2 cups sugar
2 eggs
1/2 cup softened butter
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
4 cups apples, diced and peeled
1 cup chopped nuts
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup evaporated milk

Steps:

  • In a large bowl, combine the sugar, eggs and butter; beat well.
  • In another bowl, sift together the flour, salt, baking soda, cinnamon and nutmeg.
  • Stir the dry ingredients into the creamed mixture.
  • Add the chopped apples and nuts. Mix together well.
  • Pour into a well greased 9x13-inch pan.
  • Bake at 350°F for 45 minutes.
  • For the butter sauce: Melt the 1/2 cup butter in a saucepan on low heat. Add the sugars and evaporated milk. Heat slowly, do not let boil.
  • Serve with apple cake. You may dollop each individual piece with whipped cream as well.
  • Delicious!

3 medium pears or 3 medium apples, peeled,cored,sliced
1 tablespoon lemon juice
1/4 cup unsalted butter, softened
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon ginger or 1/2 teaspoon cinnamon
1/2 teaspoon salt
1 large egg
1 cup flour
1/2 cup milk
3/4 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/2 teaspoon ginger or 1/2 teaspoon cinnamon
1 cup hot tap water

Steps:

  • Choose pears or apples, if you pick pears use the ginger, for apples use the cinnamon.
  • There are two parts to this recipe, the cake and the topping.
  • To make the cake: Lightly grease an 8-inch square or 9-inch round pan.
  • Place the fruit in the pan, and sprinkle it with the lemon juice.
  • In a medium-sized bowl, cream together the butter, sugar, baking powder, spice, and salt till smooth.
  • Beat in the egg, then add the flour alternately with the milk (1/2 cup flour, the milk, remaining 1/2 cup flour), beating after each addition.
  • Spoon the batter over the fruit in the pan, spreading it to mostly cover.
  • To make the topping: Whisk together the sugar, cornstarch, salt, and spice.
  • Sprinkle this mixture over the batter, then carefully pour the hot water over all.
  • It will puddle on top; that's OK.
  • Bake the cake in a preheated 375°F oven for about 60 minutes, until it's nicely browned on the top.
  • Remove it from the oven, and serve warm with vanilla ice cream or whipped cream.
  • Yield: 8 to 9 servings.

I cut this recipe out of an Asda Magazine a long time ago. It's a favourite with the children when they were little they would pick the apples from their Gran's tree. It looks great, very autumnal!

125 g sugar
125 g butter
125 g self raising flour
2 tablespoons sultanas
1 teaspoon baking powder
1 lemon, juice and zest of, grated
2 eggs
2 apples

Steps:

  • Preheat oven to 180°C
  • Grease and line the base of a 20cm loose based round cake tin.
  • Quarter the apples and cut out the core. Cut quarters into slices and put them into a small bowl with the lemon juice. Toss to mix and set aside.
  • Sieve the flour and baking powder into a large mixing bowl.
  • Add the butter, sugar, eggs, sultanas and lemon zest. Beat together with a wooden spoon for 3 to 4 minutes until well mixed.
  • Put mixture in the cake tin and level the top.
  • Drain the juice from the apples and put the slices neatly on the cake. See Photo.
  • Bake for about 35 minutes - when you gently press on the top of the cake it should spring back.
  • Take out of the oven and leave to cool before removing form the tin.
  • I usually double the quantity and cook in a 23" round cake tin (deep). It's enough to feed an army - or a very hungry family at least!
  • Alternative toppings use fresh pears or canned, drained pineapple or mandarin oranges.
  • This cake is great served with a generous spoon of whipped cream / crème freche.

125 g self raising flour
125 g granulated sugar
125 g butter or 125 g margarine, softened
1 1/2 teaspoons baking powder
1 lemon, juice and zest of
2 large apples, preferably cooking apples
2 medium eggs
2 tablespoons sultanas
1/4 teaspoon cinnamon

Steps:

  • Preheat the oven to 180c/gas4. Grease and line the base of a loose based tin approximately 20cm.
  • Cut the apples into quarters and remove the cores. Slice lengthways and toss in bowl of lemon juice.
  • Sieve the flour, cinnamon and baking powder into a large mixing bowl. Add butter, eggs, sugar, sultanas and lemon zest. Beat for 4-5 mins until thoroughly mixed.
  • Place mixture in the cake tin and carefully level the top. Dry off apples with kitchen towl or drain well and arrange slices in a pattern on the top of cake mix.
  • Bake for around 30-35 minutes - until springy. Once cooked allow to stand for 5 mins then remove from tin and place on wire cooling rack.
  • Serve as it is or lightly dust with icing sugar.

3 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon nutmeg
½ cup butter, softened
½ cup white sugar
1 cup maple syrup
2 eggs
1 teaspoon cream of tartar
½ cup milk
1 apple - peeled, cored, and chopped
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking powder, salt, cinnamon, allspice and nutmeg. Set aside.
  • In a blender on low speed, combine butter, sugar, maple syrup, eggs and cream of tartar. Gradually mix in the flour mixture, then stir in the milk. Turn off the blender, then fold in chopped apple.

I've had this recipe for more than 20 years, and still remember my husband devouring it the first time I made it for him! It's a fall favorite in our home, so moist and so delicious! You can sprinkle powdered sugar over it, to look pretty, but it's perfect as is!

1 1/2 c corn oil
2 c granulated sugar
3 eggs
2 tsp vanilla
3 c all purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 c chopped apples
1 c pecans
1/2 c raisins

Steps:

  • 1. Preheat oven to 325. Grease and flour, or spray with baking spray, a Bundt pan. Mix thoroughly the corn oil, sugar, eggs and vanilla.
  • 2. Combine flour, soda, salt, cinnamon and nutmeg. Add the liquid mixture to this, and mix til combined.
  • 3. Combine apples, nuts, raisins and fold into batter. It will be very thick and dense! Pour into prepared pan, bake one hour or until toothpick comes out clean. Cool in pan 10 minutes.
