AWESOME BURGERS
With the warm weather coming I was searching for a different burger recipe. I first thought this sounded really odd with rolled oats in the ingredients but combining it with milk makes for a moist pattie with a great texture. I made a few small changes to a recipe I found in the cookbook All Fired Up

Steps:
- In bowl combine ingredients.
- Shape into 4 equal burgers, putting finger indentation almost through burger in the middle of each pattie-Do not over handle meat- usually meat is done when the indentation in center is filled in.
- Place on preheated grill and cook about 5 min.

- Garnish as desired.

- 1. PREP/PREPARE
- 2. You will need a blender, or food processor fitted with an S-Blade to make this recipe.
- 3. The beans are an important element in the flavor of these burgers. I make my own (I will share the recipe in a bit); however, when it comes to canned beans, some of my absolute favorite ones are Bush's Baked Beans. Those folks know how to make 'em tasty. - 4. Gather your ingredients (mise en place).
- 5. Cook the rice according to package directions, and then allow to cool.
- 6. Add the beans to a large bowl, and crush with a fork. Do not turn them into mush... leave some bits.
- 7. Place the sunflower seeds into a blender/food processor, and blend until fine, but do not blend to the point that it becomes a paste. Trust me, it does not take long for that to happen.
- 8. Add the remaining ingredients, but not the rice, and use one-second pulses until everything is nicely combined.
- 9. Add the blended ingredients, along with the rice into the large bowl with the beans, and mix with wet hands until combined, then shape into burger patties.
- 10. If you are making sliders, you will probably get about 20; if you are doing full-size patties, you will probably get about 8.
- 11. You can stick these into a 370f (188c) oven until they begin to brown, about 12 - 14 minutes, or you could fry them up in a pan with a bit of oil.
- 12. PLATE/PRESENT
- 13. Mix the dressing together, if using, and spread it over the burger before serving. Enjoy.
- 14. Keep the faith, and keep cooking.
AWESOME STUFFED GRILLED BURGERS - EASY
This is a great Labor Day, 4th of July, or Family BBQ burger recipe. It is very easy and can be done on the Grill or a good size Foreman. Jut make sure you make the burgers thin and wide enough because of the shrinkage that happens when being cooked.

A great recipe from the Splendid Table. Not your typical dry, flavorless turkey burger. These are moist and full of flavor! Recipe doubles easily and they are great on the grill! We like to serve them with sweet potato fries.

- Put 2 tablespoons of the olive oil in a 10-inch nonstick skillet and heat over high. Add onions and tomatoes with generous sprinkles of salt and pepper. Sauté over high, stirring frequently, until onions begin to brown.
- Add garlic and cook until onions are wilted and soft. Remove from heat. Set aside half the onion mixture for topping burgers.
- Blend ground turkey with remaining onion mixture, 1/4 teaspoon salt and 1/8 teaspoon pepper. Shape into 2 balls.
- Make a deep hole with your thumb and insert half of the cheese into each ball. Pinch hole closed and flatten ball into 3/4- to 1-inch thick patties with no sign of cheese on the outside. Patties will be very soft and sticky.
- Heat remaining 2 tablespoons olive oil in a 10-inch nonstick skillet over medium high. Sear burgers about 30 seconds on each side until browned.
- Lower heat to medium-low and cook about 5 minutes per side, or until there is no pink at center of burger and an instant-read thermometer measures at least 150 degrees
- These burgers can also be grilled if you prefer.
- Serve hot on buns, topping with reserved onions and your favorite condiments.
AWESOME MUSHROOM BURGERS AND GRAVY
A wonderful main dish using fortune cookies that can be bought in most stores or picked up at any Chinese restaurant for a small amount of money.

- 1. Mix the ground beef, ground fortune cookies, two tablespoons of the onion soup mix, salt, pepper and egg in a large bowl. Set aside remaining soup mix for later use in gravy. Form this mix into 8 hamburger patties.
- 2. Cook hamburger patties in a skillet over medium heat until done...about 4 to 5 minutes per side. Set aside to rest.
- 3. In a small pan or skillet, combine the remaining onion soup mix, garlic, Worcestershire sauce and flour. Drain the mushroom juice from the can into a measuring cup and add the mushrooms to the pan. Add enough water to the mushroom juice to make 1 and 3/4 cups of liquid. Add to the pan. Bring to a boil while stirring. Lower the heat to medium and stir until thickened. Add heavy cream, salt and pepper to taste and re-thicken by cooking slightly longer.
- 4. Pour gravy over burgers and mashed potatoes and serve with a vegetable.
AWESOME TURKEY BURGERS

- Preheat the grill or broiler. Combine all ingredients and mix well by hand. Either divide mixture into patties or use a hamburger press. Grill until cooked through, 7 to 10 minutes per side.

