1 lb cooked breakfast sausage, crumbled
2 lbs Velveeta cheese, cut into 1 inch pieces
10 ounces salsa
26 ounces crackers or 26 ounces melba rounds

Steps:

  • Mix cooked sausage with velveeta and salsa in large microwave safe bowl.
  • Microwave on high for 2-3 minutes, stirring every minute until cheese is melted and dip is smooth and creamy. Consistency will be thicker than most cheese dips due to the sausage.
  • May also be heated on stove top in medium saucepan over medium heat until cheese is melted.Also may be held in small crock pot on low setting for 2 hours.
  • Serve in a bowl with tortilla chips. May also be spooned onto melba rounds or crackers and served as an appetizer or horderves.

1 lb hot sausage
5 green onions, chopped and divided
1 cup sour cream
1/2 cup mayonnaise
1/4 cup grated parmesan cheese
1 (2 ounce) jar chopped pimiento, drain

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet over medium heat, brown and crumble sausage until no longer pink.
  • Remove from heat and drain off drippings and add all remaining ingredients except one green onion.
  • Pour into one-quart baking dish.
  • Bake 20-25 minutes until bubbly.
  • Garnish with remaining chopped green onion.
  • Keep warm and serve with Melba toast, sesame and wheat crackers.
  • Refrigerate leftovers.

2 (1 ounce) packages dry ranch dressing mix
1 (8 ounce) can Rotel Tomatoes, standard size can
2 (8 ounce) packages cream cheese

Steps:

  • Brown sausage with 1 pkg of ranch mix. Drain if needed.
  • Add cream cheese, rotel, and second pkg of ranch mix. Heat and stir until combined.
  • Serve warm with chips. I usually put it in a crock pot to keep it warm.
  • Cooking time and servings are estimated.

1 lb sausage
1 (8 ounce) cream cheese, softened
1 (8 ounce) can Rotel Tomatoes
3/4 cup cheddar cheese, shredded

Steps:

  • Fry sausage until brown and drain.
  • Drain Ro-Tel and reserve 1/4 cup juice.
  • Mix together cooked sausage, cream cheese, Ro-Tel and 1/4 cup juice.
  • Place in a slightly greased 1 quart baking dish. Sprinkle cheese on top.
  • Bake at 350 degrees for 20 to 25 minutes.
  • Serve with corn chips or pita chips.
