2 cups all-purpose flour (500ml)
1 cup granulated sugar (250ml)
2 teaspoons baking powder (10ml)
1/4 teaspoon salt (1ml)
1/2 cup butter (125ml)
1 large egg
3/4 cup milk (175ml)
19 ounces cherry pie filling
1 cup brown sugar (250ml)
1 cup all-purpose flour (250ml)
1/2 cup butter (125ml)

Steps:

  • Measure first 4 ingredients into large bowl. Stir. Cut butter into mixture until it resembles coarse crumbs. Make a well in the centre.
  • Add egg and milk to well. Stir until just moistened. Spread in greased 9 x 13 inch (22 x 33cm) baking pan.
  • Carefully spread pie filling on top.
  • TOPPING: Combine brown sugar and flour in small bowl. Cut butter until mixture resembles coarse crumbs. Sprinkle over pie fliiling. Bake in 375F (190C) oven for about 40 minutes until top is golden and filling bubbles at edges. Let stand for 10 minutes.

1 1/2 cups chopped apples
1/3 cup packed brown sugar
1 tablespoon flour
2 tablespoons butter
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup finely chopped nuts (I use walnuts)
1 1/2 cups sugar
3/4 cup butter, softened
1 1/2 teaspoons vanilla
3 eggs
3 cups flour (all purpose or whole wheat)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups sour cream
1/2 cup powdered sugar
1/4 teaspoon vanilla
1 -2 teaspoon milk

Steps:

  • Preheat oven to 325°F; grease a 12-cup Bundt pan or a 10x4-inch tube pan.
  • Prepare apple-nut filling: Cook all ingredients, except nuts, over medium heat, stirring constantly. Cook until apples are tender. This will take approximately 3 to 4 minutes. Stir in nuts. Set aside.
  • Combine sugar, butter, vanilla and eggs in a large mixing bowl. Beat at medium speed, 2 minutes, scraping bowl occasionally.
  • Alternately add the dry ingredients and the sour cream, beginning and ending with the dry ingredients. Beat well between each addition on low speed.
  • Spread 1/3 of the batter (about 2 cups) in the baking pan. Top with 1/3 of the filling. Repeat this pattern 2 more times, until all batter and filling have been used.
  • Bake at 325°F for 1 hour, until a toothpick inserted near the center comes out clean. Cool in the pan for 20 minutes, then turnout onto a serving plate and cool completely.
  • To prepare glaze: Mix all ingredients until smooth, then drizzle over cooled coffee cake.

Steps:

  • Mix oil, buttermilk, egg and vanilla.
  • Add flour, sugar, soda, cocoa and salt.
  • Mix all together well and add coffee.
  • Pour into lightly greased and floured 8X13X2 sheet pan (I have made it in a bundt pan too).

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish; set aside.

1 cup packed light-brown sugar
1 1/4 teaspoons ground cinnamon

1 1/2 sticks cold unsalted butter, cut into small pieces
1 1/2 cups coarsely chopped toasted pecans
1 stick unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
1 1/4 teaspoons baking powder
