6 tablespoons butter, softened, divided
8 slices sourdough bread
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
4 ounces Brie cheese, rind removed, sliced
2 medium ripe avocado, peeled and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices. Sprinkle cheddar cheese mixture evenly over avocado slices. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

1 tablespoon lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • For the chicken and marinade: Place the chicken thighs in a bowl. Whisk together the lime juice, olive oil, ancho chili powder, Worcestershire sauce, cumin, garlic and black pepper in a small bowl and pour over the chicken. Cover the chicken and refrigerate overnight.
  • For the chipotle honey sauce: Whisk together the honey, canola oil, ancho chile powder, chipotles, mustard, ground coriander, ground cumin and Spanish paprika. Season with salt and pepper and set aside.
  • Preheat the grill to medium-high heat. Sprinkle the chicken well with salt and pepper and place the chicken thighs on the grill at a 45-degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Start brushing the thighs with the chipotle honey sauce every few minutes. Once the internal temperature reaches 165 degrees F, or its juices run clear, about 8 minutes. Remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving. Slice the chicken.
  • Layer the tortilla chips, top with sauce, chicken, relish and jalapenos.
  • Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in 2 cups of the warm milk, increase the heat, bring to a boil and continue whisking until the sauce thickens and the flour taste has been cooked out, about 5 minutes.
  • Remove the sauce from the heat and slowly whisk in the cheese a handful at a time. Continue whisking until smooth. Season with salt and pepper and nutmeg. Set aside.
  • Combine the avocados, serrano, onions, lime juice, oil, honey and salt and pepper to taste in a medium bowl. Fold in the cilantro until combined.
  • Brush the jalapenos with oil and season with salt and pepper. Grill until charred all over, about 6 minutes.

8 ounces soft goat cheese
Cilantro, for garnish
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 medium tomato
1 yellow hot chile
4 green onions
2 garlic cloves
2 tablespoons fresh cilantro leaves
1 teaspoon sherry wine vinegar
1 tablespoon walnut oil
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Seed and julienne the bell peppers and saute in 2 tablespoons olive oil over medium heat for about 10 minutes. Cut avocados in half lengthwise and remove the seeds and skin. Rub the avocado halves with olive oil and season with salt and pepper. Grill the halves on both sides for about 2 minutes each side. Remove from the grill and place on a baking sheet. Fill the center of each avocado half with Bell Pepper Salsa and top with 1-ounce of goat cheese. Bake approximately 5 minutes or until cheese is melted.
  • On each plate, arrange sauteed bell peppers and place an avocado half among them. Garnish with cilantro.

I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!

1/3 cup fresh lime juice (about 3 limes), plus lime wedges for serving (optional)
Coarse salt and freshly ground pepper
Cornmeal Pizza Dough
4 ounces coarsely grated pepper Jack cheese (about 1 1/3 cups)
Sour cream, for garnish (optional)

Steps:

  • Toss onion, tomatoes, and avocados with oil and lime juice in a medium bowl. Season with salt and pepper; set aside.
  • Heat a grill until medium-hot. Generously brush one side of pizza dough with oil; grill, oiled side down, until underside is golden brown and top begins to bubble, 3 to 5 minutes. 1 teaspoon fresh lemon juice

  • Halve the avocado and remove the pit. Score the flesh on each half in a criss-cross pattern. Carefully scoop the cubes into a bowl with a spoon.
  • Place mango jam in a small bowl and microwave on high until warm and thinned, about 20 seconds.

I hesitate to even post this recipe- it is so simple... but it is so yummy I just can't help myself! I've been eating these almost every day for lunch!

Number Of Ingredients 4

4 slices hearty whole wheat bread (I like Arnold's 7 Grain bread)
softened butter
thick slices cheddar cheese
1 avocado, sliced

Steps:

  • Lightly butter one side of each slice of bread.
  • Place 2 slices of buttered bread, butter side down, on a griddle or skillet over medium-high heat.
  • Top with cheddar cheese, sliced avocado, and other slices of buttered bread.
  • Grill for a couple of minutes until cheese has started to melt and bread is grilled to desired amount.
  • Flip sandwiches and grill on other side.

1/2 ripe avocado
2 tablespoons softened butter
4 slices firm pumpernickel bread
1 tablespoon Dijon mustard
3 ounces mozzarella cheese, thinly sliced
6 ounces thinly sliced smoked turkey
salt, freshly ground pepper

Steps:

  • Pit, peel and thinly slice avocado.
  • Spread butter on one side of each bread slice; turn slices over; spread with mustard.
  • Top 2 of the slices with mozzarella, avocado and turkey.
  • Season with salt and pepper; top with remaining 2 bread slices, buttered sides up.
  • Heat a heavy skillet over moderate heat until hot but no smoking; cooking sandwiches until bread is crisp and cheese is melted, about 1 1/2 minutes on each side.
