My Australian husband first made these burgers a few weeks after arriving in the USA. They became a hit with our family. They're a bit messy but delicious. Hunger busting burgers topped with every topping imaginable. Wrap your laughing gear around that. Stretch! Crikey! It's a meal in one go.

Number Of Ingredients 14

1 pound ground beef
1 large onion, sliced
4 eggs
4 slices Canadian bacon
4 pineapple rings
4 slices Cheddar cheese
1 (8.25 ounce) can sliced beets, drained
4 slices tomato
4 lettuce leaves
1 tablespoon ketchup
1 tablespoon yellow mustard
2 tablespoons dill pickle relish
2 tablespoons mayonnaise
4 Kaiser rolls, split

Steps:

  • Preheat an outdoor grill for high heat.
  • When the grill is ready, lightly oil the grilling surface. Form the ground beef into four patties, and grill for 5 minutes per side, or until cooked through.
  • Meanwhile, melt butter in a large skillet over medium heat. Add onions, and fry until soft. Remove the onions from the skillet, and crack the eggs in the same skillet over medium heat. Cook until the yolks are solid, turning over once. Remove eggs, and set aside. Place the Canadian bacon in the same skillet, and fry until toasted. Remove the bacon, and turn the heat to high. Quickly fry the pineapple rings in the bacon drippings just until browned on each side.
  • To Assemble sandwiches: Set bottom of kaiser roll on a plate, and top with burger, a slice of cheese, a slice of Canadian bacon, one fried egg, fried onions, a few slices of beet, a slice of pineapple, a slice of tomato, and a leaf of lettuce. Decorate the top bun with ketchup, mustard, relish and mayonnaise as desired. Place over the burger. Repeat with remaining burgers.

1/4 cup ketchup
1/4 cup mayonnaise
1 teaspoon Asian chile paste such as sambal oelek
1 1/4 pounds ground beef chuck
4 kaiser rolls, split
4 pineapple rings
1 tablespoon vegetable oil, divided
4 large eggs
3/4 cup drained sliced pickled beets

Steps:

  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas); see Grilling Procedure .
  • Combine ketchup, mayonnaise, and chile paste.
  • Mix beef with 1 teaspoon salt and 1/2 teaspoon pepper, then form into 4 (4 1/4-inch-diameter) patties.
  • Lightly toast rolls on grill.
  • Pat pineapple dry and brush with 1/2 tablespoon oil.
  • Oil grill rack, then grill pineapple and burgers, covered only if using a gas grill, turning once, until pineapple is tender and caramelized and burgers are medium-rare, about 4 minutes total.
  • Heat remaining 1/2 tablespoon oil in a large nonstick skillet over medium-high heat until hot, then fry eggs.
  • Spread chile mayonnaise on rolls, then assemble burgers with pineapple, beets, eggs, lettuce, and tomato.

This is a hero item and a regular in my family. The herbs and extra's make these patties a great addition to your burger. I make 2 kilos (4 pounds) worth of patties and freeze half. Patties need to be refrigerated for 1 HOUR prior to cooking or they will break apart.

2 pounds ground beef (minced beef) not diet!
1 large onion, diced fine
1 teaspoon of oil
2 teaspoons mixed herbs
1 onion
1 cup bread crumbs
2 tablespoons bbq sauce - your favourite
1 teaspoon minced garlic

Steps:

  • 1. Heat the oil in a pan and fry the onion for 2 minutes - enough to take away the rawness and just cook through.
  • 2. Place all the ingredients (including the cooked onion) in a large bowl and use your hands to mix well.
  • 3. Form into 10-12 equal sized patties. Place on a large plate. Cover and pop in the fridge for at least 1 hour or over night.
  • 4. Cook patties on a hot grill, BBQ or griddle plate. Only turn once and DON'T press down with a spatula.
  • 5. Serve inside your favourite burger.

AUSSIE STYLE BURGER WITH THE LOT

A "hamburger with the lot" is an Aussie take on an American classic.The famed burger is served in pubs, fish & chip shops and restaurants around the country. It usually consists of a juicy beef patty in a bun served with with cheese, sliced tomato, sliced, canned beetroot, onions, lettuce, bacon and an egg. Some versions are served with a slice of pineapple for that extra flavor of summer. I found this on an Australian website. Enjoy!

butter
1 lb ground beef, shaped into 4 patties
8 slices bacon
4 slices onions
4 slices cheddar cheese
4 eggs
ketchup
lettuce
4 slices tomatoes

Steps:

  • Cut hamburger rolls in half and butter both sides. Toast both halves on the grill.
  • Fry or grill the meat patties, the bacon and the onion slices.
  • Flip the patties over and place cheese on top.
  • Fry the eggs.
  • On bottom half of each bun, add ketchup to taste.
  • Assemble the hamburger from the bottom up: lettuce, tomato, beets, onions, pineapple and meat patty. Top with bacon, egg, cheese and bun top.

  • 1. Mix together first 5 ingredients. Grill or pan fry until desired doneness.
  • 2. Before burgers are done, butter cut surfaces of bun and grill for a minute or two.

6 desiree potatoes
1 can of sliced beetroot
1kg lamb mince
1 teaspoon Wildfire Spice*
1 teaspoon Alpine Pepper*
2 egg yolks
¼ cup flour
oil for frying
2 Spanish onions, finely sliced
a generous pinch of Outback Salt
¼ bottle of beer (optional) or some water
1 loaf wattleseed and walnut bread
150g bacon or proscuitto
1 fresh pineapple, peeled and thinly sliced (2 slices per serve)
2 sweet vine ripened tomatoes
shredded lettuce of your choice
100ml Mountain Pepper BBQ Sauce*

Steps:

  • 1. Cut the washed desirée potatoes into thick chunky chips and preheat hotplate or frying pan. 2. Heat sunflower oil to 190°C/375°F, and lower the chips into the oil and fry for five to six minutes, until soft but not browned, then remove and allow to cool. 3. Combine the lamb mince, Alpine Pepper, egg yolks, flour and beer. Mix well. 4. Form the mince mix into patties and cook on hotplate or frying pan. Cook pattie to desired done-ness. 5. Also begin to fry the bacon, the pineapple slices and the Spanish onions on the hotplate. 6. Slice the tomatoes and toast the wattleseed and walnut bread. 7. Remove the pattie, pineapple, bacon and Spanish onions from the grill. 8. Heat the oil up to 200°C/400°F, then return the chips to the oil for two to three minutes. Remove and drain well, season with sea-salt and Wildfire Spice. 9. Construct the pattie on the wattleseed and walnut toasted bread, then bacon, onions, pineapple, tomatoes and shredded lettuce. Add a little Mountain Pepper BBQ sauce on top and place the other piece of wattleseed and walnut toasted bread as a sandwich.

  • Prepare grill for direct cooking over med/hot fire. Combine ketchup, mayo, chile paste for sauce. Mix beef with 1t salt, 1/2t pepper and form 4 patties (4.5 inch diameter & not too thick). Toast split rolls on grill. Pat pineapple dry and lightly brush with 1/2T oil. Oil rack and cook burgers and pineapple, turning once, about 4 mins. (fruit should carmelize slightly). Heat remaining oil in nonstick skillet over med/hi heat, fry eggs. Spread chile mayo on rolls, assemble from bottom up: pineapple ring, burger, beets, egg, lettuce tomato.
