4 slices crusty Italian bread
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 ripe avocados
3 tablespoons minced fresh chives
3 tablespoons minced fresh parsley
2 teaspoons lemon juice
Kosher salt and freshly ground black pepper
1 large tomato, coarsely chopped
4 slices cooked bacon, chopped
Flaky sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Drizzle the bread slices with 1/4 cup of the olive oil. Place the bread on a baking sheet and bake until golden brown, 12 to 15 minutes.
  • Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley, the lemon juice, 1/2 teaspoon kosher salt and 1/2 teaspoon pepper; mix until fully combined.
  • Toss the tomatoes, the remaining 1 tablespoon each olive oil, chives and parsley, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a small bowl.
  • Spread each slice of bread with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture. Sprinkle with the chopped bacon and flaky sea salt.

8 strips bacon
1 head romaine lettuce, chopped
2 handfuls cherry tomato, or grape tomatoes, halved
½ cucumber
2 avocados, chopped
4 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon mustard
1 teaspoon salt
1 lemon, juiced

Steps:

  • Cook bacon until crispy. Drain on a paper towel, then set aside.
  • Place chopped lettuce, tomatoes, cucumber, avocados and bacon in a large bowl.
  • In a small bowl, mix olive oil, balsamic vinegar, mustard, salt, and lemon juice to form the dressing.
  • Toss the salad with the dressing.
  • Enjoy!

Hardly qualifies as a recipe it's so simple, but its charm as a breakfast, brunch or lunch dish is in its simplicity, in the contrasting tastes and textures of the avocado, lime and bacon, and in the contrast between the coolness of the first two ingredients and the warmth of the bacon. I'm posting this recipe so that those who have never tried it can do so and to remind those - like me - who haven't made it for a while but know how delicious it is, to make it again. This version of the recipe serves the avocado and bacon on toast. Avocado and bacon is equally delicious in untoasted, really fresh crusty bread - or in whatever is your favourite bread. I came across this particular version of it today in a magazine, the April edition of "Super Food Ideas". With its combination of avocado and lime juice, this recipe echoes Mexican dishes, but without the heat!

2 avocados, just-ripe
2 tablespoons lime juice
175 g rindless bacon, with all fat removed
8 slices dark rye bread, thickly sliced
butter, for spreading (optional)
1 sprig flat leaf parsley, for garnish (optional)

Steps:

  • Halve, deseed and peel the avocados.
  • Slice lengthways into 1 cm thick slices.
  • Place in a large bowl, drizzle with lime juice and season with pepper and salt.
  • Toss gently to coat with the lime juice. Set aside for ten minutes.
  • Preheat the grill on a medium-high heat.
  • Cut bacon rashers in half, unless your have bought middle rashers in which case they are probably just the right size.
  • Place the bacon on the grill in a single layer.
  • Grill for 2 to 3 minutes on each side or until the bacon is beginning to crisp.
  • Drain on the bacon paper towels.
  • Grill the bread for one to two minutes on each side or until golden and toasted. (optional) Some people may want their bread untoasted.
  • Spread lightly with butter. (optional).
  • Place toast on plates.
  • Top with avocado, bacon and a sprig of parsley.
  • Serve.

2 ripe avocados, halved, pitted and peeled
3 scallions, chopped
1 tablespoon lemon juice
Fine salt and freshly ground black pepper
4 slices smoked bacon
4 slices sourdough or crusty white bread, sliced 3/4-inch thick

Steps:

  • Preheat the oven broiler.
  • Mash the avocados in a medium bowl until slightly chunky. Stir in the scallions, lemon juice, 1/2 teaspoon salt and a few grinds of pepper and set aside.
  • Arrange the bacon in a large nonstick skillet over medium heat and cook until brown and crisp, about 4 minutes per side. Transfer to a paper towel-lined plate and reserve the drippings in the skillet. Brush each slice of bread with some bacon drippings. Arrange the bread on a baking sheet, bacon dripping side-up, and broil until lightly toasted.
  • Spread each toast with 1/4 of the mashed avocado, break each piece of bacon in half and top each toast with 2 halves.

