Best-Ever Macaroni and Cheese image

In the South, mac 'n cheese is like everyone's favorite aunt-and this best-ever recipe beats out the rest.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

1 pound elbow macaroni
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
1 teaspoon ground mustard
1 teaspoon garlic powder
Large pinch kosher salt
Large pinch freshly ground black pepper
1 cup heavy cream
1/3 cup 2 percent milk
1 cup hand-shredded extra-sharp yellow Cheddar cheese
1 cup hand-shredded Parmesan cheese
1 cup cubed processed cheese, such as Velveeta
1/2 cup sour cream

Steps:

  • Bring a large pot of water to a boil. Add the macaroni and cook until al dente according to the package directions. Drain and set aside.
  • In a medium pot over medium heat, melt the butter. Whisk in the flour, ground mustard, garlic powder, salt and pepper. Slowly add the cream and milk, whisking until combined. Heat the mixture until it bubbles, 3 to 4 minutes. Reduce the heat to low and add the Cheddar, Parmesan, processed cheese and sour cream. Stir until melted. Add the macaroni to the cheese mixture and toss to combine. Bring the mixture back to a light simmer to heat everything through and thicken. Serve warm.

SAUCE:
2 Tbsp bacon drippings,or butter
3 medium shallots, diced
2 Tbsp all purpose flour
4 c top cream (heavy cream)
1 whole garlic,roasted and minced
2 tsp dried thyme, crushed
1 c smokey cheese, grated or shredded
1 c cheddar cheese, grated or shredded
1 c monterey jack cheese, grated or shredded
1 lb macaroni pasta, cooked
TOPPING:
1 c cornmeal bread, crumbled
3 Tbsp bacon dripping or melted butter

Steps:

  • 1. Preheat oven to 350^. Brush a large casserole dish with bacon drippings or butter...set aside.(If making to freeze check about note.)Can put in individual dishes.
  • 2. Sauté the shallots in the bacon drippings until lightly browned. Add in the flour and slowly add the top cream;bring to a boil while stirring,to combine;
  • 3. Add the garlic, and thyme; cook for 10 minutes or until reduced to about 1/2...now add the 3 kinds of cheese ..stir to combine then add the cooked macaroni.
  • 4. Stir all ingredients together and pour into the prepared casserole dish. Spread the topping over top evenly. Bake for 25 minutes or until crumbs on top are lightly browned.

We've tested many corn pudding recipes and this version has no eggs, butter, or cheese. Not traditional, but boy is it good. The flavor of corn shines bright along with the sweet Jiffy cornbread. It's a no-frills corn pudding with terrific flavor. A simple Thanksgiving or Christmas side dish.

2 can(s) cream style corn (14.75 oz each)
2 can(s) whole kernel corn, drained (15.25 oz each)
2 stick butter, melted
2 box Jiffy corn muffin mix (8.5 oz each)
1 pkg sour cream (16 oz)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Butter or spray 9x13 baking dish.
  • 3. Mix everything in a large bowl. *You can add a couple of tablespoons of sugar if you want this on the sweeter side.)
  • 4. Pour into a buttered 9x13 dish.
  • 5. Bake in the preheated oven for about 60 minutes. Make sure the middle is not "jiggly" before taking it out of the oven. Sometimes it will look done and be nice and golden brown but the middle is not cooked.

1 pound elbow macaroni
4 pounds Cheddar cheese, sliced
1 ½ cups milk
5 eggs, or more to taste
1 tablespoon yellow mustard
ground black pepper to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Layer some of the macaroni in a 5-quart baking dish; top with a layer of Cheddar cheese. Continue layering macaroni and Cheddar cheese into the dish, ending with a Cheddar cheese layer.
  • Beat milk, eggs, and mustard together in a bowl; pour over macaroni mixture, ensuring milk mixture gets to all of the macaroni.
  • Bake in the preheated oven until cheese is melted and just before cheese around the sides gets crisp, 20 to 25 minutes. Season with black pepper.

12 eggs
1 cup cubed Velveeta cheese
1/2 pound (2 sticks) butter, melted
6 cups half-and-half, divided
4 cups grated sharp yellow Cheddar, divided
2 cups grated extra-sharp white Cheddar
1 1/2 cups grated mozzarella
1 cup grated Asiago
1 cup grated Gruyere
1 cup grated Monterey Jack
1 cup grated Muenster
1/8 teaspoon salt
1 tablespoon black pepper

Steps:

  • Preheat the oven to 325 degrees F. Bring a large saucepan of salted water to a boil. Add the macaroni and cook until slightly al dente, about 10 minutes. Drain and set aside to keep warm.
  • Whisk the eggs in a large bowl until frothy.
  • Add the Velveeta, butter and 2 cups of the half-and-half to the large bowl of eggs. Add the warm macaroni tossing until the cheese has melted and the mixture is smooth. Add the remaining half-and-half, 3 cups of the sharp yellow Cheddar, the remaining grated cheeses, and salt and pepper, tossing until completely combined in the large bowl.

My husband's aunt makes this for Thanksgiving and Christmas pot lucks. If she does not bring this to the function, she's in trouble-lol. It is very good and really cheesy. Easy to make, I am sure it will be one of your favorites as well.

1 (6 ounce) box long grain and wild rice blend, Uncle Ben's broccoli flavored
1 (8 ounce) package frozen broccoli
1 (8 ounce) package frozen cauliflower
1/2 lb brick cheese, cubed
1/2 lb havarti cheese, cubed
1/2 lb cheddar cheese, cubed
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Make rice as directed on box.
  • Steam the cauliflower and broccoli.
  • While the rice and veggies are cooking, go ahead and cube the cheese. Save a few cubes for the top of the casserole.
  • When rice is done place in a large casserole dish, add veggies, cubed cheese, and soup. Mix together.
  • Place saved cubed cheese on top of casserole and cook at 350 degrees for 45 minutes.
