- Slice avocado.
- Slice tomato.
- Split english muffin and place the halves face up on a baking sheet.
- Cover with avocado, tomato, and top with two slices of Mozzarella cheese. Season with cayenne pepper, to taste.
- Broil until cheese is melted and starts to brown. Season each melt with salt and pepper to taste.

- Flatten chicken to 1/4-in. thickness; set aside. In a shallow bowl, combine cornstarch, cumin, garlic powder, salt and cayenne. In another shallow bowl, beat egg and water. Dip chicken into egg, then roll in the cornstarch mixture and cornmeal. , In a large skillet, cook chicken over medium heat in oil until golden brown on both sides. Place in a greased 13x9-in. baking dish; arrange avocado evenly on top. , Bake, uncovered, at 350° for 10-15 minutes or until chicken juices run clear. Sprinkle with cheese. Serve with sour cream, salsa and green onions if desired.

CHICKEN AVOCADO MELT
This recipe combines some of my favorites! Chicken, avocado, monterey jack cheese, and green onions! This makes some great baked chicken. Just make sure you pound your chicken breasts so they are an even thickness so it all gets done at one time. My grocery store sells chicken breasts cut thinly that I like to use for this and eliminate the pounding. :) I also like to eat these on sandwiches, and add the toppings to the sandwiches.

- Place the chicken breasts between 2 sheets of wax paper. Flatten them to 1/4 inch thickness, using a meat mallet or a rolling pin.
- Combine the cornstarch, cumin, and garlic salt in a small bowl, stirring well.
- Combine the beaten egg and water in a small bowl, stirring well. Place the cornmeal in a shallow plate. Dredge the chicken in the cornstarch mixture; dip in the egg mixture, and then dredge in the cornmeal.
- Saute the chicken in oil in a large skillet for 2 minutes on each side or until lightly browned. Transfer the chicken to a 13 x 9 x 2 inch baking pan.
- Arrange the avocado slices over the chicken, and sprinkle evenly with the shredded cheese. Bake, uncovered, for 15 minutes or until the cheese melts and the chicken is done. Top with sour cream, green onions, and sweet red pepper. Garnish if desired.
SHRIMP AVOCADO MELT
This is Mexican quesadilla-inspired recipe, with a twist. I also saute whole unsalted cashews with the dish. It's quite decadent! I make this on days when I have sufficiently exercised to offset the calories! It's great as a low-carb dish, if you are not counting calories or fat! I count everything, so I make sure this is a special treat item.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Melt butter with sesame oil in a skillet over medium heat. Season butter mixture with garlic powder, salt, and pepper. Cook and stir shrimp, cashews, and green chile peppers in the butter mixture until everything is hot and coated in butter, about 5 minutes.
- Arrange tortilla halves into a baking dish. Top each tortilla half with half the avocado slices. Spoon about half the shrimp mixture atop each portion of avocado, drizzling any remaining melted butter from the skillet over the mixture. Top each with about half the pepperjack cheese and Cheddar cheese.

Found in a Tyson Chicken recipe book and changed it somewhat to suit our tastes. TIP: You can sprinkle chicken with sliced green onions and serve with sliced cucumber, if desired. Add sliced green onion tops to the yogurt and red bell pepper sauce or substitute onion-flavored ranch or cucumber salad dressing for the sauce.

- Combine panko crumbs, garlic salt and paprika in a large palstic food storage bag. Add chicken, close bag and toss to coat well. Wash hands. Preheat oven to 350 degrees.
- In a large nonstick skillet, heat oil. Put coated chicken in hot skillet and cook 2 minutes per side or until lightly browned. Remove chicken from skillet and place in a shallow baking pan.

- Heat your skillet or flat top to medium heat. For each sandwich: On your first slice of bread spread 1 tablespoon of apricot chutney. Top with 2 slices of Tillamook Baby Swiss Cheese. On your second slice of bread, place the roasted red peppers and 1 teaspoon crumbled blue cheese. Top with 2 slices of Tillamook Monterey Jack Cheese. AWESOME AVOCADO AND MUSHROOM MELT
Fresh tomato, avocado, mushrooms and sprouts on grilled wheat bread topped with melted mozzarella! Deeelish! I had this at a local restaurant, it seemed so simple so I decided to try it at home. I make it at least once a week now it is my favorite, I'm not even a vegetarian. Do not saute' the mushrooms they are meant to eat fresh. It's AWSOME!

- Heat a large frying pan on medium.
- Butter one side of each slice of bread, place buttered sides down in pan.
- Add 1-2 slices of cheese to one slice of bread and top with mushrooms.

- In a bowl, mix the tuna, scallions, onion, jalapeno, celery, and apple.
- Add in the avocado and toss lightly, then season to taste with salt and pepper; set aside.
- In a small bowl, whisk together the oil, cilantro, lime juice, mustard, vinegar, salt and pepper to taste.
- Pour the dressing over the tuna mixture; toss to mix.