- 1. Make sauce : Whisk all sauce ingredients until smooth. Cover & refrigerate until ready to use.
- 2. In a food processor, add chicken breast and pulse until chicken is ground. ( Or can buy already ground chicken. ) Place in a small bowl. Shred carrots, green onion and garlic in food processor. Add to chicken. Next, add the ginger, soy, sesame oil, ginger, vinegar and mix until well blended.
- 3. The chicken burgers can either be grilled or broiled. If grilling you will need a grill pan as it is a loose mixture. Spray the grill pan, divide meat mixture in half, shape patties once on the pan. Salt and pepper. Place on rack over medium heat on grill and cook for 6 minutes, then flip to other side and cook another 6 minutes or until juices run clear.
- 4. I broiled mine today. Spray broiler pan with non stick cooking spray and divide meat mixture in half and pat out meat mixture in the shape of a patty once on pan. Salt & pepper. Place rack in oven about 4 - 6 inches below heat. Cook for 6 - 8 minutes on one side and flip to the other and finish cooking until juices run clear.
- 5. Butter your bread or bun and toast either on grill or in broiler - I toasted mine right beside the patties. Spread sauce on bottom and top pieces of bread or bun. Add desired condiments. Enjoy! So good!

This is a slight variation on a Rachael Ray recipe. We love it! And don't be scared...it doesn't taste like turkey, and isn't spicey - despite the ingredients.

- Lightly toss together.
- Form into 6 rounded patties.
- Put into freezer for 1/2 hour.
- Grill (or pan fry) for 10-13 minutes, turning when needed.

- Split onion rolls and place on grill for about 2-3 minutes.
- Take buns off the grill. Top with your faviorite toppings. I used lettuce, tomato, mayo & mustard.

- 1. Fry bacon. 2. Sautee onions, garlic, S&P, Italian seasoning,W'chester, in left over bacon grease. 3. Then blend into the burger and pork. Roll into balls. 4. REALLY AWESOME BLACK BEAN BURGERS
[Photographs: J. Kenji Lopez-Alt] These black bean burgers have a complex, satisfying flavor and robustly meaty texture that even devout carnivores will love (seriously, try them with bacon on top). The mixture comes together in just 25 minutes and can be used to make patties for cooking either on the backyard grill or indoors in a skillet. Unlike regular burgers, which do best when cooked over extremely high heat, these black bean burgers require a moderate heat so that they can cook through and firm up before the exterior burns. Why this recipe works: * Partially dehydrating canned black beans in the oven solves the problem of mushy texture that plagues most black bean burgers. * Crumbled feta cheese adds moisture and seasoning right into each patty. * Sautéed onions, poblano peppers, and garlic with just a touch of smoky chipotle pepper add depth to the patties without dominating. * Hearty chopped cashews add textural variation, while Japanese panko-style bread crumbs help bind the patties without turning them mushy. Note: Patty mixture can be made through step 4 and stored in a sealed container in the refrigerator for up to 3 days before forming patties and cooking as desired. To freeze, place formed patties on a parchment-lined baking sheet and place in freezer until fully frozen, about 1 hour. Remove from freezer and cut parchment around each burger. Stack frozen burgers with the parchment in between each layer. Transfer to a zipper-lock freezer bag and freeze for up to 3 months. To cook frozen burgers, break apart and spread in a single layer on a baking sheet or cutting board and allow to thaw at room temperature for 1 hour before cooking as directed.

- 1 Adjust oven rack to center position and preheat oven to 350°F. Spread black beans in a single layer on a foil-lined rimmed baking sheet. Place in oven and roast until beans are mostly split open and outer skins are beginning to get crunchy, about 20 minutes. Remove from oven and allow to cool slightly.
- While beans roast, heat 2 tablespoons oil in a medium skillet over medium-high heat until shimmering. Add onion and poblano and cook, stirring frequently, until softened, about 5 minutes. Add garlic and cook, stirring constantly, until fragrant, about 2 minutes. Add chipotle chili and sauce and cook, stirring, until fragrant, about 30 seconds. Transfer mixture to a large bowl.
- Place cashews in the bowl of a food processor and pulse until chopped into pieces no larger than 1/3-inch, about 12 short pulses. Add to bowl with onions and peppers.
- When beans are slightly cooled, transfer to food processor. Add cheese. Pulse until beans are roughly chopped (the largest pieces should be about 1/3 of a full bean in size). Transfer to bowl with onion/pepper mixture. Add mayonnaise, egg, and bread crumbs and season with salt and pepper. Fold together gently but thoroughly with hands. Patty mixture can be stored in an airtight container in the refrigerator for up to three days at this stage.
- To cook on the grill: Light 2/3 chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the medium-high setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate. Form bean mixture into 6 to 8 patties as wide as your burger buns and brush top sides with oil. Place on hot side of grill oiled-side down and cook without moving until first side is well browned, 3 to 5 minutes. Brush tops of burgers with oil. Carefully flip and continue cooking until second side is browned, 3 to 5 minutes longer, topping with cheese if desired.
- To cook indoors: Form bean mixture into 6 to 8 patties as wide as your burger buns. Heat 1 tablespoon oil in a large non-stick or cast iron skillet over medium heat until shimmering. Add 4 patties and cook, swirling pan occasionally, until well browned and crisp on first side, about 5 minutes. Carefully flip and cook until second side is browned, about 5 minutes longer, adding cheese if desired. If cooking more than 4 burgers, cook in batches, keeping cooked burgers on a rack set in a rimmed baking sheet in a 200°F oven while second batch cooks.
- Spread top and bottom buns with chipotle mayonnaise or other condiments as desired. Add toppings to top or bottom bun as desired. Place patties on bottom buns, close burgers, and serve immediately.
