If you like your bread pudding full of custard after baking, make the same amount of custard in this recipe and use less bread (or use the same amount of bread and use more custard), because the bread will soak up most of the liquid. Refer to above post for more info.

Number Of Ingredients 6

450 g/16oz/16 slices 2-inch thick/one loaf day-old bread*
1 cup pecans ((or raisins, chocolate chips, cranberries, etc.))
6 large eggs
1 cup (200 g/7 oz) granulated sugar
4 cups heavy cream ((or milk, half & half, or a combination))
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13-inch pan, and set aside.
  • Cut bread into 2-inch cubes. In a large bowl, mix together bread cubes and pecans. Place the mixture evenly in the pan.
  • In a large bowl, whisk eggs and sugar. Add cream and vanilla extract, and whisk to combine. Pour cream mixture over bread mixture in the pan until completely covered. Gently press down the bread cubes to fully cover with custard. It's best to let the casserole sit for 1 hour, covered, at room temperature, but if you're in a hurry, bake it right away.
  • Preheat oven to 325F/160C. Bake for 40-50 minutes or until custard has set and the top is golden brown. If the top is browning too fast, cover loosely with aluminum foil. Don't over bake or the bread will be dry. Let the pudding cool slightly before serving.
  • Bread pudding can be served warm or cold. It is best the same dat it's made.

AUNT EMMA'S BREAD PUDDING

My Aunt Emma made the best bread pudding I've ever had. She passed away about 5 years ago and I just ran across a copy of her recipe in my recipe box. Thought I'd share it with you. The brown sugar melts as it bakes on top so it kind of has a caramelized sauce built in. Crumble the brown sugar over the top between your fingers so it doesn't all sink.

1 loaf white bread (regular size as opposed to Jumbo or family size)
1 quart milk
1/2 cup melted butter
1 cup white sugar
4 eggs
3 tablespoons vanilla
1/2 cup raisins
1/2 cup brown sugar

Steps:

  • Break the bread into small chunks in a large bowl.
  • Add the white sugar and melted butter and stir.
  • Add the eggs one at a time alternately with the milk stirring well so that each egg is incorporated before adding the next one until all the eggs and milk are used.
  • Stir in the vanilla and raisins.
  • Pour into a greased lasagna pan or a 13x9" inch pan.
  • (sometimes the 13x9 tends to get over full depending on the particular loaf of bread).
  • Sprinkle the brown sugar evenly across the top of bread mixture.
  • Bake in a preheated 350* oven for 1 hour.
  • Let cool 20 to 30 minutes as pudding will set firmer as it cools.
  • Can be served warm or chilled.

OLD-FASHIONED BREAD PUDDING

A classic recipe, this Old Fashioned Bread Pudding is easily made with chunks of French bread coated in a deliciously spiced custard! Perfect for a dessert, breakfast or brunch!

½ cup salted butter
1 long loaf of French Bread
1 cup raisins
4 cups milk
4 large eggs
2 cups granulated sugar
2 Tablespoons vanilla extract
½ cup dark rum or whisky ((can use rum extract or skip it altogether))
½ cup salted butter, (melted and cooled)
2 cups powdered sugar

Steps:

  • Preheat the oven to 350F degrees. Spray a 2-quart casserole dish with nonstick cooking spray.
  • Cut or rip the french loaf into bite size pieces.
  • In a large skillet over medium heat, melt the 1/2 cup of butter and brown the bread. The bread should absorb all of the butter in the pan. Stir continuously.
  • When all the butter is absorbed, pour the bread into a 2-quart casserole dish. Sprinkle the raisins evenly over the bread.
  • In a large bowl mix the milk, eggs, sugar, extract, and rum.
  • Pour over the bread and raisins in the casserole dish.
  • Bake for 1 hour, checking at the 40 minute mark. The casserole is done when the liquid is set, top has browned, and is pulling away from the sides of the casserole dish.
  • To make the glaze, combine ingredients with a whisk and pour over the warm bread pudding. Then serve.

6 large eggs
2 cup packed dark brown sugar
1 1/2 cups raisins
2 sticks (16 tablespoons) unsalted butter, melted
1 tablespoon ground cinnamon
2 teaspoons ground ginger
2 cups plus 2 tablespoons granulated sugar
2 loaves French bread, cut into 1-inch cubes (about 13 cups)
Nonstick cooking spray
2 cups confectioners' sugar
1/3 cup bourbon
3 tablespoons unsalted butter
1 tablespoon whole milk
1/2 teaspoon ground cinnamon

Steps:

  • For the bread pudding: In a large bowl, whisk together the cream and eggs. Add the brown sugar, raisins, butter, cinnamon, ginger and 1 cup granulated sugar. Mix well. Gently stir the bread cubes into the egg mixture. Refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F and coat a 9-by-13-inch baking dish with cooking spray.
  • Pour the bread mixture into the prepared baking dish. If desired, sprinkle the top with the remaining 2 tablespoons of sugar. Bake until a knife inserted into the middle comes out clean, 45 to 50 minutes.
  • Meanwhile, for the bourbon sauce: Combine the confectioners' sugar, bourbon, butter, milk and cinnamon in a medium saucepan, bring to a simmer over low heat, whisking constantly until thickened and no longer watery, 2 to 3 minutes. Steps:

  • Preheat oven to 350°F.

1/2 cup raisins

SAUCE:
1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup heavy whipping cream
1 tablespoon vanilla

  • PUDDING: Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted, about 4 to 7 minutes.
