1 small yellow onion
coarse salt and ground pepper
1 1/2 pounds ground beef chuck (80% lean)
4 plain or sesame-seed buns, split
4 large eggs, cooked over easy
Ketchup or barbecue sauce
Sliced canned beets
Lettuce leaves

Steps:

  • Heat a grill to medium-high. Clean and lightly oil hot grill. Cut onion into thin rings and season with salt and pepper. Grill until lightly charred and crisp-tender, about 4 minutes per side. Transfer to a plate. Form ground beef into 4 patties and season with salt and pepper. Grill 4 minutes per side for medium. Transfer to bottom halves of buns. Top each burger with an egg, grilled onions, your choice of sauce, sliced beets, and lettuce.

1/4 cup ketchup
1/4 cup mayonnaise
1 teaspoon Asian chile paste such as sambal oelek
1 1/4 pounds ground beef chuck
4 kaiser rolls, split
4 pineapple rings
1 tablespoon vegetable oil, divided
4 large eggs
3/4 cup drained sliced pickled beets

Steps:

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas); see Grilling Procedure .
  • Combine ketchup, mayonnaise, and chile paste.
  • Mix beef with 1 teaspoon salt and 1/2 teaspoon pepper, then form into 4 (4 1/4-inch-diameter) patties.
  • Lightly toast rolls on grill.
  • Pat pineapple dry and brush with 1/2 tablespoon oil.
  • Oil grill rack, then grill pineapple and burgers, covered only if using a gas grill, turning once, until pineapple is tender and caramelized and burgers are medium-rare, about 4 minutes total.
  • Heat remaining 1/2 tablespoon oil in a large nonstick skillet over medium-high heat until hot, then fry eggs.
  • Spread chile mayonnaise on rolls, then assemble burgers with pineapple, beets, eggs, lettuce, and tomato.

¼ c ketchup
¼ c mayonnaise
1 tsp hot sauce ((Sriracha or your favorite))
4 slices bacon
4 eggs
4 hamburger patties (*)
4 oz sharp cheddar cheese, (sliced)
1 sweet onion, (sliced into thick rings **)
4 pineapple rings, (patted dry **)
¾ c canned beets, (drained, sliced, and patted dry***)
1 tomato, (sliced)
4 lettuce leaves, (washed and patted dry)
4 hamburger buns

Steps:

  • Preheat your grill to a medium heat.
  • In a small bowl, mix together ketchup, mayonnaise, and hot sauce. Set aside.
  • Fry your bacon in a medium skillet over medium high heat until cooked to your preferred done-ness. Remove the bacon from the skillet and place on a paper towel lined plate.
  • Crack the four eggs into the hot bacon grease and fry the eggs until the whites are cooked, but the yolks are still jiggly, 2-3 minutes. Remove the fried eggs from the pan.
  • Place the burger patties on the pre-heated grill. Cook for 5-7 minutes on each side, until firm and cooked to your desired done-ness. (Actual cooking time will depend on the thickness of the burgers and the heat of your grill. If using packaged burgers, refer to the package instructions.) Remove the burgers from the grill and let rest for 2-3 minutes, covered with aluminum foil to keep warm.
  • Construct the burgers by layering lettuce, tomato, pineapple, beets, and onion on one half of the bun, followed by the burger patty. Continue, layering the cheese, bacon, and finally the fried egg. Top everything off with the top bun, slathered with the chili mayo.
  • Un-hinge your jaw and get ready to enjoy this epic tower of a burger!

1 ¼kg lean beef mince
1 onion , finely chopped
140g breadcrumb
100g mature cheddar , grated
small bunch parsley , chopped
1 tbsp Worcestershire sauce
1 egg , lightly beaten with a fork
1 tsp mild chilli powder
2 ½kg bag of potato , cut into chunky chips
3 tbsp plain flour
10 tsp olive or sunflower oil
burger buns , lettuce, sliced red onion, tomatoes, gherkins, and sauces or relishes, to serve

Steps:

  • Tip the mince into a large bowl with the onion, breadcrumbs, cheese, parsley, Worcestershire sauce, egg, chilli powder, ½ tsp salt and some pepper. Mix together well with your hands, then divide the mixture into 10 and shape into burgers.
  • Bring 2 large saucepans of water to the boil (or prepare the chips in batches if you don't have enough big pans). Add the chips, bring the water back to the boil and set your timer for 3 mins. After 3 mins, drain the potatoes well and tip onto one or two large kitchen-papercovered trays. Scatter with the flour and some seasoning and gently toss to coat.
  • Freeze the burgers and chips (see freezing tips, below) or, to cook straight away, heat oven to 200C/180C fan/gas 6. In a baking tray, toss the chips in a little oil, then roast for 35-40 mins until crisp and golden. Meanwhile, heat a griddle pan, grill or barbecue until hot, then cook the burgers for about 5-8 mins on each side, or until cooked to your liking. Sandwich the burgers in toasted buns with salad and sauces, then serve with the chips.

