2 cups shredded peeled tart apples
2 cups shredded peeled pears
2 cups sugar
1-1/4 cups canola oil
1 cup raisins
1 cup chopped pecans
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
3 cups confectioners' sugar
1/4 cup butter, softened
2 tablespoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture. , Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool on a wire rack. , For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.

Is there anything nicer than the smell of apples and cinnamon? This is such a comforting dessert. Easy to make and low in fat too. You probably already have everything at hand. A good friend gave this to me many moons ago. I believe she got it from a women's group in Meaford Ontario. This is also terrific baked in individual ramekins or onion soup bowls. For a change of pace, try adding raisins or whole cranberries to the apples prior to pouring on the batter.

4 -6 apples, sliced
2 tablespoons brown sugar
1 teaspoon cinnamon
2 tablespoons water
1 cup flour
1/2 cup white sugar
1/4 teaspoon baking soda
2 teaspoons baking powder
1 pinch salt
1 teaspoon vanilla
1 egg
1 1/2 teaspoons shortening, melted
1/2 cup milk
cinnamon sugar (optional)
whipped cream (optional)

Steps:

  • Preheat oven to 350*.
  • Slice apples, with or without the peel, to fill a casserole dish.
  • Sprinkle with brown sugar, cinnamon and water.
  • In a medium bowl, mix flour, white sugar, baking soda, baking powder and salt. Set aside.
  • In a small bowl or shaker, combine vanilla, egg, melted shortening and milk.
  • Add to the flour mixture and beat until smooth, then pour over the apples.
  • If desired, sprinkle with sugar cinnamon.
  • Bake for 1 hour or until golden.
  • Serve warm with a dollop of whipped cream.

4 cups granny smith apples, diced
2 cups granulated sugar
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
2 large eggs
1 cup oil
2 teaspoons vanilla
1 1/2 cups brown raisins
1 cup nuts, chopped (walnuts or pecans)

Steps:

  • Preheat oven to 350 degrees.
  • Wash, core, and dice apples (peeling is optional).
  • Pour sugar over apple pieces and stir well.
  • In another large bowl, combine all remaining ingredients.
  • Add sugared apples to batter and stir well.
  • Batter will be fairly stiff.
  • Butter a 9x13 glass pan.
  • Spread batter in greased pan.
  • Bake for about 45 to 60 minutes, starting to check doneness with a toothpick at 45 minutes.
  • Do NOT overbake.
  • Serve with a dollop of whipped cream if desired.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 egg
1 pkg. (2-layer size) yellow cake mix
7 Tbsp. butter, melted, divided
1 can (15 oz.) pear halves, drained, sliced into 1/2-inch slices
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
1/2 tsp. ground cinnamon
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F.
  • Beat first 4 ingredients in large bowl with mixer on low speed just until cake mix is moistened, stopping frequently to scrape side of bowl. Add 1/4 cup butter; beat on medium speed 2 min. (Batter will be thick.)
  • Spread batter onto bottom of 13x9-inch pan sprayed with cooking spray. Arrange pear slices over batter, pressing lightly into batter to secure. Sprinkle with dry gelatin mix and cinnamon. Drizzle with remaining butter; sprinkle with nuts.
  • Bake 40 to 45 min. or until toothpick inserted in center comes out clean.

My stepmom sent me this recipe. I believe it came from Kraft. I made this yesterday and it was a hit with my kids. Dh hates pears so he was no help! It is a nice, different, VERY rich cake. She used pecans on her cake, I used mixed nut sundae topping. Also, I only used about 1/2 the lemon gelatin. I enjoyed a slice with my coffee this morning. Hope ya'll enjoy it too.

1/2 cup sour cream
4 ounces cream cheese, softened
1 (18 1/4 ounce) package yellow cake mix
7 tablespoons butter, melted, divided
1 (15 ounce) can pear halves in natural juice, drained, sliced into 1/2-inch slices
1 (3 ounce) package lemon gelatin
1/2 teaspoon ground cinnamon
1/2 cup nuts, chopped