Bacon Avocado Toast is a healthy and easy breakfast that is filling and flavorful. This is a great breakfast for you enjoy before heading out to work.

2 ripe avocados
2 tsps lemon juice
2 tsps lime juice
Salt & pepper
6 large eggs
½-1 cup cooked bacon bits
6 slices bread toasted
Sriracha for garnishing

Steps:

  • Get out and measure your ingredients.
  • Slice avocado down the middle to open. Spoon out all of the avocado from both shells into a small mixing bowl.
  • Mix in lemon juice, lime juice, salt and pepper.
  • Mix well. Taste and adjust ingredients if desired.
  • Boil 6 cups of water. Once boiling, crack both eggs open, and gently drop into boiling water. Boil each egg for exactly 3.5 minutes. When time is up, gently remove each egg with a slotted spoon and place on a paper towel to dry.
  • Spread your avocado mixture evenly over slices of bread.
  • Sprinkle the bacon bits overtop.
  • Place one egg on each slice of toast.
  • Serve immediately.
  • With sriracha drizzled on top of each slice, if desired.
  • Enjoy!

4 large ripe tomatoes, cut into 1-inch chunks, or 20 cherry tomatoes, halved
2 ripe large Hass avocados, halved, pitted, peeled, and cut into 1-inch chunks
1 large red onion, thinly sliced
Toasted Cumin Vinaigrette, recipe follows
2 cups arugula leaves
1 teaspoon ground cumin
1/4 cup freshly chopped cilantro leaves
1/4 cup fresh lime juice
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon cumin seeds, lightly toasted
1/4 cup chopped fresh cilantro leaves
1/4 cup olive oil
1/4 cup canola oil
Salt and freshly ground pepper

Steps:

  • Gently mix the tomatoes, avocados, onions, arugula, and half of the vinaigrette in a large bowl. Check for seasoning and add more vinaigrette, if needed. Sprinkle the cumin and cilantro over the top and serve immediately.
  • Whisk together the lime juice, vinegar, honey, cumin, and cilantro in a medium bowl. Gradually whisk in the oils until emulsified. Season with salt and pepper, to taste. Do not use a blender to make this vinaigrette.

It may seem silly to give a recipe for avocado toast, but there is an art to it, as with most things that are both simple and perfect. Here, you want to make sure of a few things: that the bread you use is sturdy and has some taste; that there's enough salt and citrus to bring out the avocado's flavor; and that you use a good olive oil to bring it all together. These garnishes, from the Australian café Two Hands in Manhattan, are tasty but unnecessary.

2 large slices crusty, chewy sourdough bread, preferably whole wheat
1 ripe avocado, halved, pit removed
Extra-virgin olive oil
Flaky salt and coarsely ground black pepper
Half a lemon or lime
Poached or fried eggs
Thinly sliced pickled or fresh red chiles, such as Fresno or cherry
Thinly sliced pickled red onions
Pepitas (pumpkin seeds) or sesame seeds, or both
Herbs, such as basil, cilantro, mint or baby arugula

Steps:

  • Toast the bread to your liking. Meanwhile, use a wide spoon to remove the avocado halves from the peel, keeping them in large pieces.
  • Drizzle the hot toast lightly with olive oil and sprinkle with salt. Let cool slightly, then place one avocado half on each slice of toast. Use the back of a fork to roughly mash the avocado into the bread, keeping it as chunky as possible.
  • Sprinkle with a little more salt, and pepper if desired. Squeeze the citrus over the top and add any garnishes. Cut each piece of toast in half if they're large and serve immediately.

6 cherry tomatoes , halved
1 small ripe avocado , peeled and stoned
squeeze lime juice
pinch dried chilli flakes
2 chunky slices granary bread

Steps:

  • Heat grill to high. Put the bacon and cherry tomatoes, cut side up, on a grill rack and grill for 10 mins, turning the bacon halfway through, until crisp. Meanwhile, roughly mash the avocado with a fork and stir in the lime juice, chilli flakes, some salt, if you like, and pepper.
  • Toast the bread until golden and spoon on the mashed avocado. Top with the tomatoes and bacon, then serve.