1 small carrot, finely diced
1/4 cup breadcrumbs
2 medium eggs
1 tablespoon garlic, crushed

  • Mix all ingredients very well in a bowl and place in refrigerator for an hour or so (optional).
  • Form into burgers the size and shape of your liking, keeping them rounder but fairly flat helps them cook throughout.

6 desiree potatoes
1 can of sliced beetroot
1kg lamb mince
1 teaspoon Wildfire Spice*
1 teaspoon Alpine Pepper*
2 egg yolks
¼ cup flour
oil for frying
2 Spanish onions, finely sliced
a generous pinch of Outback Salt
¼ bottle of beer (optional) or some water
1 loaf wattleseed and walnut bread
150g bacon or proscuitto
1 fresh pineapple, peeled and thinly sliced (2 slices per serve)
2 sweet vine ripened tomatoes
shredded lettuce of your choice
100ml Mountain Pepper BBQ Sauce*

Steps:

  • 1. Cut the washed desirée potatoes into thick chunky chips and preheat hotplate or frying pan. 2. Heat sunflower oil to 190°C/375°F, and lower the chips into the oil and fry for five to six minutes, until soft but not browned, then remove and allow to cool. 3. Combine the lamb mince, Alpine Pepper, egg yolks, flour and beer. Mix well. 4. Form the mince mix into patties and cook on hotplate or frying pan. Cook pattie to desired done-ness. 5. Also begin to fry the bacon, the pineapple slices and the Spanish onions on the hotplate. 6. Slice the tomatoes and toast the wattleseed and walnut bread. 7. Remove the pattie, pineapple, bacon and Spanish onions from the grill. 8. Heat the oil up to 200°C/400°F, then return the chips to the oil for two to three minutes. Remove and drain well, season with sea-salt and Wildfire Spice. 9. Construct the pattie on the wattleseed and walnut toasted bread, then bacon, onions, pineapple, tomatoes and shredded lettuce. Add a little Mountain Pepper BBQ sauce on top and place the other piece of wattleseed and walnut toasted bread as a sandwich.

500g lean minced steak
100g cooked beetroot
2 mini garlic and coriander naan bread
50g bag rocket
4 tbsp soured cream and chive dip

Steps:

  • Make the burgers: Tip the meat into a bowl and sprinkle over 1 tsp salt and a good grinding of black pepper.Work with wet hands to mix in the seasoning. Divide into four with your hands and shape into burgers. (It can be frozen at this stage.)
  • Sort out your ingredients: Slice the beetroot and split the naan breads.
  • Toast the naans: Heat a griddle pan or barbecue. Griddle the naans on both sides until lightly toasted and set aside. Add the burgers to the grill or barbecue and cook for 2-3 minutes, then turn and cook the other side for a further 2-3 minutes.
  • Assemble the dish: Set half a toasted naan on each serving plate and put a pile of rocket on each. Top with a burger, then a few slices of beetroot and a dollop of soured cream. Sprinkle with salt and freshly ground black pepper and serve immediately with a big green salad and chips. A glass of red wine wouldn't go amiss, either.

Stack your grilled beefburgers with cheese, bacon, pineapple, beetroot, tomato and lettuce - the Australian way

Number Of Ingredients 15

1 ½kg minced beef , not lean
2 red onions , finely chopped
5 garlic cloves , crushed
large handful of parsley , chopped
75ml tomato ketchup
50ml oyster sauce
2 egg yolks
6 smoked back bacon rashers
6 slices fresh pineapple
6 slices good melting cheese , such as cheddar
6 burger baps , split in half
2 tbsp mayonnaise
12 slices pickled beetroot
2 large tomatoes , sliced
1 Cos lettuce , separated into leaves

Steps:

  • To make the burgers, mix together all the ingredients and knead well so everything is thoroughly mixed. Separate the mix into 6, roll each into a large ball, then shape into burgers (see photos, right). Put them in the fridge and, if possible, leave to chill for at least 1 hr. They can be made up to 2 days ahead.
  • To cook the burgers, get the barbecue good and hot with the coals glowing. You don't need to add any oil to the burgers. Put them on the barbecue and leave for a few mins until the edges start to colour, then slide a fish slice under the burgers and turn over. Repeat the process, then turn again. Remove to the cooler side of the barbecue and leave to cook for a good 15 mins if you like them well cooked.
  • While the burgers are cooking, BBQ the bacon and pineapple. Top the burgers with the bacon, then add the cheese and put back on the barbecue to melt. Warm the baps over the barbecue, too, if you like.
  • Divide the mayo between the bap bases and top with the burgers. Add the pineapple, beetroot, tomato and lettuce, then put the lids on top.
