5 medium ripe avocados, peeled and halved
1/2 cup mayonnaise
2 tablespoons lemon juice
2 cans (6 ounces each) lump crabmeat, drained
4 tablespoons chopped fresh cilantro, divided
2 tablespoons minced chives
1 serrano pepper, seeded and minced
1 tablespoon capers, drained
1/4 teaspoon pepper
1 cup shredded pepper jack cheese
1/2 teaspoon paprika
Lemon wedges

Steps:

  • Preheat broiler. Place 2 avocado halves in a large bowl; mash lightly with a fork. Add mayonnaise and lemon juice; mix until well blended. Stir in crab, 3 tablespoons cilantro, chives, serrano pepper, capers and pepper. Spoon into remaining avocado halves., Transfer to a 15x10x1-in. baking pan. Sprinkle with cheese and paprika. Broil 4-5 in. from heat until cheese is melted, 3-5 minutes. Sprinkle with remaining cilantro; serve with lemon wedges.

These Baked Avocado Boats with Bacon are such a great keto breakfast option with so much room to personalize with your favorite toppings.

2 large ripe avocados
4 medium eggs
salt and pepper (to taste)
1/2 cup Cheddar Jack Cheese, shredded
3 strips sugar free bacon, cooked and crumbled

Steps:

  • Preheat the oven to 350 degrees. To keep from sticking to the baking pan when baking, line with parchment paper.
  • Cut the avocados in half lengthwise and take out the pits. Use a spoon to take out a bit of the flesh around the pit area to create a bigger space for the egg. (Save that extra avocado to use for something else later or top the avocado boats once done baking)
  • Crack the egg into a bowl and put it into the avocado half. Put the avocado half on the baking sheet and do this for all until complete. Season with salt and pepper to taste.
  • Put the halves into the oven and bake for 20-25 minutes. Take out of oven and top with shredded cheese and bacon pieces. Garnish with chopped chives, crushed red pepper flakes or other toppings and enjoy.

3 ripe Hass avocados
1 lemon
Hot sauce, several drops (recommended: Tabasco)
Extra-virgin olive oil, for drizzling
2 small plum tomatoes, seeded and chopped
2 scallions, chopped
Coarse salt

Steps:

  • Cut into and all around the pit of each avocado, down to the pits. Twist the avocados and separate them. Whack the corner of your knife into each pit and remove it. Using a large spoon, scoop out each avocado half and arrange them on a plate. Dress the avocados with lemon juice, a few drops of hot sauce and a drizzle of extra-virgin olive oil. Combine the tomatoes and scallions and season with salt. Fill the avocados with plum tomatoes and serve.

This is another recipe from the "1 of a Kind" cookbook of the Junior League of Mobile, AL. Altho somewhat similar to another recipe here on RZ that I liked & reviewed, this version expands the concept. Yield was given as 6 servings, but I like this so much that I would want 2 for me! Enjoy!

12 slices bacon (cooked crisp & crumbled)
1/2 cup sour cream (Use light or low-fat variety to decrease fat content)
2 tomatoes (seeded & chopped)
2 tablespoons green onions (sliced)
1 tablespoon lemon juice (I prefer lime juice)
1/2 teaspoon salt
3 avocados (halved, pitted & pulp diced)

Steps:

  • Combine bacon, sour cream, tomato, onion, lemon juice & salt in a bowl.
  • Scoop out avocado pulp, dice & add to other ingredients.
  • Fill avocado shells w/mixture & serve immediately.
  • NOTE: While not a part of the recipe, I favor adding diced black olives to the avocado mixture.
