1 stick butter
1 cup heavy cream
Salt and freshly ground black pepper
2 cups freshly grated Parmesan
Pasta cooking water, as needed

Steps:

  • In a saucepan or skillet, warm the butter and cream. Season with salt and pepper. Add the Parmesan and stir until melted.
  • Toss to combine, thinning with pasta water if necessary.

¼ cup butter, or more to taste
1 clove garlic, minced
¼ cup all-purpose flour
2 tablespoons grated Parmesan cheese (such as Kraft®)
2 cups milk
1 ½ teaspoons Italian seasoning
1 teaspoon salt, or to taste
1 pinch ground black pepper

Steps:

  • Melt butter in a large saucepan over medium-high heat; saute garlic until golden, 2 to 3 minutes. Lower heat to medium and gradually stir flour into garlic-butter mixture until dissolved and smooth, 3 to 5 minutes.
  • Gradually stir Parmesan cheese into garlic-flour mixture until cheese is melted and mixture is thickened, 2 to 3 minutes. Slowly pour milk into cheese mixture, stirring constantly, until smooth, about 5 minutes; season with Italian seasoning, salt, and pepper. Cook and stir until sauce reaches desired consistency, 5 to 10 minutes.

Alfredo de Lello, a Roman restaurateur, created this rich, silky sauce, which is meant to be tossed with fettuccine, but it can also be used in many other ways: Drizzle it over seared chicken breasts, simmered beans or roasted vegetables, or toss it with any number of ingredients. Classically made with heavy cream, butter and Parmesan, it is an easy sauce that can be whipped up in minutes using staples from the fridge. As a buttery, blank canvas, it also lends itself to a number of seasonings: Add some fresh tarragon, dried herbs or a pinch of turmeric or saffron, and it takes on a whole new personality.

1 1/2 cups heavy cream
1 large egg yolk
2 tablespoons butter
1 small garlic clove, finely chopped
1 cup finely grated Parmesan (about 1 1/2 ounces)
Black pepper, to taste

Steps:

  • In a medium bowl or large measuring cup, whisk the cream and egg yolk together until combined; set aside.
  • In a medium saucepan, heat the butter over medium-high. Add the garlic and sauté until fragrant and sizzling, about 2 minutes. Pour the cream mixture into the garlic butter, reduce heat to medium and cook, stirring frequently, until mixture is hot but not boiling, about 5 minutes.
  • Whisk in the Parmesan little by little, and cook over medium, whisking frequently, until creamy and thickened, 3 to 5 minutes. Season to taste with pepper.

Just remember that alfredo sauce needs to be eaten immediately... does not reheat well and so making it ahead of time or having leftovers including it, is not a wise idea! So enjoy it after you cook it as it is delish as well as extemely versatile!...

8 oz cream cheese
1 c milk
1/2 c butter
1 c parmesan cheese

Steps:

  • 1. Before you start, make sure that you have a double boiler to melt this sauce in. It just doesn't work in a normal pan.
  • 2. Cut your room temp. softened cream cheese into cubes. Add all ingredients to double boiler. MAKE SURE THAT YOUR CUP OF PARMESAN CHEESE IS FRESH AND NOT THAT STUFF IN THE PLASTIC JAR. Stir mixture for about 15 minutes until it is all blended together and smooth.
  • 3. Serve immediately. TIPS & REMINDERS: Is not good reheated so eat immediately. I like to add garlic powder to the mixture right before serving. Make sure that while its melting that you keep CONSTANTLY stirring it. ENJOY!

2 tablespoons butter
2 portobello mushroom caps, thinly sliced
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups milk
6 ounces grated Parmesan cheese, or to taste
1 clove garlic, crushed
1 tablespoon minced fresh basil leaves
ground white pepper, to taste

Steps:

  • Heat 2 tablespoons of butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until softened, about 5 minutes. Set aside.
  • Meanwhile, melt the cream cheese and 1/2 cup of butter in a saucepan over medium heat, stirring occasionally. Stir in the milk and Parmesan cheese, mixing until smooth. Add in the garlic, basil, and white pepper. Simmer for 5 minutes, then remove the garlic. Stir in the cooked mushrooms before serving.
