. When potatoes are grilled but still hot, toss in dressing and season to taste with salt and pepper. Add green beans and olives and tomatoes, if desired, and mix well. Serve at room temperature.

6 cups baby greens
1/4 red onion, sliced thinly
1/4 cup blue cheese, crumbled
1/4 cup pecans, toasted
1 (310 ml) jar orange jelly (I prefer Smuckers no Sugar Added Orange Spread)
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
3/4 teaspoon fresh ground pepper
1/2 cup olive oil
1/2-3/4 cup water

Steps:

  • Combine salad greens, onions and desired amount of vinaigrette in a medium sized bowl. Arrange on serving platter and garnish with blue cheese and pecans. Serve immediately.
  • ORANGE VINAIGRETTE: Combine first 4 ingredients in medium-sized bowl. Gradually whisk in olive oil, then 1/2 cup water. Continue whisking until smoothly blended. Add additional 1/4 cup water if a thinner consistency is desired.

2 lbs baby yukon gold potatoes
12 ounces fresh green beans (I use bagged pre-nipped from the produce case)
2 tablespoons Dijon mustard
1/2 cup bottled italian or red wine and vinegar salad dressing (Preferably 7 Seas or what you like)
1 minced shallots or 1 very small yellow onion
1/2 teaspoon italian seasoning
1/2 teaspoon tarragon
bacon, crumbles (to garnish, crisp)

Steps:

  • Halve or quarter potatoes depending on size.
  • Steam Potatoes for about 15 minutes until tender.
  • Steam green beans until crisp-tender (4-5 minutes).
  • Shock green beans in ice water to stop cooking process.
  • Whisk Mustard, dressing, herbs and shallot in small bowl.
  • In large bowl toss potatoes, green beans and dressing.
  • Top with bacon crumbles (if using).
  • Serve & enjoy.

1/2 cup fresh flat-leaf parsley, chopped
1 Tbs fresh mint, chopped
3 Tbs extra virgin olive oil
salt and pepper to taste
1 cup pitted, herbed Kalamata olives (optional)
1 pint cherry tomatoes, halved (optional)

Steps:

1 cup French green lentils (ideally "de Puy" variety)
1 bay leaf
a few springs of fresh thyme or 1/2 teaspoon dry
1 tablespoon red wine or sherry vinegar
1/4 cup extra-virgin olive oil
1/8 teaspoon Dijon mustard
1 small shallot, peeled and minced
2 ounces goat cheese, crumbled
2 ounces fresh baby spinach leaves

Steps:

  • 1. Rinse the lentils then add them to a small pot with the bay leave and thyme. Cover with water by a few inches and bring to a boil. Season with a pinch of salt, then turn down heat and simmer until tender but not overcooked, about 30 minutes. 2. In the meantime, combine the shallot, mustard, and vinegar in a bowl or small glass jar. Season with a little salt and pepper, then allow to sit for a few minutes to soften the shallot. Add the oil in a slow stream, whisking to create a vinaigrette (or cover the jar and shake until emulsified). 3. When the lentils are cooked, drain and return to the pot. Toss immediately with the vinaigrette. Add the baby spinach just before turning out into plates, so it only just begins to wilt. Top with the goat cheese and freshly ground black pepper and serve warm.

This is a recipe I got from the River Valley Ranch mushroom growers who sell mushrooms at my farmer's market every Sunday from June till October. I love this recipe, it goes great as a side dish to just about anything I barbecue during the summer.

1 lb fresh green beans, trimmed, cut in half
3 garlic cloves, minced
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon coarse salt (I used kosher salt)
fresh ground black pepper, to taste
1/4 cup olive oil
4 green onions, chopped
1/2 lb baby portabella mushrooms, thinly sliced
2 tablespoons chopped fresh parsley

Steps:

  • Heat salted water in a large saucepan until boiling; cook the beans until tender, about 7 minutes. Drain beans; set aside to cool.
  • Whisk together the garlic, vinegar, mustard, salt and pepper to taste in a small bowl; slowly whisk in the olive oil, adding in a steady stream, until smooth.
  • Combine the reserved beans, green onions, mushrooms and parsley in a large bowl. Pour dressing over vegetables; toss lightly.
  • Chill 30 minutes before serving.

4 baby beets, roasted and split in half
4 baby golden beets, roasted and split in half
4 cipolini onions, roasted and peeled
4 large baby carrots, roasted and split in half
4 American red radishes, roasted and split I half
2 tablespoons beet syrup
2 tablespoons aged balsamic vinegar
2 tablespoons extra virgin olive oil
Salt and pepper, to taste
8 cups small mixed salad greens

Steps:

  • Arrange the vegetables to circle the centers of 4 chilled plates. Drizzle the beet syrup to the inside of the vegetables. Whisk the oil and vinegar in a medium mixing bowl. Season to taste with salt and pepper. Toss in the mixed salad greens. Divide the salad in the center of the 4 plates.
